St. Hildegard of Bingen's feast day on September 17 is traditionally celebrated with her famous Cookies of Joy. Designated a Doctor of the Church, Hildegard is best known for her holistic approach to healing, her creative power and for Hildegard of Bingen music. Hildegard of Bingen produced major works of theology, music and medicine.

"For Hildegard, spelt soothes the mind, and nutmeg brightens the mood. These two ingredients account for a large part of the positive effects of Hildegard spelt cookies. The addition of nutmeg has a stimulating effects, due to the essential oil myristicin. In moderate doses, myristicin serves as a mood enhancer; in large quantities it acts as a psychoactive drug.

"Let food be thy medicine, and medicine be thy food" are words spoken by Hippocrates, the father of modern medicine, who lived from 460 BC - 370 BC.

"Food as medicine is also the foundation of Hildegard of Bingen medicine. But it is not unique to Hildegard. Her notion that a kitchen is also a pharmacy reflects a common theme among ancient traditions of healing: food is the first medicine. Medicines at the time were all plant based or specific combinations of foods prescribed according to their unique healing qualities."

Every first prescription for healing and better health should include a diet analysis and 'escape to the farmacy' for plant based foods, a concept generally missing from modern medicine.

Many people comment that eating a plant based diet that is high in legumes gives them gas. Research shows that soaking legumes in baking soda and water overnight can reduce that issue greatly. I use this method for all my dried legumes. Although I haven't tried it on canned bean, I think it would work as well. "Unfortunately, just like an expensive car, your brain can be damaged if you ingest anything other than premium fuel. If substances from "low-premium" fuel (such as what you get from processed or refined foods) get to the brain, it has little ability to get rid of them. Diets high in refined sugars, for example, are harmful to the brain. In addition to worsening your body’s regulation of insulin, they also promote inflammation and oxidative stress. Multiple studies have found a correlation between a diet high in refined sugars and impaired brain function — and even a worsening of symptoms of mood disorders, such as depression."

With the abundance of garden and farm market produce available it may be easier to amplify our intake of immune boosting nutrients than at other times of the year. Present times require an intensive immune boosting approach to stay protected and healthy. Besides the recommendations of the medical officers of health and the World Health Organization, research provides us with information on additional immune boosting supports. According to a research review titled Medicinal Plants to Strengthen Immunity During a Pandemic.
"It is believed that the only sustainable way to survive in the current situation is to boost the immune system. Many foods and herbs have antiviral and immunomodulatory properties. A balanced diet and dietary intake of nutrients affect the immune system through gene expression, cell activation and modification of signaling molecules. In addition, various food ingredients are determinants of the gut microbial composition and subsequently form immune responses in the body. A diet combined with medicinal plants and immunomodulatory, anti-viral, and anti-inflammatory effects can significantly enhance this protection.
Diet plays a huge role in disease prevention . . . Recent research has shown that dietary supplements can have beneficial effects, potentially decreasing the viral load of SARS-CoV-2 and reducing the recovery periods of patients with Covid-19."
