POACHED EGG ON AVOCADO TOAST

INGREDIENTS

2 large eggs
2 ripe avocados, peeled and destoned
1tsp lime juice
2 thick slices Extra Special Sourdough Boule
2tsp olive oil
Handful of watercress
1 chopped red chilli
Cress, to garnish

METHOD

Poach the eggs.

Mash the avocados with the lime juice.

Brush the sourdough slices with the olive oil.

Toast on both sides under a hot grill. Spread the mashed avocado on the toast, then top each slice with a poached egg.

How to Make TikTok’s Pesto Eggs

Pesto eggs are as simple as it gets. You’ll start by spreading a spoonful of pesto in a nonstick pan or skillet. As far as measurements go, that’s your call. In the same way I’m not going to tell you how much sugar to put in your coffee or how much tequila to put in your margaritas, I’m not going to tell you how much pesto to use.

You need at least enough for the eggs to have something to cook in, but if you want it extra pesto-y, add a few extra spoonfuls. Plus, if you add an excess of pesto, you can always use that pool of herby goodness to baste the eggs.

Once your pesto is in the pan, you’ll crack your eggs directly into the pesto and cook them however you like. Most are fried sunny-side up, but if you’d prefer them over easy or scrambled, you can easily customize this dish to however you take your eggs. I followed the ingredients in this TikTok and served my pesto eggs over toast, ricotta, mashed avocado, and topped it off with red chili flakes and a drizzle of honey.

2 Tips for Making Pesto Eggs at Home

Use the best pesto you can get your hands on. It will make a difference both in taste and presentation.
Get creative! Think of as your starting point. Prepare your eggs however you like, serve them on your starchy vehicle of choice, and maybe throw in meat to your toast or sandwich for a well-rounded breakfast sandwich.

Classic Stuffed Peppers

INGREDIENTS

1/2 c. uncooked rice
2 tbsp. extra-virgin olive oil, plus more for drizzling
1 medium onion, chopped
2 tbsp. tomato paste
3 cloves garlic, minced
1 lb. ground beef
1 (14.5-oz.) can diced tomatoes
1 1/2 tsp. dried oregano
Kosher salt
Freshly ground black pepper
6 bell peppers, tops and cores removed
1 c. shredded Monterey jack
Freshly chopped parsley, for garnish

DIRECTIONS

👉 Preheat oven to 400°. In a small saucepan, prepare rice according to package instructions. In a large skillet over medium heat, heat oil. Cook onion until soft, about 5 minutes. Stir in tomato paste and garlic and cook until fragrant, about 1 minute more. Add ground beef and cook, breaking up meat with a wooden spoon, until no longer pink, 6 minutes. Drain fat.

👉 Return beef mixture to skillet, then stir in cooked rice and diced tomatoes. Season with oregano, salt, and pepper. Let simmer until liquid has reduced slightly, about 5 minutes.

👉 Place peppers cut side-up in a 9"-x-13" baking dish and drizzle with oil.

👉 Garnish with parsley before serving.

Paneer is one of the most common ingredient used to make Indian gravy/curry. It is our very own version of cottage cheese. We can have paneer in any dish and the second its added to a recipe, it elevates the flavors of the meal making it top-notch. Some of the popular paneer recipes on my blog are Paneer Makhani, Paneer Kofta Curry, Spicy Paneer Biryani, Beetroot Paneer Paratha, Sriracha Paneer, and the most pinned and shared recipe called Spinach & Paneer Puffs. That is the beauty of this cottage cheese, you can use it in any meal right from breakfast to dinner. Its even used in some traditional Indian desserts! If you are vegan, you can substitute it with tofu. However personally I just love paneer more. It's more delicious. Ingredients
▢ 2 Bell Peppers
▢ 1 cup crumbled paneer
▢ 1 mashed potato
▢ ½ cup chopped cilantro
▢ 1 tablespoon coriander cumin powder
▢ ½ tablespoon garlic powder

Palak Paneer Kofta Curry

Palak Paneer Kofta Curry is delicious rich nutty paneer and palak balls simmered in spicy creamy cashew tomato gravy. Palak and paneer are die-hard combo since ages. Be it in any form, both when mingle with each other the outcome is an ecstasy. Every home has variant for palak paneer kofta, some of them make it in a form of Shaam-Savera where paneer is stuffed in spinach mixture and added to the gravy, few of them make paneer koftas and slide it in spinach gravy. There is no hard-n-fast rule that it has to be made in the same way in every kitchen. Here, I have mixed both of them along with nuts and spices to make palak paneer koftas, fried it, and it was dressed with cashew tomato gravy. Spicy Palak Paneer Koftas are to die for, they just melt in mouth giving you silky, nutty and spicy kick to your palate.

Ingredients:-

For Koftas:

250 gms, paneer, grated
2 cups, palak (spinach), very finely chopped
1 tsp, ginger, grated
1 tsp, green chilli, finely chopped
1 tsp, garam masala powder
½ cup, besan, roasted
2 tbsp, cashew nuts, coarsely chopped
2 tbsp, almonds, coarsely chopped
2 tbsp, raisins
Salt to taste
Oil for frying koftas..

For Curry:

2 medium onions, roughly chopped
2 tbsp, cashew nut
1 cup, tomato puree(I have use my home made one)
1 tsp, garam masala powder
1½ tsp, Kashmiri chili powder
1 green chili, finely chopped
1½ tsp, coriander powder
½ tsp, cumin powder
½ tsp, turmeric powder
1 cinnamon stick
1 bay leaf

Chutney Grilled Cheese

If you asked  me what my TOP recipes are, the ones that get the most audible “mmmmmm’s”  from my family & friends, my Chutney Grilled Cheese would definitely make the cut. It’s not filled with any gourmet cheeses, but it packs some serious FLAVOR and I  promise you, you cannot go back to eating a basic grilled cheese after this.

How To Make Chutney Grilled Cheese:

• Prep by making the chutneys a day ahead of time if you want to make things go a little faster. The Cilantro Chutney can be made a few days ahead and I  love freezing a double batch into these silicone ice cube trays and popping out a cube whenever I  need it.
• I  smear a little Hellman’s Mayo + Thecha Chutney inside the grilled cheese but if you can’t get your hands on the Thecha Chutney you can use Sriracha, chili garlic sauce, Maggi sauce, or Calabrian chilis like Trader’ Joe’s Bomba Sauce.
• This grilled cheese has a stuffing of bell peppers in it and I  am totally OCD about making sure they are all chopped super tiny and uniform in size which is why I  use this amazing chopper from Amazon to get the job done quick.

Ingredients
• 2 cups chopped bell peppers (1 Green Bell Pepper + 1 Red Bell Pepper)
• 1 tsp garam masala
• 2 tsp taco seasoning
• 1 tbsp oil
• 6-8 Pieces of Sandwich Bread
• 10-12 Slices of Cheese
• 1-2 tbsp butter

Ingredients and substitutions
• Store-bought pizza dough – homemade pizza dough, pitas or English muffins would also make great bases.
• Tomato sauce – store-bought or homemade tomato sauce are both great options.
• Pesto – this is a great alternative to tomato sauce for making a variety of different mini pizzas.
• Mozzarella – provolone, gouda, parmesan or any other cheese including lactose-free options can work for this recipe.
• Your favourite toppings – Use your preferred toppings, like veggies, meats, herbs and cheeses, to customize your mini pizzas.

How to make mini pizzas
1 Roll and cut the dough.
2 Pre-cook the dough for 7-8 minutes.
3 Assemble your toppings.
4 Add on your sauce and toppings.
5 Put in the oven for 10-12 minutes.
6 Serve and enjoy!

Roasted Chicken And Vegetables

This is such a great and easy chicken dinner complete with vegetables, all in one pan, perfect for a weeknight meal but fancy enough for a weekend dinner. This kind of chicken and vegetables is a favorite at my house and it’s something we make often, probably once a week. Here’s why:

Minimal Prep
Only one roasting pan to wash
Simple ingredients that you probably already have in your pantry or fridge right now…

Chicken – I used chicken thighs and breasts. You can use one or the other, or even drumsticks.
Potatoes – Yellow, red, russet, any potato you like! Peel them or keep the skin on.
Onion – I used a red onion. Yellow or white will work.
Tomatoes – Quarter medium sized tomatoes or use cherry tomatoes like I have.
Garlic – I love to use lots of garlic! You can use as much or as little as you like.
Bell pepper – Red bell peppers work really well in this recipe to get some roasty sweetness. Orange or yellow will work too.
Kalamata olives – Any of your favorite type of olives will work. This ingredient is totally optional.
Olive oil – Other oils such as avocado, sunflower, safflower, or canola will work instead.
Balsamic vinegar – This will add an amazing deep flavor. Red wine vinegar can be used if you don’t have balsamic.
Smoked paprika – This is my secret weapon in the kitchen. I highly recommend buying smoked paprika if you don’t already have it.
Basil – Fresh basil is best. I chopped some up and added it to the dish as a nice and bright, fresh flavorful garnish.

INGREDIENTS
👉2 pounds chicken breasts, thighs or drumsticks
👉4 medium potatoes peeled and cut in cubes
👉1 large onion cut in wedges
👉2 cups cherry tomatoes or regular tomatoes cut into quarters
👉6 cloves garlic minced
👉1 red bell pepper roughly chopped
👉1 cup kalamata olives
👉4 tablespoon olive oil
👉1 tablespoon balsamic vinegar
👉1 teaspoon smoked paprika
👉salt and pepper to taste
👉3 basil leaves chopped
