This was SO good!
I brought this recipe in for my members to taste test… and it got the BIG thumbs up! 👍
I love trying new recipes and bringing fresh ideas to my members. When we’re trying to lose weight, it’s so easy to get stuck in a rut and keep eating the same foods. Trying new recipes helps keep things interesting, enjoyable and shows us that healthy eating doesn’t have to be boring!
This recipe is now on our MIX30 tracker in classes.
Who’s giving this one a try? 👇

I love making and trying new recipes and the best part is bringing them along to my Unislim Deansgrange class for my members to taste!

So if you fancy a little taste test AND plenty of motivation, support and laughs along the way… come join us! My class on every Wednesday morning from 7.15am – 10am, Kil O’The Grange Parish centre, Deansgrange (info in my bio). I’d love to see you there 😍

I’ve tried loads of ‘healthy treats’ and these are the best yet, some are so tasteless.

🤎 DATE & ALMOND CHOCOLATE BARS 🤎

You’ll need:
½ cup almonds
1 cup pitted dates
2 tbsp cacao powder
½ cup desiccated coconut
70g dark chocolate, melted
A little sea salt

Blitz the almonds first, then add the dates, cacao powder and desiccated coconut and blend until combined. If the mixture feels a little dry, add a small splash of water. Press firmly into a lined tray or tin and pop into the fridge for up to 60 minutes. Remove from the fridge, pour the melted chocolate over the top 🍫 and finish with a little sprinkle of sea salt. Pop back into the fridge to set. Slice into bars and store in an airtight container. Easy, chocolatey and SO good!

Curried Meatballs - might not look fabulous but were tender & full of flavour! They were nearly as good as my mum’s 🥰

For the meatballs
500 lean beef mince
1 tsp Garlic grated
1 tsp Ginger grated
¼ tsp Garam masala
¼ tsp Paprika
¼ tsp Turmeric
1 tsp Coriander powder
½ tsp Cumin powder
2 tbsp Breadcrumbs
1 large Egg
½ tsp Salt
¼ tsp Pepper

For the curry
Spray oil
1 Onion chopped finely
1 tbsp Garlic minced
1 tbsp Ginger grated
1 Tomato chopped finely
1 tsp Salt
Fresh Coriander chopped
1 tsp Cayenne powder or chili powder
1 tsp Sweet paprika
1 tsp Cumin powder
1 tbsp Coriander powder
¼ tsp Turmeric powder
½ tsp Garam masala
120 ml Greek yogurt
1 tbsp Lemon juice
200ml Chicken stock

Method

Add all meatball ingredients in a bowl and mix well to combine. Shape into a balls and set aside.
Make the curry
In a pan over medium heat, saute onions, garlic, and ginger until the onions are translucent. Add the tomatoes and saute for 2 to 3 minutes more until soft. Next, add all the powdered spices. Saute until fragrant, using a few tablespoons of water to prevent the spices if burning.
Add the Greek yogurt and lemon juice and combine well. Then, add the chicken stock. Simmer for 5 minutes. Gently add the meatballs one at a time. Shake the pan so the meatballs sink into the sauce. Cover the pan again and simmer on medium-low for 10 minutes until meatballs are cooked through.
Add the coriander. Stir, taste and adjust seasoning. Enjoy !
