#mealprepsunday 🍲 We used to make a pot of a favourite dish (often curry) each week. Lately though, we were getting rather tired of it and not often hungry enough for it by day’s end. So, we took a different approach this past month and have been preparing different dishes each Sunday, for a mix-and-match Buddha-bowl-like offering. Now, no 2 meals are the same (and my husband has no excuse for defaulting to PB sandwiches at lunchtime 😉).
☀️Also, great conversations (& laughter) occur during our Sunday prep time. ❤️
This week we prepared...
Sautéed greens: this week contains kale, turnip, broccolini.
Lentil dal.
Beets roasted with fresh ginger.
Baked purple sweet potato.
Quinoa.
Black beans: soaked and pressure cooked.
Awesome tahini sauce. 😁⭐️

🥯Gluten-free, 3 ingredient bagels!

This is the recipe as it was recently shared with me. While it works well for the person who shared it, I am still futzing with the bake time as the insides are stubbornly gooey (just made my second batch and still haven’t aced it). I’d love to hear what works for you!

2 cups @bobsredmill Gluten-free 1:1 Baking Flour (Blue bag)
2 cups Plain greek yogurt
1 Tbsp Baking powder

Mix by hand and knead for about 3 minutes until well blended
Flour your board
Make 6 balls from the dough, flour as needed on board so not sticking to hands and make each ball into a bagel shape and place on a cookie sheet with parchment paper

Beat 1 egg and a bit of water for the egg wash and brush each bagel with it, top with whatever you like or leave plain ie: seeds etc..

Bake at 375 for about 25 mins and then turn oven up to 425 for approx: 3-4 minutes. Ovens vary so watch to see. Should be nice and brown and cooked through.

⭐️This awesome human. I wouldn't be having my current adventure of a lifetime without her.
In 2018 Tara, as Clinic Director of @stonetreeclinic , told me that although I was electing not to have children I could still take a 'mat leave' and the other practitioners would care for my patients. Knowing my husband only had a few weeks of holiday each year I didn't consider it a possibility and put it out of my mind. (Apparently he did not put it out of his, as the following year he suggested I take her up on her offer, solo!❤️)

1-pot pasta & greens! I received this tip last week from my food tour guide, Sophie - cook your veggies in with your pasta.
Here is how I am doing it:
- cook pasta as normal
- when pasta is ~3 minutes from done, add hard veggies; I am using romanesco
- in final minute, add chopped leafy greens; here I have arugula, dino kale, spinach, basil
Once strained and served, I top it with freshly grated pecorino romano, pepper, and dried cherry tomatoes. 🙂👌🏼
The final photo is enjoying it as a litter-less lunch, in the park. ☀️
