Things I learned about longevity in Sardinia's Blue Zones part 2:
BREAD IS LIFE!!! 🥖
Bread is not evil and it should not be bad for you. People have sustained their lives via bread for over 14,000 years. Sadly, due to agricultural changes, ultra processing, additions of synthetic chemicals, preservatives, emulsifiers, pesticides, artificial and "natural" flavors, etc, bread is no longer what is meant to nourish us and sustain us. (Don't believe me, check the ingredients on your sourdough at Whole Foods, it's not even real sourdough 😢)
Additionally, in the United States we have enriched wheat which contains synthetic vitamins that are meant to replace the natural vitamins that were removed from the wheat grain. Humans cannot appropriately break down and absorb the synthetic vitamins which ultimately cause more harm than good. 🤢
True Bread should truly be nothing more than natural heirloom wheat grain 🌾 ground to contain the germ, bran and flour, yeast or starter, water and salt.
And when it's made from those ingredients, fresh and by hand, is the most comforting, filling and nutritious base for our diet.
Due to severe autoimmune disease and MTHFR mutations (another post for another day,) I have been gluten free for over 16 years. This is quite devastating for a fully-blooded Italian who grew up on pasta and bread. However on my integrative journey, I learned that I could have true sourdough because the lactobacillus breaks up the gluten. And so I do. And it's incredible.
So in Italy, I decided to test the differences between American wheat and European wheat. What I found was that I could eat every single bread and pasta and I didn't feel sick once. No ultra processed, highly genetically modified grain, no enriching and no glyphosate are allowed in Italy. And it shows. I never felt healthier than I did the last two weeks eating real bread. 🥖❤️ Immersive Explorations
