🍽️ SAUSAGE STUFFING

⏱️ Prep Time: 20 minutes
🔥 Cook Time: 45 minutes
👨‍👩‍👧‍👦 Servings: 8–10

🛒 Ingredients

12 cups dried bread cubes

1 lb ground pork sausage, mild or spicy

¼ cup butter

1 large onion, diced

3 celery stalks, diced

2 cloves garlic, minced

1 tsp dried sage

1 tsp dried thyme

½ tsp black pepper

2–2½ cups chicken broth

2 large eggs, beaten

¼ cup fresh parsley, chopped

👩‍🍳 Directions

1️⃣ Get the oven ready.
Preheat your oven to 350°F (175°C). Grease a 9 × 13-inch baking dish.

2️⃣ Brown the sausage.
In a large skillet over medium heat, cook the ground sausage, breaking it into small crumbles as it browns. Cook until no pink remains and the sausage reaches 160°F (71°C). Transfer to a large mixing bowl.

3️⃣ Sauté the vegetables.
Add the butter to the same skillet. Stir in the diced onion and celery and cook for 6–8 minutes, until softened and fragrant.

4️⃣ Add the herbs.
Stir in the minced garlic, sage, thyme, and black pepper. Cook for another 30 seconds, just until fragrant.

5️⃣ Mix everything together.
Add the sautéed vegetables to the bowl with the sausage. Stir in the dried bread cubes and fresh parsley until everything is evenly combined.

6️⃣ Moisten the stuffing.
Whisk together 2 cups of chicken broth and the beaten eggs. Pour over the bread mixture and gently toss. Add more broth a little at a time until the bread is moist but not soggy.

7️⃣ Bake covered.
Spread the stuffing evenly in your prepared baking dish. Cover with foil and bake for 25 minutes.

8️⃣ Get that golden top!
Remove the foil and bake for another 15–20 minutes, until the top is golden and crisp and the center reaches 165°F (74°C).

9️⃣ Rest and serve.
Let the stuffing rest for 5 minutes before serving. Then scoop up a generous helping and enjoy! 😋

❤️ Tips & Delicious Variations

🍎 Sweet and savory: Add one diced apple for a lovely touch of sweetness.

🍒 Festive twist: Mix in ½ cup dried cranberries for a pop of color and flavor.

🌶️ Make it your way: Use mild sausage for a traditional flavor or spicy sausage for a little kick.

🥖 Choose your bread: French bread, sourdough, or a rustic country loaf all work beautifully. Use dried or lightly toasted bread cubes so they absorb the broth without turning mushy.

⏰ Make-ahead tip: Cook the sausage and vegetables ahead of time and refrigerate them separately. Combine with the bread, broth, and eggs just before baking for the best texture.

🧡 Food safety note: Bake this stuffing in a separate casserole dish rather than inside the turkey, and refrigerate leftovers within 2 hours.

🍽️ The Perfect Holiday Pairing

Serve this savory stuffing alongside roast turkey, glazed ham, creamy mashed potatoes, roasted vegetables, and homemade gravy. It's the kind of comforting side dish that has everyone coming back for seconds!

🦃🍞 Classic Bread Stuffing — The Holiday Side Dish Everyone Looks Forward To!

Is it really Thanksgiving or Christmas dinner without a big dish of homemade stuffing? 😍 This classic bread stuffing is packed with buttery sautéed onions, tender celery, garlic, and all those cozy herbs that make the whole kitchen smell amazing!

With a soft, savory center and a beautifully golden, crispy top, this is the kind of old-fashioned side dish that belongs right beside your roast turkey, mashed potatoes, and gravy. ❤️

And the best part? It’s simple to make with everyday ingredients!

🛒 Ingredients

Serves 8–10 | Prep: 20 minutes | Cook: 45 minutes

12 cups day-old bread cubes

½ cup butter

1 large onion, diced

3 celery stalks, diced

2 cloves garlic, minced

2 tsp dried sage

1 tsp dried thyme

½ tsp dried rosemary

½ tsp black pepper

½ tsp salt, or to taste

2½–3 cups chicken broth

2 large eggs, beaten

¼ cup chopped fresh parsley

👩‍🍳 Directions

1. Prepare the bread
Preheat your oven to 350°F (175°C) and grease a 9 × 13-inch baking dish.

If your bread cubes are still soft, spread them on baking sheets and bake for 10–15 minutes until lightly dried. Transfer to a large mixing bowl.

2. Sauté the vegetables
Melt the butter in a large skillet over medium heat. Add the diced onion and celery and cook for 6–8 minutes, stirring occasionally, until softened.

3. Add those classic holiday herbs
Stir in the minced garlic, sage, thyme, rosemary, black pepper, and salt. Cook for another 30 seconds until fragrant.

Your kitchen should be smelling pretty fantastic by now! 🤤

4. Combine everything
Pour the buttery vegetable mixture over the bread cubes. Add the chopped parsley and toss gently to distribute everything evenly.

5. Moisten the stuffing
In a separate bowl, whisk together 2½ cups chicken broth and the beaten eggs.

Pour the mixture over the bread, tossing gently until evenly moistened. Add more broth a little at a time if needed. The bread should be moist but not soggy.

6. Bake covered
Transfer the stuffing to your prepared baking dish. Cover tightly with foil and bake for 25 minutes.

7. Get that golden, crispy top!
Remove the foil and bake for another 15–20 minutes, until the top is beautifully golden and crisp and the center reaches 165°F (74°C).

8. Rest and serve
Let the stuffing rest for 5 minutes before serving. Fluff it gently with a fork and bring it straight to the holiday table!

💡 Grandma-Style Tips

🍞 Choose your bread: A mixture of sourdough, French bread, and whole-wheat bread adds wonderful flavor and texture.

🧈 Want extra richness? Add another tablespoon of butter over the top before baking uncovered.

🌿 Fresh herb upgrade: Swap the dried herbs for fresh herbs to taste if you have them on hand.

🥘 Make it ahead: Prepare the bread and sautéed vegetables a day ahead. Refrigerate the components separately, then combine with the broth and eggs shortly before baking.

🦃 Food safety reminder: Bake stuffing in a casserole dish rather than inside the turkey. If preparing it ahead, refrigerate promptly and don't leave perishable ingredients at room temperature for extended periods.

❤️ Save this classic for your holiday menu! Because a turkey dinner just isn't the same without a generous scoop of homemade stuffing!

🦃🧀 Festive Turkey Quesadillas

Thanksgiving leftovers just got a crispy, cheesy upgrade! 🙌

These Festive Turkey Quesadillas combine tender leftover turkey, melty cheese, savory stuffing, green onions, and just the right amount of sweet-tangy cranberry sauce between golden, crispy tortillas.

They’re quick, easy, and perfect for lunch, a snack, or an easy meal when you’re officially tired of reheating the same Thanksgiving plate. 😂

🛒 Ingredients

Makes 4 quesadillas

8 medium flour tortillas
2 cups cooked turkey, shredded
1 cup shredded Monterey Jack or cheddar cheese
½ cup cranberry sauce
½ cup leftover stuffing, crumbled
¼ cup thinly sliced green onions
2 tbsp butter or olive oil
½ tsp dried sage
¼ tsp black pepper
Sour cream, for serving
Fresh parsley or green onions, optional
👩‍🍳 Directions

1. Build the quesadillas
Lay four tortillas flat on a work surface. Sprinkle each evenly with shredded cheese.

2. Add the Thanksgiving leftovers
Layer the shredded turkey over the cheese, followed by a thin layer of leftover stuffing.

Add the sliced green onions and a few small spoonfuls of cranberry sauce. 🍒

3. Season
Sprinkle each quesadilla with dried sage and black pepper.

4. Top them off
Place the remaining tortillas on top to create four quesadillas.

5. Get the skillet hot
Heat the butter or olive oil in a large skillet over medium heat.

6. Cook until golden
Cook the quesadillas one at a time for 2–3 minutes per side, carefully flipping once the bottom is golden brown and crisp.

Cook until the cheese is completely melted and everything inside is hot.

7. Rest & slice
Transfer each quesadilla to a cutting board and let it rest for 1–2 minutes. Cut into wedges.

8. Serve
Serve warm with sour cream and extra cranberry sauce on the side for dipping. Add a sprinkle of fresh parsley or green onions for a festive finishing touch. 🌿

💡 Leftover Tip

Keep the cranberry sauce layer relatively thin. You want that delicious sweet-tart flavor without making the quesadillas too sweet or soggy.

For an extra-crispy quesadilla, don't overcrowd the skillet and cook them one at a time. That golden tortilla is half the fun! 😋

✨ Save this one for your post-holiday leftover lineup—because turkey, stuffing, and cheese were made for quesadillas!

🛒 Ingredients

Serves 6

8 large eggs
¼ cup milk or cream
1½ cups cooked turkey, chopped
1 cup leftover roasted vegetables or ½ cup diced bell pepper
½ cup shredded cheddar or Gruyère
¼ cup grated Parmesan
2 tbsp butter or olive oil
2 green onions, sliced
½ tsp dried sage
¼ tsp black pepper
Salt, to taste
Fresh parsley, optional
👩‍🍳 Directions

1. Get the oven ready
Preheat your oven to 400°F (200°C).

2. Whisk the eggs
In a medium bowl, whisk together the eggs, milk or cream, dried sage, black pepper, and a pinch of salt until well combined.

3. Start the filling
Heat the butter or olive oil in a 10-inch oven-safe skillet over medium heat. Add the chopped turkey and leftover roasted vegetables. Cook for 2–3 minutes, just until everything is warmed through.

4. Add the eggs
Pour the egg mixture evenly over the turkey and vegetables. Gently shake the skillet if needed to help the eggs settle around the filling.

5. Add the cheese
Sprinkle the cheddar or Gruyère, Parmesan, and sliced green onions evenly over the top. 🧀

Cook on the stovetop for 2–3 minutes, just until the edges begin to set while the center remains slightly loose.

Carefully transfer the skillet to the preheated oven. Bake for 10–15 minutes, or until the center is set and the top is lightly golden.

8. Rest & slice
Remove from the oven and let the frittata rest for about 5 minutes. Garnish with fresh parsley, slice into wedges, and serve warm.

💡 Leftover Tip

This recipe is incredibly forgiving! Use leftover roasted carrots, broccoli, Brussels sprouts, potatoes, mushrooms, peppers, or whatever vegetables you have on hand.

For an extra creamy frittata, use a splash of heavy cream. And if you have a little extra cheese in the fridge, go ahead and sprinkle it on! 😋

🌯🦃 The “Gobbler” Leftover Turkey Burrito

Thanksgiving dinner… but make it portable! 😂

If you’ve got leftover turkey, stuffing, mashed potatoes, cranberry sauce, and gravy sitting in the fridge, DO NOT make another boring leftover plate. Wrap it all up in a big flour tortilla and make yourself a Gobbler Burrito!

It’s savory, creamy, cheesy, a little sweet from the cranberry sauce, and crisped up in a skillet until golden brown. Basically, Thanksgiving dinner wrapped in a tortilla. And honestly? We’re not mad about it. 🙌

🛒 Ingredients

Makes 4 large burritos

4 large flour tortillas
2 cups cooked turkey, chopped or shredded
1½ cups leftover stuffing
1 cup mashed potatoes
½ cup cranberry sauce
½ cup shredded cheddar cheese
½ cup gravy
¼ cup crispy fried onions, optional
Salt and black pepper, to taste
A little oil for the skillet
👩‍🍳 Directions

1. Warm the leftovers
If your leftovers are cold, gently warm the turkey, stuffing, and mashed potatoes separately. You want everything warm before assembling the burritos.

2. Warm the tortillas
Heat the tortillas briefly in the microwave or a dry skillet until soft and flexible. This makes them much easier to fold without tearing.

3. Build your Gobbler
Place one tortilla on a flat surface. Spoon the mashed potatoes down the center, leaving plenty of room around the edges.

Layer on the turkey, stuffing, cranberry sauce, shredded cheddar, and a spoonful of gravy.

If you're using them, sprinkle on some crispy fried onions for an extra bit of crunch. 😋

4. Roll it up
Fold the sides of the tortilla inward, then fold the bottom up and roll tightly into a burrito. Try to keep the filling tucked inside as you roll.

5. Crisp it up
Lightly oil a skillet and heat over medium heat. Place the burritos seam-side down and cook for 2–3 minutes per side, turning carefully, until golden brown and crisp.

6. Slice & serve
Let them cool for a minute or two, then slice each burrito in half.

Serve with extra warm gravy and cranberry sauce for dipping. 🥣🍒

💡 Gobbler Tips
Don't overfill! It can be tempting, but a little of everything goes a long way.
Want more cheese? Add Monterey Jack, mozzarella, or your favorite shredded cheese.
A little leftover roasted vegetables can sneak right in too.
For extra crunch, don't skip the skillet-crisping step!
🦃 The Best Part?

It's basically Thanksgiving dinner wrapped in a tortilla. 😂🌯

Save this one for the day after the big feast—because leftovers have officially gotten an upgrade!

🦃🍚 Turkey Fried Rice — The Leftover Makeover You’ll Want to Make Again!

Got leftover turkey and a container of cold rice hanging out in the fridge? Perfect! 🙌 Turn them into a quick, savory, veggie-packed Turkey Fried Rice that comes together in one pan.

It’s loaded with tender turkey, scrambled eggs, peas, carrots, garlic, ginger, and green onions, all tossed in a delicious soy-sesame sauce. Easy, flavorful, and a fantastic way to give holiday leftovers a whole new life! ❤️

🛒 Ingredients

Serves 4–6

4 cups cold cooked rice
2 cups cooked turkey, diced
2 tbsp vegetable oil, divided
1 cup frozen peas and carrots
½ small onion, diced
2 cloves garlic, minced
2 eggs, lightly beaten
3 tbsp soy sauce
1 tbsp sesame oil
1 tsp fresh grated ginger
2 green onions, sliced
¼ tsp black pepper
👩‍🍳 Directions

1. Get the rice ready
Make sure your cooked rice is completely cold. Break apart any large clumps with your fingers or a fork. Cold, day-old rice works especially well because it fries up nicely instead of becoming mushy.

2. Cook the eggs
Heat 1 tbsp of vegetable oil in a large wok or skillet over medium-high heat. Add the beaten eggs and scramble until just cooked. Transfer them to a plate and set aside.

3. Stir-fry the vegetables
Add the remaining 1 tbsp oil to the pan. Add the diced onion, frozen peas, and carrots. Stir-fry for about 3–4 minutes, until the vegetables are heated through and the onion starts to soften.

4. Add the aromatics
Stir in the minced garlic and fresh ginger. Cook for about 30 seconds, just until fragrant.

5. Add the turkey
Add the diced turkey and stir-fry for 2–3 minutes, allowing it to heat through and pick up all those delicious flavors.

6. Fry the rice
Add the cold rice to the pan. Toss everything together and cook for 3–5 minutes, stirring frequently, until the rice is hot and beginning to lightly crisp.

7. Season it up
Pour in the soy sauce and sesame oil, then add the black pepper. Toss well so the seasoning coats all the rice.

8. Bring it all together
Return the scrambled eggs to the pan and add the sliced green onions. Toss everything together and cook for another 1–2 minutes.

9. Serve!
Serve hot and enjoy your leftover turkey in a whole new way! 🍚🥢

💡 Leftover Tip

This recipe is super flexible! Have extra roasted vegetables, corn, mushrooms, or even a little leftover ham? Toss them in. Just keep the pan nice and hot and avoid overcrowding it so the rice gets that delicious fried texture.

✨ One turkey dinner becomes a whole new meal! Save this recipe for the day after your holiday feast!

Got leftover turkey? Let's give it a seriously flavorful makeover! 🙌

This creamy Turkey Korma combines tender leftover turkey with coconut milk, warm curry spices, ginger, garlic, sweet peas, and crunchy cashews. Serve it over fluffy basmati rice or with warm naan for a cozy dinner that tastes like anything but leftovers! 😍

🛒 Ingredients
2 tbsp butter or vegetable oil
1 medium onion, finely diced
3 cloves garlic, minced
1 tbsp fresh grated ginger
1½ tbsp curry powder
1 tsp garam masala
½ tsp ground cumin
½ tsp turmeric
1 can (14 oz) coconut milk
½ cup chicken or turkey broth
½ cup plain Greek yogurt
3 cups cooked turkey, chopped
½ cup frozen peas
½ cup chopped cashews
½ tsp salt, or to taste
Fresh cilantro, for garnish
Cooked basmati rice or naan, for serving
👩‍🍳 Directions

1. Sauté the onion:
Heat the butter or vegetable oil in a large skillet over medium heat.

Add the finely diced onion and cook for 5–6 minutes, stirring occasionally, until soft and translucent.

2. Add garlic & ginger:
Stir in the minced garlic and fresh grated ginger. Cook for about 1 minute, stirring constantly, until fragrant.

3. Bloom the spices:
Add the curry powder, garam masala, cumin, and turmeric. Stir everything together and cook for about 30 seconds.

This quick step helps release the aroma and flavor of the spices. 🌿

4. Build the sauce:
Pour in the coconut milk and chicken or turkey broth. Stir well, scraping up any flavorful bits from the bottom of the skillet.

Bring to a gentle simmer and cook for 8–10 minutes, allowing the sauce to thicken slightly and the flavors to come together.

5. Add the yogurt:
Reduce the heat to low and stir in the Greek yogurt until smooth and creamy.

⚠️ Important: Don't let the sauce boil after adding the yogurt or it may separate.

6. Add the turkey & peas:
Stir in the chopped cooked turkey and frozen peas.

Simmer gently for 5–7 minutes, just until the turkey is heated through and the peas are tender.

7. Add the cashews:
Stir in the chopped cashews, reserving a few for sprinkling on top if you'd like.

Taste and adjust the salt as needed.

8. Garnish & serve:
Spoon the creamy turkey korma over fluffy basmati rice or serve it alongside warm naan.

Finish with plenty of fresh cilantro and a sprinkle of extra cashews. 🍚🌿

🍽️ Serves 4–6

💡 Leftover turkey tip: This recipe is especially good with a mixture of white and dark turkey meat. The dark meat stays wonderfully tender in the creamy sauce.

🌶️ Want some heat? Add a pinch of cayenne pepper, red pepper flakes, or a finely chopped chili along with the spices.

🥜 Cashew tip: Lightly toast the cashews in a dry skillet for a few minutes before adding them for an extra nutty flavor.

🦃🥧 Sage Turkey Pot Pie

Leftover turkey just found its coziest second act! 😍

This Sage Turkey Pot Pie is packed with tender turkey, carrots, celery, peas, and savory herbs in a rich, creamy sauce, all tucked underneath a gorgeous golden, flaky crust.

It's warm, comforting, and exactly the kind of dinner you want on a chilly evening. ❤️

🛒 Ingredients
3 cups cooked turkey, chopped
4 tbsp butter
1 small onion, diced
2 carrots, diced
2 celery stalks, diced
2 cloves garlic, minced
⅓ cup all-purpose flour
2 cups chicken or turkey broth
1 cup milk
1 cup frozen peas
1 tsp dried sage
½ tsp dried thyme
½ tsp salt
¼ tsp black pepper
1 sheet refrigerated puff pastry or pie crust
1 egg, beaten
👩‍🍳 Directions

1. Preheat the oven:
Preheat oven to 400°F (200°C).

2. Sauté the vegetables:
Melt the butter in a large skillet or oven-safe Dutch oven over medium heat.

Add the diced onion, carrots, and celery. Cook for 5–7 minutes, stirring occasionally, until the vegetables begin to soften.

3. Add the garlic:
Stir in the minced garlic and cook for about 30 seconds, just until fragrant.

4. Make the roux:
Sprinkle the flour over the vegetables and stir continuously for about 1 minute. This cooks out the raw flour flavor and creates the base for your creamy filling.

5. Add the liquids:
Gradually whisk in the chicken or turkey broth, followed by the milk. Keep stirring as the mixture comes together.

Cook for 4–5 minutes, stirring frequently, until the sauce becomes thick and creamy.

6. Add the turkey & seasonings:
Stir in the chopped turkey, frozen peas, sage, thyme, salt, and black pepper.

Cook for another 2–3 minutes, just until everything is heated through.

7. Fill the pie dish:
If you're not using an oven-safe skillet or Dutch oven, transfer the filling to a 9-inch deep-dish pie plate.

8. Add the crust:
Place the puff pastry or pie crust over the filling. Trim away any excess around the edges and gently press the crust around the rim of the dish.

9. Vent the top:
Cut several small slits in the center of the crust to allow steam to escape.

10. Brush with egg:
Brush the entire crust with beaten egg. This gives it that beautiful golden-brown finish. ✨

11. Bake:
Place the pot pie in the oven and bake for 25–30 minutes, until the crust is puffed and deeply golden and the filling is bubbling around the edges.

12. Rest & serve:
Let the pot pie rest for about 10 minutes before serving. This gives the creamy filling time to settle.

Then grab a big spoon and dig in! 🥄❤️

🍽️ Serves 6–8

💡 Leftover makeover tip: Have leftover roasted carrots, peas, corn, or green beans? Toss them into the filling instead of starting from scratch.

🌿 Herb upgrade: Add a little fresh parsley or a pinch of rosemary along with the sage and thyme.

🥧 Crust tip: Puff pastry gives you a light, flaky, beautifully golden top, while traditional pie crust gives you that classic pot-pie experience.

❤️ Save this one for your leftover turkey! It's the kind of comfort food that makes you almost wish you had more leftovers.
