โœ… 9 tablespoons extra-virgin olive oil, divided

โœ… 1/4 cup unseasoned dry breadcrumbs
โœ… 1 tablespoon finely chopped fresh parsley
โœ… 1/2 teaspoon finely chopped fresh thyme

โœ… 16 anchovy fillets packed in oil, drained

COOKING INSTRUCTIONS
1. Preheat oven to 200 and place 2 cups tomatoes on a foil-lined baking sheet. Drizzle 1 tablespoon of oil on top and sprinkle with a large pinch of salt. Roast for 3-4 hours and set aside.
2. Increase oven temperature to 400ยฐ. Put a fresh set of foil on the baking sheet. Place breadcrumbs and herbs in a small bowl and season with salt and pepper and stir another tablespoon of oil into the crumbs.
3. Lay the anchovies in a single layer on the foil-lined sheet. Evenly pack breadcrumb mixture over the anchovies and drizzle with another tablespoon of oil. Bake until golden brown, about 5-7 minutes.
4. Cook spaghetti according to package directions, saving one cup of water out of the pot before you drain it.
5. While the pasta is cooking, put the remaining 2 cups of tomatoes in a large bowl and break them up with your hands (now is a good time to be wearing an apron โ€“ this is splattery work!
6. Heat 4 tablespoons of oil in a large skillet over medium-high heat. Add garlic and stir for 30 seconds. Add crushed tomatoes and a pinch of salt and cook until they are slightly thickened, about 6-7 minutes. Add roasted tomatoes.
7. Add drained spaghetti to skillet and toss to coat. Add just enough pasta water to make a light sauce. Remove from heat, stir in basil and drizzle with the rest of the oil. Divide the pasta among warmed plates and sprinkle the oreganata mixture on top.

โœ… 2/3 cup Italian style breadcrumbs (or plain breadcrumbs mixed with 1 teaspoon Italian seasoning)

COOKING INSTRUCTIONS
1. Preheat oven to 350 degrees and lightly grease a large baking pan.
2. Brush chicken on both sides with oil, then season with salt and pepper on both sides. Stir together breadcrumbs and parmesan cheese in a shallow dish and toss chicken in the breadcrumb mixture to coat on both sides. Arrange chicken on prepared baking dish.
3. Bake chicken for 15-20 minutes until cooked through and no longer pink in the middle. While chicken is cooking, combine marinara sauce, garlic, Italian seasoning, and basil in a medium sauce pan and stir over medium heat until hot throughout.
4. When chicken is cooked through, remove from oven and switch oven to broil. Top each chicken breasts with about 1/2 cup of marinara sauce and one slice of mozzarella cheese. Return to oven for 3-4 minutes until cheese is bubbly and starts to brown (keep a close eye on it so it doesn't burn).
5. Serve over cooked spaghetti noodles and top with cracked black pepper and fresh basil (optional).
6. ** For extra crispy breading, spritz the chicken/breading with cooking spray a couple of times throughout baking or bake it on parchment paper and turn over once halfway through baking.

โœ… 1 pound Italian sausage (I prefer hot, but mild or sweet will also work)
โœ… 1 medium white onion, peeled and diced
โœ… 3 cloves garlic, minced
โœ… 1 red bell pepper, cored and diced (or 1 jar of roasted red peppers, drained and diced)
โœ… 6 eggs
โœ… 1/3 cup milk
โœ… 1 (20 ounce) bag frozen diced hash browns, thawed
โœ… 2 cups shredded sharp cheddar cheese
โœ… 1/4 teaspoon freshly-ground black pepper
โœ… optional topping: thinly sliced green onions

INSTRUCTIONS
1. Heat oven to 375ยฐF.
2. Add the sausage to a medium saute pan. Cook over medium-high heat until browned, crumbling the sausage with a spoon as it cooks. Remove sausage with a slotted spoon and transfer to a large mixing bowl. Reserve about 1 tablespoon of sausage grease in the saute pan, discarding the rest. Add the onion and red pepper* to the saute pan, and saute for 5 minutes until cooked. Add the garlic and saute for an additional 2 minutes until fragrant. (If using the jarred roasted red peppers, wait to stir them until after the garlic.) Pour the vegetable mixture into the mixing bowl with the sausage. Add the hash browns and 1 1/2 cups cheese to the mixing bowl with the sausage and veggies. Stir to combine.
3. In a separate bowl, whisk together the eggs, milk and black pepper until combined. Then add them to the hashbrown mixture, and stir to combine. Pour the mixture into a 11ร—7-inch or a 9ร—9-inch baking dish (a 9ร—13-inch dish will also work), and top with the remaining 1/2 cup of shredded cheese. Cover with aluminum foil and bake for 30 minutes. Then remove the aluminum foil and bake for an additional 10-15 minutes until the potatoes in the center are cooked through. (I recommend just using a fork to pull out one of the potatoes in the center of the casserole, and test it to see whether itโ€™s tender and cooked through). Remove and let the casserole rest for 5 minutes. Sprinkle with green onions and serve!

The evidence that drinking red wine in particular (or alcohol in general, for that matter) can help you avoid heart disease is pretty weak, says Dr. Kenneth Mukamal, an internist at Harvard-affiliated Beth Israel Deaconess Medical Center. All of the research showing that people who drink moderate amounts of alcohol have lower rates of heart disease is observational. Such studies canโ€™t prove cause and effect, only associations.

The belief that drinking red wine offers some degree of protection from heart disease has persisted for decades, but any evidence in support of this is just observational, without any scientific proof to back it up.

*INGREDIENTS*
โœ… 12 oz. whole-wheat linguine
โœ… 1 tbsp. extra-virgin olive oil
โœ… 3 cloves garlic, minced
โœ… 2 tbsp. all-purpose flour
โœ… 1 c. low-sodium chicken broth
โœ… 3/4 c. 1% milk
โœ… 1/2 c. freshly grated Parmesan
โœ… 2 tbsp. plain Greek yogurt (optional)
โœ… Freshly ground black pepper
โœ… Pinch crushed red pepper flakes
โœ… Freshly chopped parsley, for serving

COOKING DIRECTIONS
1. In a large pot of salted boiling water, cook linguine according to package directions until al dente. Set aside ยฝ cup of pasta water, then drain pasta and set aside.
2. In a large skillet over medium heat, heat oil. Add garlic and cook until fragrant, 1 minute. Sprinkle flour over evenly, then stir and cook until mixture is lightly golden.
3. Very gradually add broth in while whisking, 2 tablespoons at a time, waiting for mixture to become completely smooth before adding more broth. Bring mixture to a boil, then gradually stream in milk while whisking. Bring to a simmer and cook until sauce is thickened, 2 to 3 minutes.
4. Remove from heat and add Parmesan and yogurt, if using. Season with salt, pepper, and a pinch of red pepper flakes.
5. Add pasta and a 1/4 cup reserved pasta water to sauce and toss to combine. If sauce is too thick add more pasta water, a tablespoon at a time, until desired consistency.
6. Garnish with parsley before serving.

INGREDIENTS
โœ… 8 shallots, peeled, halved if large
โœ… 1 lb. green beans, trimmed
โœ… 1 cup drained Peppadew peppers in brine, torn in half
โœ… ยผ cup white winne vinegar
โœ… 2 Tbsp. extra-virgin olive oil
โœ… 1 Tbsp. plus ยผ cup store-bought or homemade Thai green curry paste
โœ… 3 lb. chicken thighs and/or drumsticks
โœ… 2 tsp. kosher salt

PREPARATION
1. Place a rack in top third of oven; preheat to 425ยฐF. Place shallots, green beans, and peppers in a shallow 3-qt. baking dish. Drizzle with vinegar, oil, and 1 Tbsp. curry paste. Using your hands, toss to combine.
2. Season chicken on all sides with salt and rub with remaining ยผ cup curry paste. Nestle chicken pieces, skin side up, into shallot mixture in baking dish. Roast, basting chicken with pan juices halfway through, until chicken is cooked through and golden brown on top, 35โ€“40 minutes.
