Ingredients, for six servings
• Frozen Mango: 3 cups
• Canned Coconut Milk (full fat) - divided: 1 1/2 cups

Nutrition, per serving
• Calories: 156
• Fat: 11g
• Carbs: 14g
• Fiber: 1g
• Protein: 1g

1️⃣ Blend mango and 3/4 of the coconut milk in a food processor or blender until smooth.

2️⃣ Roughly scoop mango puree into 3oz. paper cups.

3️⃣ Spoon remaining coconut milk into each cup to fill in the gaps around the mango. This will create a swirl effect when frozen.

4️⃣ Insert popsicle sticks in the middle. Place in freezer for 4 hours or until completely frozen. Enjoy!!!

There are several regions in the world, known as "blue zones," where people tend to live longer and healthier lives than in other parts of the world. These regions include Sardinia, Italy; Okinawa, Japan; Nicoya, Costa Rica; Ikaria, Greece; and Bama County, China.

While the dietary habits of each blue zone may differ slightly, there are certain foods that are commonly consumed in these areas and are thought to contribute to their longevity. Here are six popular foods from blue zones:

🫘 Legumes: Beans, lentils, chickpeas, and peas are a staple food in the diets of many blue zone inhabitants. They are high in protein, fiber, and other nutrients.

🌾 Whole grains: Whole-grain bread, pasta, rice, and other grains are also a common part of the blue zone diet. They are a good source of fiber, vitamins, and minerals.

🌱 Vegetables: Leafy greens, cruciferous vegetables like broccoli and cauliflower, and other colourful veggies are a key component of the blue zone diet. They are packed with nutrients and antioxidants.

🌱 Spinach: This leafy green vegetable is a great source of iron, with 100g of spinach containing around 2.7mg of iron.

🥩 Red meat (grass-fed or organic): Beef, lamb, and pork are all good sources of heme iron, the type of iron that is most easily absorbed by the body. For example, around 100g of cooked filet mignon contains about 2.2mg of iron. Beef liver contains much more, with around 6.5mg of iron per 100g of cooked beef liver.

🧡 Lentils: These legumes are not only a great source of plant-based protein, but they're also rich in iron, with around 3.3mg of iron per 100g of cooked lentils.

🤍 Tempeh (organic): This soy-based food contains about 2.7mg of iron for 100g of cooked tempeh.

🍫 Dark chocolate: Believe it or not, dark chocolate can also be a good source of iron, with around 3.3mg of iron per 100g of dark chocolate.

Did you know that vegetable oils like canola, soybean, and grape-seed oil are highly processed and refined, making them far from the natural and wholesome fats we should be consuming?

These oils are often touted as "heart-healthy" due to their high levels of polyunsaturated fats, but the reality is that they're often rancid and produce harmful compounds when heated at high temperatures.

Most vegetable oils are typically extracted from their source plant using high heat, chemicals, and solvents, which can alter their natural structure and composition. For example, canola oil is made by crushing canola seeds and then using solvents like hexane to extract the oil. The oil is then refined, bleached, and deodorized to remove any impurities and make it suitable for consumption. This process can strip the oil of its natural nutrients and antioxidants, and also produce harmful compounds such as trans fats and oxidized fats, which can contribute to inflammation and other health issues.

In contrast, natural fats like coconut oil and ghee are minimally processed and retain their natural structure and nutrients, making them a healthier choice for cooking and eating.

Coconut oil and ghee have been used in traditional cuisines for centuries. Not only do they add delicious flavor to your meals, but they also have a host of health benefits. Coconut oil is high in lauric acid, which can boost immunity and support brain function, while ghee is a rich source of butyric acid, which can improve gut health and reduce inflammation.

Fresh, fruity, and alcohol-free! Save this Virgin Raspberry Mojito for the next sunny day. ☀️🍹

Ingredients, for two drinks
• Raspberries: 1/4 cup
• Filtered Water: 3/4 cup
• Maple Syrup or Raw Honey: 1/4 cup
• Mint Leaves: 1/4 cup
• Lime: 1, sliced into wedges
• Ice cubes: 4
• Sparkling Water: 3 cups

Nutrition, per serving
• Calories: 120
• Fat: 0g
• Carbs: 31g
• Fiber: 1g

1️⃣ In a small saucepan over medium heat, add the raspberries, water and maple syrup. Cook until thick, about 5 minutes. Use an immersion blender or add the mixture to your blender to puree until smooth. Chill in fridge at least 10 minutes.

2️⃣ Divide mint and 1/2 the lime wedges into drinking glasses. Use a muddler or the end of a wooden spoon to mash them together. Divide raspberry puree, ice cubes and sparkling water between the glasses. Stir to combine and garnish with remaining lime wedges. Sprinkle a pinch of sea salt if desired. Enjoy!
