These zucchini boats are a favourite meal prep recipes. They’re packed with protein, full of flavour, and they store well in the fridge for a few days, making them the perfect go-to for lunch or dinner when life gets busy.

Ingredients:
• 4 medium zucchinis
• 1 tbsp olive oil
• 1 lb ground turkey
• 1/2 onion, chopped
• 2 cloves garlic, minced
• 1/2 red bell pepper, finely chopped
• 1/2 tsp sea salt
• 1/2 tsp black pepper
• 1/2 tsp dried oregano
• 1/2 tsp paprika
• 1/2 cup tomato sauce (no added sugar)
• Fresh parsley (optional, for garnish)

Instructions:
1. Preheat oven to 375°F (190°C).
2. Slice zucchinis in half lengthwise and scoop out the center to create “boats.” Place in a baking dish.
3. In a pan, heat olive oil over medium heat. Add onion and garlic and sauté until soft.
4. Add ground turkey and cook until browned.
5. Stir in bell pepper, spices, and tomato sauce. Simmer for 5 minutes.
6. Spoon mixture into zucchini boats. Cover with foil and bake for 25–30 minutes until zucchinis are tender.
7. Garnish with parsley if you like!

Store in an airtight container in the fridge for up to 3 days. Perfect for meal prep!
