2. Once water is boiling, bring to the lowest heat.

2. Add 1 tbsp salt
3. Cook according to package and cook just before “al dente” – firm to the bite or 1 minute before cooked

1. Pour one can condensed milk into a 9” pan, sprayed with vegetable oil.
2. Cover with foil and place in larger pan filled with water, coming up halfway.
3. Bake at 450 F for 1 – 1/12 hours depending on how dark you want you sauce.
4. Whisk until smooth and serve over desserts, enjoy!

1 ½ tbsp water
1 tbsp olive oil
1 tbsp lemon juice

Forget the takeout or pre-made crusts and make your own cauliflower crust pizza at home. Tag a friend or more- who would love this!

Full recipe details below:

4 cups (200 g) grated cauliflower*
3/4 cup (94 g) grated parmesan
1 egg
3/4 cup (75 g) almond flour
1/8 tsp (0.5 mL) salt
1 cup (250 mL) marinara or tomato pasta sauce
1 cup (125 g) grated mozzarella cheese
2 cups arugula as garnish

2 tbsp (30 mL) chopped basil

* You can use packaged fresh cauliflower rice or frozen cauliflower rice.

1. Preheat oven to 425° F (220° C). Line a baking sheet or pizza pan with parchment paper.
2. If using frozen cauliflower, wrap it in a large kitchen towel and squeeze out any excess moisture.
3. In a bowl, combine cauliflower, cheese, egg, flour and salt. Pat into a 12-inch (30-cm) circle on parchment paper. Bake for 20–25 minutes until browned.
4. Top with marinara and mozzarella and bake 5 more minutes. Garnish with arugula, enjoy!

½ cup plain Greek yogourt
¼ cup olive oil
¼ cup grated parmesan cheese
4 anchovies
1 garlic clove
1 tbsp lemon juice
Water to thin (2 – 3 tbsp)

1 ½ lb brussel sprouts cut thinly
Parmesan cheese for topping

1. Slice or put Brussels sprouts in the food processor.
2. In small food processor puree all ingredients for dressing until smooth. Add more water if too thick.
3. Dress salad, top with parmesan and croutons. Enjoy!

Make the most of raspberry season with this delicious cream cheese coffee cake. A must try! Recipe details below:

Cheesecake filling
8 oz softened cream cheese
¼ cup white sugar
1 egg

1/3 cup brown sugar
1/3 cup all purpose flour
3 tbsp vegetable oil

2/3 cup white sugar
1/3 cup vegetable oil
2 eggs
2 tsp vanilla extract
¾ cup light sour cream or Greek yogourt
1 1/3 cup all purpose flour
2 tsp baking powder
1 tsp baking soda
1 cup fresh raspberries

1. Cream cheese mixture; Add softened cream cheese to bowl along with egg and sugar – mix well with a hand blender until smooth.
2. Crumb topping: add brown sugar, flour, oil and cinnamon to bowl, mix well – set aside.
3. Cake: add sugar, oil, eggs and vanilla and whisk together.
4. Add yogurt or sour cream with flour. Add baking powder and soda and mix until combined.
5. Pour into a greased 9” cheese cake pan. Pour over cream cheese filling and top with berries, then crumble. Bake at 350 F for 50 – 55 minutes or until tester comes out clean. Enjoy!!

Even I have days where I want a one pan meal!! This dish has everything you want- gorgeous roasted veggies, crispy gnocchi and minimal clean up! Recipe details below:

1 (17 oz) package gnocchi
2 pints cherry tomatoes
½ red onion sliced
2 minced garlic cloves
¼ cup olive oil
Salt and pepper
2 cups arugula
½ lemon juiced
1 tbsp olive oil
1/3 cup grated parmesan cheese (optional)

1. Add uncooked gnocchi, cherry tomatoes, onions, garlic, olive oil and salt and pepper together in a bowl. Mix well and place on parchment paper on baking tray.
2. Place in 425°F oven and roast for 25 – 30 minutes or until gnocchi becomes crispy.
3. Add arugula, lemon juice, extra olive oil and salt and cheese if using and toss well. Enjoy!!

Skip the takeout and make your own shawarma at home! Give it a try and let me know how you like it. Recipe details below:

1 ½ lb boneless skinless chicken thighs
2 tbsp olive oil
2 tbsp corn starch
1 tsp each paprika, cumin, turmeric and cinnamon

Serve with
Diced cucumbers, tomatoes, onions and tzatziki sauce over flat bread
Chopped cilantro

1. Add chicken, olive oil, cornstarch and spices in bowl.
2. Place in 9” x 5” loaf pan lined with parchment paper.
3. Bake at 375 F for bout 30 minutes or until internal temperature reaches 160 F.
4. Let cool for 10 minutes then pour off liquid, invert and slice thinly.
5. Serve on flatbread with toppings and garnish with cilantro. Enjoy!

10 -15 mini marshmallows or 2 large
3 tbsp icing sugar

1. In microwave melt marshmallows for 15 seconds.
2. Add to whipping cream in bowl along with icing sugar.
3. Beat until soft peaks form.

Here’s a refreshing and flavourful summer salad to add to your rotation! Grilled shrimp and corn salad will be a new fave. Recipe details below:

1 lb large shrimp, shelled
3 cobs of corn
3 baby cucumbers
1 shallot
1 large ripe avocado

1/4 cup olive oil
1 tbsp soy sauce
2 tsp sesame oil
1 tbsp lemon juice
1 crushed garlic clove
2 tsp sesame seeds
Salt and pepper
1/4 cup chopped cilantro

1. Grill shrimp just until cooked- about 3 minutes and chop
2. Grill corn about 4 minutes until lightly charred and slice off kernels
3. Dressing: add olive oil, soy sauce, lemon juice, sesame oil, salt, pepper garlic and sesame seeds- mix well.
4. Cut cucumber and avocado.
5. Add shrimp to bowl with corn, cucumber, shallot, avocado, dressing and cilantro. Enjoy!


Mini yogurt pops! Here’s a fun (and nutritious) idea for kids- and big kids too.😉I’d recommend sticking these in the freezer ahead of time and then your guests can choose the topping(s) of their choice!

Can’t get enough of summer 🍑’s! This grilled peach burrata salad is perfect for summer entertaining. Full recipe details below:

4 cups arugula
1 burrata cheese balls
Salt and pepper
Fresh chopped basil
Drizzle of balsamic vinegar (optional)

½ tsp Dijon mustard
1 tbsp apple cider vinegar
½ tsp maple syrup
3tbsp olive oil
2tsp lemon juice
1/8th tsp Salt and pepper

1. Grill 2 peaches, cut into wedges - just until charred, about 2 minutes
2. Dressing - Add oil, mustard, honey, lemon juice, and whisk.
3. Slice 4 small tomatoes.
5. Place arugula on a serving plate and add half of the dressing, toss well.
6. Add tomatoes, peaches, prosciutto and burrata in the centre. Add salt and pepper and chopped basil.
7. Drizzle over remaining dressing and add balsamic glaze if desired. Enjoy!
