🍴1/4 cup milk
🍴 1/4 block light cream cheese
🍴 1 cup pasta
Spicee; I used paprika, black pepper, garlic powder and onion powder
🍴cheese of choice
🍴protein of choice (I used chicken)
Add your favourite vegetables to add some colours and to complete your balanced meal!

I don’t know about you but I am trying to hold onto every last ounce of fall. It comes and goes too quickly! Butternut squash is a true taste of fall but lucky for us, this squash will be around in the winter too.
Just look at the colour in this dish! It has the consistency of mashed potatoes with sweetness of squash, some ricotta cheese for extra smoothness and protein and added deliciousness of roasted garlic.
Turn this beautiful purée into a pasta sauce by adding some cooking water to it to thin it out OR make a soup by adding stock to it OR even just serve it alongside your favourite protein.

I like winter ❄️💙.
I think it’s because of the way I feel when it’s freeeeeeeeeezing outside and I’m inside, cozy, wearing giant socks and holding a hot beverage. Snow also has this way of making everything outside quiet. Looking outside while inside and feeling cozy just feels SO good.

Food & beverage has this way of influencing your mood. Think about it.
What comes to mind when you think about hot chocolate? I immediately feel cozy and safe while I imagine myself skating then freezing and then warming up inside by the fire with a cup of chocolatey goodness.
What about coconut? I’m warm, happy and on a beach 🏝☀️.

Today, I’m cold 🥶 - I need to bring that tropical weather into my home. I started with these date and coconut balls. I’ll have a Jamaican patty with a spinach piña colada smoothie for lunch and then I’ll make chickpea & potato curry for dinner. If I eat & drink like this all day and close my eyes at the same time, it will feel the exact same as being on the beach! Ok, I’m exaggerating but it helps a bit 😜

Two-ingredient date & coconut balls. Place some dates in a bowl with a couple of tablespoons of boiling water. Move to a food processor and purée. Roll about one tablespoon of dates at a time into some unsweetened coconut and voilà!
