Not Your Typical Culinary Academy
Job Training Program
Located in Gilbert, Arizona, Not Your Typical Culinary Academy (NYTCA) is a culinary training program for adults with autism and other disabilities. The program provides quality training in skills necessary for employment in the restaurant and hospitality industry, which are taught in our classroom designed as a working kitchen. The 12 week course will explore the ins and outs of the culinary industry, giving each client skills for success in the work force. Upon finishing the program, graduates will receive a certificate of completion which can be used when seeking employment.
Meet the Staff:
Chef W, Executive Director: The course will be instructed by Chef W Rieth of Not Your Typical Deli. Chef W has been in the culinary industry for over 25 years and has successfully taught culinary programs in the specials needs community for the past eight years. Chef W is the co-founder of Not Your Typical Deli, which employs individuals with special needs in an integrated work environment.
Allison Kolanko, Program Director: Allison has spent over a decade in Gilbert Public Schools. She has worked as a teacher for students with autism; as a department chair overseeing the special education programs; and as an instructional coach for special education teachers at the secondary level, including transition services.

Today showed how much these guys have learned in the past 10 weeks. They had 1 hour to design a breakfast menu, 1 hour to prep, 1 hour to cook, they came up with some incredible dishes! I would be proud to serve any one of them in the restaurant! Nice work guys!

Celebrating the cooler weather with some homemade soft pretzels! These guys are doing amazing things! Recipe below...

Soft Pretzels

Dough
1 1/4 cup warm water
I package of active dry yeast
3 3/4 cup of flour
3/4 cup of powdered sugar
1 1/2 tsp salt
2 tsp canola oil

Dough bath
2 cups warm water
1/4 cup baking soda

Dissolve yeast in 1 1/4 cup of warm water, wait til foams.
Combine flour, powdered sugar, and salt. Add oil to yeast water, and slowly start adding the flour. (You may not need all of the flour) knead the dough for about 5 minutes, place in oiled bowl and wrap with plastic wrap. Let rise for about 45 minutes. When dough has risen, combine the 2 cups of warm water with the baking soda. Remove dough from bowl and cut into 8 pieces. Roll each piece out to 24 inch ropes. Twist top and fold over. Dipped pretzel in water bath. Then place on oiled baking sheet. Bake at 425 for 5 minutes, rotate, and bake for another 5 minutes or until golden brown.

Working with chocolate today! The class made their own Peanut Butter Cup. Super easy recipe, but it takes some finesse, these guys got it down!

1 cup chocolate chips
3 tbsp half and half
1/2 cup creamy peanut butter
3 tbsp powdered sugar

In small mixing bowl, add peanut butter and powdered sugar, whisk until smooth. In microwave safe dish, add chocolate chips and cream, heat for 1 minute, remove from microwave and whisk until smooth. Line cupcake pan with 6 cupcake liners. First spoon chocolate and cover bottom of liner, then spoon in peanut butter mix. Top with the rest of the chocolate, and refrigerate for an hour. They taste just like Reese's! Yum!

Simple and delicious Frittata recipe today!

2 cups chopped spinach
8 eggs
1 cup half and half
I cup shredded cheddar
1 cup shredded mozzarella
1 tbsp salt
1 tsp pepper
1 tbsp garlic powder
5 pieces of bacon

In medium mixing bowl add eggs, cream, and seasonings, whisk together until mix is light yellow. On small sheet tray lay out bacon and cook on 400 for about 10 minutes. Set aside eggs mix and bacon, and chop 2 cups of fresh spinach. Oil the sides of a casserole dish and add the spinach and cheese. Pour egg mix on spinach and cheese then mix together. Top with bacon, and bake on 350 for about 20 minutes or until golden brown.

Job Training Program

Course Details:
12 weeks, Monday-Friday, 240 hours total
Morning Session: 8:00 a.m. - 12:00 p.m.
Each session will have 10 students and 2 instructors.

This lesson is a great one! The class was split into teams. The teams then chose random ingredients out of a bowl. They are now responsible for researching and creating a recipe using their chosen ingredients. After the ingredients are chosen, the leaders meet and negotiate trades of items between teams. This exercise promotes team building, creativity, problem solving, following directions and social skills. It was a great day at NYTCA! These guys have come so far in only a week!

We are proud to support the amazing Surfing With Nixon for Autism event this Friday, August 23. We have been approved to raffle off a surfing slot for 5:00 pm on Friday — and it to be at that time. (Surfing is only for those with ASD). Please come to the Deli starting Tuesday and add your name to the raffle box. Surfing time is 5pm but you can hang out at Big Surf all day. We will choose the winner Thursday at 5pm.

We are so excited about the start of our upcoming Job Training program!! We have our first orientation for our incoming clients Wednesday, August 14, for the class beginning August 26. It is our privilege and honor to help these individuals meet their employment goals. Thank you to all of the families, staff, and Vocational Rehabilitation counselors that have worked so hard to assist our incoming clients. This is truly a community effort!!
