Skip the fast food this weekend and make your own popcorn chicken at home! Another air fryer fave to add to your list. Tag a friend who needs to make this in the comments.
INGREDIENTS
1 lb boneless chicken breast cut into cubes
3 tbsp cornstarch
1 egg
¼ tsp salt
Pepper
½ tsp onion powder
½ tsp garlic powder
½ tsp paprika
1 cup panko or breadcrumbs
Olive oil
INSTRUCTIONS
1. Preheat air fryer to 390°F. Add cornstarch and egg to chicken bites, mix well.
2. Add salt, pepper, onion powder, paprika, and garlic powder. Mix well.
3. Dip chicken in panko or bread crumbs. Drizzle with oil and air fry for about 6 – 8 minutes shaking halfway just until done. Enjoy!

INGREDIENTS
1 package of phyllo (defrosted)
1 cup olive oil
Syrup:
2/3 cup sugar
½ cup water
1/3 cup honey
3 tbsp lemon juice
Garnish
1/3 cup chopped pistachios
Icing sugar
INSTRUCTIONS
1. Preheat oven to 350 F and spray a 12 cup muffin tin with vegetable oil. Defrost phyllo, unwrap and lay flat on cutting board. Roll up loosely into a roll and slice 12 even pinwheels.
2. Place in 12 muffin cup pan. Drizzle olive oil evenly over top. Bake for 1 hour.
3. Make syrup while phyllo is baking. Combine all ingredients in saucepan and simmer 5 minutes. Cool completely.
4. Pour cooled syrup over phyllo, garnish with pistachios and icing sugar. Can be served at room temperature or refrigerated. Enjoy!!

INGREDIENTS
2 cups white or semi sweet chocolate chips
¼ cup peanut butter
1 ½ cups rice krispies or any puffed cereal
1 ½ cups mini marshmallows
¼ cup mini chocolate chips
INSTRUCTIONS
1. Melt the white or semi sweet chocolate (2 cups) in a microwave on 50% heat in 30 second intervals, just until just melted.
2. Add peanut butter into melted chocolate, then add to rice krispies in a larger bowl and stir to coat. Cool for 5 minutes. Add marshmallows and mini chocolate chips and press into a 9” x 9”
square pan.
3.Refrigerate for about 15 minutes, then cut into squares and ENJOY! (They can also be frozen for later use.)

Air fryer: rub entire salmon fillet with a little olive oil, salt, pepper and paprika. Set Air fryer at 390°F for 6 – 8 minutes and place salmon skin side up.
Oven: preheat oven to 425°F. Rub salmon with same as above and roast for 10 minutes per inch of thickness.

2 tbsp rice wine vinegar
1 1/2 tsp sugar

INSTRUCTIONS
1. Bring sushi rice and water to a boil.
2. Then immediately turn to lowest heat. Cover and simmer for 10 minutes.
3. Turn off heat, add rice vinegar, sugar and salt. Mix well and keep covered for another 10 minutes. Enjoy!

2 bananas sliced in half
1/3 cup Peanut butter
½ cup Chopped peanuts
1 oz semi sweet chocolate
1 tsp vegetable oil
INSTRUCTIONS
1. Spread peanut butter over banana halves, roll in chopped peanuts and drizzle with chocolate on one side.
2. Place on parchment paper, and put popsicle stick through the cut edge and refrigerate for 5 minutes.
3. Then drizzle chocolate on other side, refrigerate or freeze and enjoy!!

INSTRUCTIONS
1. Roast steak at 300° until medium rare – internal temp of 125° F.
2. Dry off steak with paper towel and sear in a pan with some oil on a high heat for about 45 seconds per side. No need to let it rest. Cut in and enjoy!
Everyone loves risotto, but who has the time/ patience to stand at the stove? It’s not traditional- but I’ve got the greatest method for shortcut risotto using the oven. Give it a try and let me know your thoughts.
INGREDIENTS
1 cup Arborio rice
1 tbsp oil
1 ½ cups chopped onion
2 tsp crushed garlic
½ cup white wine
2 cups chicken stock
1/3 cup ready made pesto sauce
1/3 cup grated parmesan cheese
2 tbsp olive oil
INSTRUCTIONS
1. Add oil to a hot oven proof skillet, add onions, cook for 3 minutes, add garlic and cook on medium heat until onions are softened.
2. Add rice and saute 1 minute, add wine and cook until it evaporates, add stock bring to a boil, cover and put into a 350° F oven covered for 15 minutes.
3. Add a little more stock is rice is still slightly hard and put back on stove top. Add pesto, cheese and olive oil –enjoy!

INGREDIENTS
8 – 10 dried whole dates – sliced open enough to remove pits
8 – 10 pecan halves
1 cup white chocolate chips
1 tbsp vegetable oil
Melted dark chocolate for garnish
INSTRUCTIONS
1. Place pecan half into each date and close by squeezing together.
2. Melt white chocolate and oil just until smooth. With a fork dip dates into chocolate and let drip excess off. Place on parchment paper.
3. Drizzle with extra melted dark chocolate if desired. Refrigerate until solid.Best served at room temperature. Enjoy!!

I love crispy chickpeas as a snack or over a salad, but they can take a while in the oven. I experimented and cooked them in the air fryer and the oven. Watch for the results!
INGREDIENTS
1 (15 oz) can chickpeas
3 tbsp olive oil
Salt and pepper
Seasoning of choice
INSTRUCTIONS
Oven roasting: dry half chickpeas well with paper towel. Add half of the olive oil, salt and pepper and any seasonings of your choice. Oven roast for 30 minutes until crisp.
Air fryer: no need to dry – add olive oil and salt and pepper and seasoning of your choice. Air fry for 12 minutes shaking at half way point.
So you’re going to make a sandwich and you notice some of your bread is moldy…🦠🍞Can you still eat it? Watch for my take!
P.S. I recommend freezing your bread when you bring it home/ once opened, if you know you won’t go through it! ❄️

3 tbsp vegetable oil
¼ cup sugar
1 egg yolk
3 tbsp sour cream or yogourt
2 tbsp cocoa
2 tbsp all purpose flour
½ tsp baking powder
3 tbsp semi sweet chocolate chips
INSTRUCTIONS
1. Mix oil, sugar, yolk and sour cream together until blended. Add remaining ingredients and mix just until combined.
2. Microwave for 45 seconds to 1 ½ minutes – center should be loose – do not over bake. Cooking time may vary by microwave!
3. Sprinkle with icing sugar and enjoy!!

INGREDIENTS
3 boneless chicken breasts
6 grape or cherry tomatoes sliced in half
6 mini buffalo mozzarella balls cut in half
3 tbsp prepared pesto sauce
½ cup panko or bread crumbs
2 tbsp olive oil
2 tbsp grated parmesan cheese
salt
Fresh basil
INSTRUCTIONS
1. Preheat oven to 350 F. Place chicken in a baking dish. Make three horizontal slices in each breast.
2. Stuff each slit with one half tomato and one half cheese. Drizzle pesto over top.
3. Mix panko or bread crumbs with olive oil, grated parmesan cheese and salt.Sprinkle over top chicken.
4. Bake for 25 minutes or until chicken reaches 160° F. Garnish with basil and enjoy!

I like to serve them warm with ice cream or frozen yogurt. 🍎 INGREDIENTS Apple mixture 2 cups diced apples ( 2 medium apples, peeled and cored) 1/3 cup brown sugar 1 tbsp cornstarch ½ tsp cinnamon 1/3 cup chopped dates or raisins 1 tbsp lemon juice Oatmeal mixture 1 1/3 cups rolled oats ¾ cup brown sugar 1/3 cup chopped pecans 1/3 cup vegetable oil 1 cup all purpose flour ½ tsp cinnamon Dash salt INSTRUCTIONS 1.Preheat oven to 350 F. spray a 9” x 9” pan with vegetable oil. In bowl combine all ingredients for apple mixture. 2.In another bowl combine all ingredients for oatmeal mixture, if too dry add a little more oil or water until it’s crumbly and just a little wet. 3.Press half oatmeal mixture into bottom of pan, add apple mixture and top with remaining oatmeal mixture. Pat down. 4.Bake at 350 F for 30 – 40 minutes or just until brown. Delicious served warm! I’m back with a another folded quesadilla- this time, it’s tex mex style! INGREDIENTS 2 large tortillas (preferably whole wheat) 1/3 cup bbq sauce 1/3 cup shredded cheddar cheese 3 oz sliced cooked chicken (leftover) 1/3 cup black beans 1/3 cup corn niblets INSTRUCTIONS 1.Make a slit up to centre of both tortillas. 2.Brush bbq sauce over both tortillas. Add cheese to one quarter then, chicken, beans and corn. Fold up in quarters. 3.Grill in pan covered for 2 minutes, flip then grill another 2 minutes. Cut in half and serve with extra barbeque sauce.
