Strawberry Almond Protein Overnight oats π
Healthy meal of the day!
Roasted butternut squash, chorizo sausage and sprinkle of feta π

Cute lil paleo muffin π such a yummy, whole food treat π₯²
1 egg
1 banana, mashed
1 tbsp nut butter
1/2 cup maple syrup (honestly, next time I would try less)
1 tsp vanilla
1 1/4 cup almond flour
1 tsp baking powder
1 tsp cinnamon
-Preheat oven to 350F and grease donut mold with avocado spray or baking spray. If you have an older mold, I recommend cutting out a little circle from parchment paper so the top of the donut does not stick.
-Next, in a small bowl, whisk the egg with a fork. Set to the side.
-In a large bowl, mash the banana with a fork. It should be completely mushy and have NO chunks.
-Add in the whisked egg, almond butter, vanilla extract, maple syrup. Mix until fully combined. Now fold in almond flour, cinnamon, and baking powder.
Evenly divide and spoon the batter into the greased donut mold.
-Bake for 20-25 minutes, or until a toothpick comes out clean, and enjoy!

Beef strips
Cabbage
Carrots

Cauliflower
Garlic
Garnish with sliced avocado
Stir fry sauce:
Gf soy sauce
Beef broth
Maple syrup
Ginger
Garlic
Red pepper flakes
White wine
Gf fish sauce.
Tuna lettuce boats

1 Tbsp each of greek yogurt and mayo
Pickles

Protein peanutbutter cups π€€
Yes, they are as delicious as they sound!
This recipe is really simple and you can switch the ingredients no problem, use whey or plant based protein, and use vegan or sugar free chocolate chips, swap for almond butter! Whatever suits you π₯°
1 cup chocolate chips (I used coconut sugar sweetened)
1 tbsp Coconut oil
1/2 cup organic peanut butter
1 scoop vanilla protein powder
Makes 12 cups.
Use a muffin tray and line with muffin liners
Melt the chocolate chips and coconut oil in microwave safe bowl, start with 30 seconds and then see, it doesn't have to be all the way melted, once you stir it for a bit it will all eventually melt, if you need another 30 seconds then you can put it back in. Stir until smooth.
Spoon about 1-1.5 tbsp of melted chocolate into the bottom of all the muffin liners then stick in the freezer for 10 mins.
Microwave PB for about 30-40 seconds and then mix in protein powder till smooth.
Take the muffin try out of freezer and spoon the PB mixture over the frozen chocolate, then spoon the rest of the melted chocolate over top of the peanut butter, then back in the freezer for about 30 mins. Then you can enjoy or keep in the fridge.

THE BEST EGG SALAD
Found some inspiration from tiktoc on this one but it did not disappoint π
-coconut oil spray a glass dish, add 4 eggs and bake at 375 for 25 mins
-chop up 1/4 cup of pickles and 1/4 cup diced red onion, and a handful of chives, chopped
Salt and pepper to taste
1 tbsp mayo
3 tbsp greek yogurt
-let eggs cool, then remove from dish and chop up, mix everything together and ENJOY!!
Eat as is or add to rice cake, or cucumber slices π
My healthy meal of today!
Sweet potato, zuchinni and left over chicken skillet π
Sautè sweet potato in coconut oil, for 6 to 8 mins, add salt to taste.
Add diced onion, sautΓ© till soft,
Add diced garlic and chopped zuchinni, sautΓ© for a few more minutes.
Add salt and pepper to taste. Add left over chicken and cook for a few more mins. My left over chicken was jerk chicken thighs.
Garnish with chopped chives.
