Happy Greek Easter! Celebrate with Lamb Souvlaki and Dillicious Tzatziki Sauce 🇬🇷

1 lb (450 g) cubed lamb
1 small onion, quartered into wedges
3 tbsp olive oil
juice of 1/2 a lemon
1 tbsp Souvlaki Seasoning
Sea Salt (Grinder), to taste
Black Pepper (Grinder), to taste
6 bamboo skewers, soaked in water to prevent scorching
6 pita bread rounds
1 tbspSouvlaki Seasoning
1 recipe prepared Dillicious Tzatziki
2 tomatoes, diced

Preparation
In a bowl, combine lamb and onions with olive oil, lemon juice, Souvlaki Seasoning, Sea Salt and Pepper. Cover and refrigerate for a minimum of 1 hour.
Preheat oven to 400° F (205° C). Slide lamb cubes onto skewers alternating with wedges of onion, leaving space between to ensure even cooking.
Place skewers onto a Sheet Pan lined with parchment paper and bake approximately 20 minutes, turning at least once.
Warm or grill pitas and brush with olive oil and sprinkle with Souvlaki Seasoning. Spread with prepared Dillicious Tzatziki.
Pull the contents from the skewer into the warm pita and top with tomatoes. Serve with extra Dillicious Tzatziki on the side.

Prepare Epicure Classic Greek Salad and serve alongside.

Since we launched our April 30-Day What's for Dinner Collection, this recipe has become a favourite!

Ground Beef Pita Pizzas

2 tsp oil
1 lb (450 g) lean ground beef
2 tbsp water
1 tbsp + 1 tsp Greek Dressing Mix, divided
1 tbsp tomato paste
1⁄2 cup plain yogurt
4 pitas
1 tomato
1⁄2 English cucumber
1⁄4 small red onion
1⁄3 cup crumbled feta cheese, optional
Toppings (optional): lemon wedges

Preparation
In Wok, heat oil over medium-high. Crumble in beef. Add water, 1 tbsp dressing mix, and tomato paste. Cook 5–6 min, breaking up large chunks as needed.
In a small bowl, combine yogurt and remaining 1 tsp dressing mix.
Dice tomato and cucumber. Thinly slice onion.
Place pitas in Multipurpose Steamer. Cover; microwave on high 1–2 min until warm.
Spread about 2 tbsp yogurt over each pita; top with beef, vegetables, and feta, if desired.

Perfectly Balance Your Plate
Serve with 2 cups leafy greens and a squeeze of lemon juice.

Fish Tacos with Lemon Dilly
1⁄2 lb (225 g) white fish
1 tsp Taco Seasoning
1⁄4 cup Lemon Dilly Dip, prepared
3 radishes, thinly sliced
1 cup shredded lettuce
4 corn tortillas
1 recipe prepared Poco Picante Salsa

Preparation
Season both sides of fish with Taco Seasoning and place in a Rectangular Steamer. Cover and microwave for 3 minutes on high.
Spread tortillas with Lemon Dilly Dip. Top with lettuce, radishes, and salsa.

Apple & Tuna Sandwich
1 can (6oz/170 g) light tuna, packed in water, drained
1 apple, cored and diced
2 1⁄2 tbsp 2% plain Greek yogurt or dairy-free alternative
2 tsp Guacamole Dip Mix
1⁄8 tsp Lemon Dilly Dip Mix
1⁄2 cup mixed greens
4 slices whole-grain bread

Preparation
In a medium bowl, fluff tuna with a fork. Add apple, yogurt, and Dip Mixes. Stir to blend well. Filling will last 2–3 days in your fridge.
Place mixed greens on two slices of bread and spread tuna on top. Cover with second slice of bread.
Cut diagonally and serve.

Did you know? Poke rhymes with okay!? It's the Hawaiian word for "to slice" or "cut crosswise into pieces". We love to serve them up as build-your-own poke bowl bars with lots of protein and veggie topping options

Get started with this recipe:

OK! Poke Bowl
1⁄3 cup mayonnaise
1 tbsp lime juice
1 tbsp soy sauce
3 tbsp Asian Stir-Fry Seasoning, divided
1 lb (450 g) skinless tuna or salmon fillet (or 3 small fillets)
1 tbsp oil, divided
3 cups cooked brown or white rice
18 asparagus spears, steamed and cooled, cut into spears
2 cups shredded purple cabbage
3 carrots, thinly sliced
1 avocado, cubed
1 English cucumber, thinly sliced or spiralized
1 cup cooked edamame beans (optional)

Preparation
In a bowl, whisk together mayo, lime juice, soy sauce, and 1 tbsp Asian Stir-Fry Seasoning. Set sauce aside
Cut fish fillet into 3 small portions. Brush all over with half the oil; generously coat with remaining seasoning. If using tofu, follow package directions.
Heat remaining oil in a frying pan set over medium-high heat. When hot, reduce heat to medium; add fish. Sear 30–60 seconds per side, just until coating is crispy. Cut into cubes. For tofu, follow package directions.
Divide rice between bowls; add fish or tofu and veggies. Drizzle sauce on top.

What's for dinner? Warm up with this #BetterThanTakeout Sheet Pan Caprese Chicken

1 large ball fresh mozzarella, about 226 g
2 medium field tomatoes
2 lbs (900 g) boneless, skinless chicken breasts, about 4
4 tbsp Rosemary Garlic Seasoning
1 cup Greek Dressing, or your choice of dressing, prepared
Sea Salt (Grinder), to taste
Black Pepper (Grinder), to taste
Toppings (optional): Fresh spinach leaves

Preheat oven to 425° F. Line Sheet Pan with Sheet Pan Liner.
Slice cheese into eight slices. Slice tomatoes into four slices each. Set aside.
Cut chicken breasts in half. Place chicken on lined pan; coat with seasoning.
Roast until chicken is cooked through, about 15–18 min. Top chicken with sliced tomato and cheese during the last 5 min of cooking.
To serve, drizzle dressing on top. Season with salt and pepper, if desired.

It's time to dig out those beans you bought at the start of the pandemic and turn them into brunch! This dish hits all marks. It's packed full of protein, veggies, and tons of flavour–and ready in 20 minutes!

Rancher Style Baked Beans & Eggs
1 pkg Simply Better Baked Beans Seasoning
3⁄4 cups water
1 can (14 oz/398 ml) crushed tomatoes
1⁄2 cup molasses, cooking or fancy
2 tbsp white vinegar
4 cans (19 oz/540 ml each) pinto beans
1 tbsp oil
2 bell peppers
4 eggs
2 cups baby spinach
Toppings (optional): 2% plain Greek yogurt, grated cheese

Preparation
In Multipurpose Steamer, whisk together seasoning, water, tomatoes, molasses, and vinegar.
Drain and rinse beans; combine with sauce. Cover; microwave on high until warmed through, 10 min.
Meanwhile, heat oil in a large fry pan over medium-high heat. Thinly slice bell pepper and cook until softened, about 3–5 min.
Once beans are cooked, add half (about 4 cups) to the pan and stir. Reserve remainder for future use.
Make four wells in the beans and break an egg into each one.
Cover pan with a lid and cook until egg whites are set, about 2–3 min.
Remove from heat and add spinach; cover until spinach is slightly wilted, about 30 sec. Serve with additional toppings, if desired.
