Sundays are meal prep days! By then I’m usually exhausted from the plans we’ve had, the sports games we’ve driven too, and I just want to sit and enjoy the last few hours of the weekends without having to check off a chore.

But then when I really think about it. I think about the week ahead of me. How tired I’ll STILL be the next time. Time doesn’t slow down in this season of life it only goes faster.

And making my week a little less stressful is worth the “I’m tired” feeling.

I never want to start my week guessing what we’re going to eat. So Sunday’s I make sure our breakfast is prepped for the beginning of the week. Lunches are a MUST because we don’t go out for lunch. Getting a dinner together to start off the week is non-negotiable.

I try and make a lot of one pot meals, crockpot, and casseroles. It helps speed up the time.

My bread loaf pancakes were a life saver this weekend! And the kids got 15g of protein in for breakfast—truly a win 🏅

If you can plan and strategically prepare for your week, it doesn’t have to mean hours in the kitchen.

Double headers are a very long day and I don’t like having to worry about what our family of 4 will eat in between games.

To cut down on snack stand snacks and the costs of ordering food, I try and prepare the day before.

Breakfast is important to set everyone’s day up for success. I always aim for high protein meals for us and the kids. Since it’s the weekend, a breakfast sandwich just hits the spot!

I use Famous Dave's bagels, 1 full egg and 2 egg whites, each sandwich as Applegate 🌭🥓🍗🍔 turkey bacon and some shredded cheddar. These end up being my pretty massive so my husband aka Coach eats a whole one but the kids share.

A staple in my grocery shopping is Turkey Breast. It’s an easy set and forget in the oven and helps us get through the week with school lunches and comes in clutch when I need to pack for the ball field.

Since my player doesn’t like to eat too heavy between games I pack granola bars, pretzels, and fruit to give him some healthy options to keep his energy up, but nothing too heavy in fat and protein that will hurt his stomach.

The sandwich comes in clutch on the car ride home when he’s really ready to refuel.

Baseball siblings are the real MVPs on these long days so making sure lunches and snacks are available is importantly so no one is Hangry. I pack the same options but also keep a hidden treat in case games run late and we need something to keep us going 😆

Starting off the school year with some favorites.

Everything here was simple to make and easy to freeze for those mornings you need to grab and go quickly.

- spinach and cheddar scones
- peanut butter and Greek yogurt pancake “cake”
- cinnamon muffins
- breakfast burritos
- pumpkin bread

Meal prepping doesn’t have to mean eating the exact same chicken + broccoli situation for five days straight.

I’m all about prepping **ingredients** instead of entire meals.

Protein ✔️
A few veggies ✔️
A carb ✔️
A couple sauces/seasonings ✔️

Then mix and match throughout the week.

Way less boring. 🙌

Sunday Meal Prep! It took all of us today to pull it together and get things ready for the week. Breakfast usually is the one of plan for the most. We always plan to start our day fueled. This week we’ll be taking dinner one day at a time but we have enough veggies to get us started 👏

My goal isn’t to make separate “healthy” food for myself and something different for my family.

It’s to make food that everyone can enjoy. ❤️

Sometimes they eat everything.

Sometimes they don’t.

Sometimes dinner is a huge hit and sometimes...we’re sharing portioned Nachos 😂

That’s real life.

One thing I’m focusing on this week: ✨protein at every meal✨

Not because carbs are bad. Not because I’m “cutting” anything out.

Protein simply helps make meals more satisfying and makes it easier for me to stay full between meals.

Small focus. Big difference.

Vacation was fun. 😎 The food was good. 🍹 And now it’s time for some vegetables. 😂

There’s absolutely nothing wrong with enjoying vacation—and there’s also nothing wrong with being excited to get back to your normal meals.

Balance looks like both. ❤️
