Amaranth is also a beautiful plant. Here some tips on how to grow seeds at home.
AMARANTH (Ornamental) Growing Guide
Soil
Any sunny site with good drainage.
Position
Full sun.
Frost tolerant
Amaranth cannot tolerate cold temperatures.
Feeding
Mix a light application of a balanced organic fertilizer into the soil prior to planting. In early summer, drench plants with a high-nitrogen liquid fertilizer to support vigorous growth.
Companions
Sunflower, Zinnia, Cleome and Nicotiana. Amaranth can grow to 6 feet (1.8m) tall, so it will dominate a group planting. Smaller varieties can be grown in large tubs.
Spacing
Single Plants: 1' 5" (45cm) each way (minimum)
Rows: 1' 5" (45cm) with 1' 11" (60cm) row gap (minimum)
Sow and Plant
Plant amaranth in late spring or early summer, after the last frost has passed and the soil is warm. You can get an early start by growing seedlings indoors in late spring. Amaranth varieties that grow head high require 24 inches (60 cm) between plants.

Notes
The young leaves of most ornamental amaranth varieties can be picked and eaten as cooked greens. Tall varieties that produce large seed heads benefit from staking. Colors include dark red, orange and buff yellow.
Harvesting
Gather seed heads for fresh flower arrangements at any stage of maturity. Harvest seed heads for drying after most of the flowers have faded and the cluster feels firm. Hang up in a dry, well-ventilated place.
Troubleshooting
Night-flying beetles and other insects often chew holes in amaranth leaves, but the damage is mostly cosmetic.

Amaranth was a key part of the diet of the ancient Aztecs, and was used not only as food but also as part of their religious ceremonies. When the conquistadors arrived in the 16th century, the amaranth crops were burned and their use was banned. Fortunately, the plant was never completely eliminated and we can still enjoy its benefit.
AMARANTH THE WONDER GRAIN
Amaranth is considered a wonder grain by most as it is full of healthy nutrients which keep your body fit and disease-free. Regular consumption of this nutritious grain can give you a number of benefits.
Health Benefits of Amaranth:
Gluten-free: Like quinoa it is gluten-free and can avoid it if you have trouble with gluten like other grains which are rye wheat barley. Use amaranth flour to thicken soups. It can be used with other gluten-free flours and gums for the purpose of baking.
Cholesterol: It significantly reduces the cholesterol levels including triglycerides and LDL.
Inflammation and cancer: The peptides present in the grain helps in the prevention of inflammation and also chronic diseases like cancer. The antioxidants in the grain can protect cells from getting degenerated.
Hypertension: The phytonutrients in the grain help to control diseases like hypertension, diabetes etc.
Protein: It’s a high source of protein but the protein can be easily digested, in comparison to other grains and milk protein.

Not a true grain, amaranth is often called a pseudocereal, like its relative quinoa. Both plants belong to a large family that also includes beets, chard, spinach, and lots of weeds.
