INGREDIENTS
6 large egg roll wrappers
8 oz sushi grade salmon diced
¼ cup light mayonnaise
1 tbsp sesame oil
2 tsp soy sauce
3 tbsp chopped cilantro
Dash salt
2 tsp sesame seeds
INSTRUCTIONS
1.Place wrappers in 6 muffin tin. Brush egg rolls wrappers with oil
Bake at 350 F for 8 minutes or until lightly browned.
2.Mix diced salmon with mayo, sesame oil, soy sauce, cilantro, salt and sesame seeds.
3.Fill cups and garnish with extra cilantro and sesame seeds. Enjoy!

Here’s the perfect dessert for a cozy fall day- apple strudel! Check out my lightened take on a fall favourite. 🍎
INGREDIENTS
1 lb apples, peeled and diced ( approx. 2 large apples)
1/3 cup granulated sugar
½ cup chopped pecans
½ cup dried cranberries or raisins
½ tsp cinnamon
2 tbsp lemon juice
6 sheets thawed phyllo sheets
½ cup olive oil
¼ cup plain panko or breadcrumbs
INSTRUCTIONS
1.Preheat oven to 350 F. Line a baking sheet with parchment paper.
2.Combine apples, sugar, pecans, dried cranberries, cinnamon and lemon juice together.
3.Lay one sheet phyllo flat, brush with oil, repeat until 6 sheets have been layered.
4.Sprinkle over panko crumbs, then apple mixture. Fold in sides of strudel, then roll up completely, place on parchment paper and bake until browned about 30 – 40 minutes. Sprinkle with icing sugar and enjoy!

INGREDIENTS
1 medium pumpkin cut in half
3 tbsp olive oil
2 tbsp maple syrup
½ tsp cinnamon
INSTRUCTIONS
1.Cut pumpkin in half, pull out seeds and strands and cut pumpkin into wedges.
2.Place on parchment paper and preheat oven to 400 F.
3.Brush with oil, maple syrup and sprinkle with cinnamon. Roast for at least 20 minutes or just until tender.
4.Serve with extra maple syrup, enjoy!

Here’s a delicious way to use all those freshly picked apples! (Store bought is also fine.) You’ll love these apple squares. I like to serve them warm with ice cream or frozen yogurt. 🍎
INGREDIENTS
Apple mixture
2 cups diced apples ( 2 medium apples, peeled and cored)
1/3 cup brown sugar
1 tbsp cornstarch
½ tsp cinnamon
1/3 cup chopped dates or raisins
1 tbsp lemon juice
Oatmeal mixture
1 1/3 cups rolled oats
¾ cup brown sugar
1/3 cup chopped pecans
1/3 cup vegetable oil
1 cup all purpose flour
½ tsp cinnamon
Dash salt
INSTRUCTIONS
1.Preheat oven to 350 F. spray a 9” x 9” pan with vegetable oil.
In bowl combine all ingredients for apple mixture.
2.In another bowl combine all ingredients for oatmeal mixture, if too dry add a little more oil or water until it’s crumbly and just a little wet.
3.Press half oatmeal mixture into bottom of pan, add apple mixture and top with remaining oatmeal mixture. Pat down.
4.Bake at 350 F for 30 – 40 minutes or just until brown. Delicious served warm! Enjoy.

I’m back with a another folded quesadilla- this time, it’s tex mex style!
INGREDIENTS
2 large tortillas (preferably whole wheat)
1/3 cup bbq sauce
1/3 cup shredded cheddar cheese
3 oz sliced cooked chicken (leftover)
1/3 cup black beans
1/3 cup corn niblets
INSTRUCTIONS
1.Make a slit up to centre of both tortillas.
2.Brush bbq sauce over both tortillas. Add cheese to one quarter then, chicken, beans and corn. Fold up in quarters.
3.Grill in pan covered for 2 minutes, flip then grill another 2 minutes. Cut in half and serve with extra barbeque sauce. Enjoy!
