Easy meal, no sweat except to cut the squash! Spaghetti squash (cut in 1/2, cooked in oven), sauce is seriously so easy; organic pasta sauce, added veggies (zucchini, onion, peppers, mushrooms, kale and crumbled tempeh). Served with nutritional yeast, fresh tomatoes and basil! Voilà!

What’s for dinner? Super fast easy vegan meal; rice pasta (I normally use spiralized zucchini’s, but I was out)! With garlic, fresh tomatoes, kidney beans for protein, fresh basil and a sprinkle of nutritional yeast for extra B-12 & iron. Yum! Just brown the garlic and add other ingredients & serve!!!
Sometimes, you just have to have it!!!! Vegan homemade pizza. All sort of veggies, tofu, olives, fresh herbs, nutritional yeast (high in iron and B-12) and a drizzle of olive oil. Yum!
A great macro-balanced plant-based recovery meal! Loads of raw veggies with olive oil/lemon, cooked mushrooms, roasted cauliflower with miso/cilantro sauce and homemade « very beany sausage » from cookbook!

NO BAKE NUT-FREE ENERGY BITES
Amazing for post-recovery snacks!
INGREDIENTS:
• 1 1/2cups tightly packed Medjool dates, pitted. (about 15 dates)
• 1/3cup creamy sunflower seed butter or Tahini
• 1/2cup unsweetened coconut flakes
• 1/4tsp fine sea salt
• Extra coconut flakes for rolling (optional)
DIRECTIONS:
1. Place the pitted dates in a food processor, then process until they form a sticky ball (if too dry, add 1Tbsp boiling water). Add the other ingredients and process until sticky batter is formed.
2. Scoop the dough and roll them into balls (1Tbsp per ball). Roll the balls in the coconut flakes. Placed on a cookie sheet lined with parchment paper. Place in the freezer for 30mins Store in an airtight container and keep refrigerated for up to a month.
3. Makes about 12-15 balls.
