In the middle of sprouting/pre-soaking all of our new pantry staples - round 2 of probably 3. It's not usually this much volume but this is what happens when the cupboards go from bare to fully stocked! Grains are being sprouted and dehydrated for cupboard storage, beans and lentils are being soaked and cooked then frozen for future easy meals, nuts and seeds are being soaked and dehydrated for fridge storage. The process isn't difficult at all, but it is a bit time consuming. Luckily after we're all stocked up, it's just a matter of replacing things we've used!

Both lunch and dinner will have to be eaten away from home today, since I work basically from 9am-9:30pm. So last night I packed up my leftovers into two containers to bring with me. No fuss, no stress, no fast food. I don't even mind eating the same meal three times in a row when it tastes this good!

I have a lot to do but good food takes priority. So dinner is black & jade rice (should have known both rices would turn out black!) with sautéed carrots, onions, beets, chickpeas, and almonds, topped with avocado (aka most delicious food ever). Time to mix in some sauerkraut and call it a meal.

Beans are nutritious and inexpensive, but take some forethought since they need to be soaked 24 hours before cooking. Solution? Cook a huge batch of beans and then freeze it in 16 ounce jars! To thaw, just rinse the beans under hot running water and add it to your recipes as usual. Just 4 cups of dried chickpeas yielded 12 cups cooked, enough for satisfy my chickpea cravings for a while. I plan on doing this with various other types of legumes as well. Time to fill up my new chest freezer! 😎
