heat wave = no cook lunches of salads, smoothies + fresh dips. today I bbq'ed some eggplant for this smokey baba ganoush;

- 1 large eggplant
- 3 small cloves of garlic
- 1 lemon, juiced
- 3 tbs good quality olive oil
- 3 tbs tahini
- 1 tsp smoked paprika
- a few dashes of chilli pepper sauce like tabasco
- salt + pepper to taste

cut your eggplant in half and drizzle with avocado oil / grape seed oil & cook on the BBQ until well charred (15 - 20 min), let eggplant cool slightly (at least 15 minutes) & add to food processor with the remaining ingredients, blend until smooth

stay cool 🍆

lamb + squash tagine 〰️ this recipe came to me last week while I was feeling a little sorry for my cooped-up self. I had big plans for this year; Bali for a 2 week plant-based chef certification, a few weeks in Mexico to work on (finish) my book, & a glorious week in Morocco. While 2020/2021 had other plans for my wander-lusty soul I can’t see the world this year I can still cook it!

This lamb + squash tagine recipe takes advantage of spring’s favourite protein lamb, & tastes just like a trip to Morocco (I think). Recipe link in profile

happy hour, but make it foraged 〰️ currently sipping on a magnolia-lemon gin fizz made with the magnolia simple syrup I whipped up last week, cheers to the long weekend from this doctor’s sunny backyard

- 1 lemon, juiced + 2 twists
- 3 oz. gin
- 1 oz. magnolia simple syrup (ginger works well too), to make syrup collect 2 cups fresh petals and simmer in 4 cups hot water uncovered for 20 mins, strain & stir in 1 cup cane sugar, monk fruit or honey until dissolved, store in fridge up to 3 mo)
- sparkling water
- ice (duh)

mix the gin, simple syrup & lemon juice in a cocktail shaker with ice, pour into 2 old fashioned glasses over more ice & top with sparkling water + lemon twist + pretty flowers 🍋✔️

foraging > languishing 〰️ planning on spending as much time as possible in the forest for the remainder of this lockdown limbo - today’s lunch was 90% foraged; dandelion greens + fried dandelion flowers (dredged in sourdough starter + spices & fried in grape seed oil), wild violet + a dressing made from ramp pesto 🌱✔️

tip: when foraging dandelion stay away from the ones hanging out in your neighbours yard & stick to the woods (away from car exhaust fumes & dog p*e!)

sunny creamsicle muffins 〰️ whipped these up after a few too many rainy lockdown days in Ontario; with lots of vanilla & orange zest they taste like a happy bite of sunshine (thank goodness for sun this am, Toshi Petunia & I are off for our long lake walk - see you at the clinic this afternoon):

- 1 cup quick oats, blended into flour
- 1 cup millet flour
- 2/3 cup oat milk
- 1/2 cup coconut yoghurt
- 1/3 cup wildflower honey
- 1/3 cup grape seed or coconut oil
- 1/4 cup flax, ground
- 1/2 tsp baking soda
- Juice and zest 1 orange
- 1 tbs vanilla bean paste
- 1/3 cup coconut chips
- 1/3 cup almond flakes

Mix the wet ingredients, zest + flax in a bowl and let sit for 5 - 10 minutes. Whisk the dry ingredients & add the wet + the coconut & almond flakes - bake at 350 for 25 min. I topped these with some melted coconut butter, honey + more OJ & @amiamifoods floral sprinkles which make everything taste more special 🍊✔️

"Consistency is the playground of dull minds (& poor gut health)" - Yuval Noah Harari (+ me).

One of the most important things you can do to positively influence the good microbes in your digestive system is to eat as many different plants as possible - one of my 2021 goals is to eat a minimum of 30 different plants weekly for the sake of the little bugs in my gut that control almost every aspect of health (from hormone health, to immunity & even mood) - while this sounds like it could be a difficult feat it's actually quite easy when you include herbs, & herbal teas. I add fresh herbs from my window garden + dried herbs from my backyard summer bounty to almost everything I cook & I drink 3 - 4 cups of herbal tea daily (rooibos, peppermint, nettle & lemon balm are staples) ✔️

Pesto is another great way to get some extra herbs & plants in; today I’m heading back to my secret wild leek patch to grab some leaves for ramp pesto to go with a lamb tagine tonight 🌱 wishing you all a wonderful plant-filled weekend from this doctor’s kitchen

you guys were really (!!!!) interested in my fava bean hummus recipe from my story the other day, ask & you shall receive;

- 1 cup fava beans, shelled
- juice from 1 lemon
- ¼ cup olive oil
- ¼ cup tahini
- 2 large cloves garlic, grated
- salt + pepper to taste

the hardest part of this recipe is prepping the beans, pop them out of the pod & drop into a pot of boiling water to blanch for 30 seconds, remove, place in an ice bath & remove the outer skin - add ingredients to a food processor & blitz until creamy ✔️

life chocolate 〰️ I was just reviewing a study involving chocolate, pleasure + anticipation & felt compelled to share as it struck a lot of parallels with our current situation ...

researchers who executed this ‘chocolate study’ found that participants who delayed eating chocolate & instead thought about their upcoming treat, got excited about it, & imagined how delicious it would taste chose 25% smaller portion sizes & received greater enjoyment from their dessert.

... my take-home from this study: mindful anticipation of pleasurable events, like eating chocolate (or hugging our grandparents, travelling, or sitting down to dinner with a group of non-bubbled friends) enhances pleasure & makes the experience even more rewarding. Although there's still so much uncertainty in the world I'm applying this concept to my own life - planning lots of future trips, brainstorming exciting meals I want to cook for company, & learning new skills that I will hopefully be able to use soon when the world 'opens up' again (ie: Spanish) - really allowing myself to enjoy the anticipation of how great these 'treats' would feel is keeping me going through this tough in-between time & I highly recommend you give it a try 💕 sending lots of love from this doctor’s chocolate-filled kitchen

the gluten-free / vegan scones that make @drnastasia cry 〰️ I just tested these out again this am & I’m pretty sure they’re a winner (no tears, but lots of compliments) - the perfect cozy recipe for a cold Sunday afternoon;

- 2 1/4 cups @bobsredmill #glutenfree 1:1 flour
- 1 tbs quick yeast (optional, but lovely)
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup cane sugar
- 1/4 cup vegan butter (@miyokoscreamery is the best in this recipe), melted
- 1 cup almond or cashew milk

combine all the dry ingredients in a large bowl, add the melted butter + milk & mix thoroughly until a thick dough forms (I like to cover & let sit overnight to activate the yeast but they still work if you want to bake right away), knead dough into a round disc & cut into triangles, bake at 400 for 15 - 20 mins
