Inspired by my yesterday's post about the benefits of rosemary, I prepared this delicious Rosemary & Lemon Infused Cake ❤️

What we need:
- 1/2 cup water
- 1/2 cup sugar
- 2 sprigs rosemary
- 1½ cup all-purpose flour
- 1¾ teaspoons baking powder
- Pinch of salt
- ¾ cup white sugar
- 4 tablespoons unsalted butter, softened
- 4 tablespoons canola oil
- 2 eggs
- 2 teaspoons vanilla extract
- Zest of 1 lemon
- ½ cup milk
- 2 cups confectioners sugar
- ½ teaspoon vanilla
- Edible flowers

Step-by-Step instructions:
In a small saucepan, bring 1/2 cup water, 1/2 cup sugar, and 1 spring of rosemary to a simmer. Simmer until the sugar has completely dissolved.

Remove from heat and allow to cool. Set aside the rosemary sprig from the syrup for the cake.

Remove the leaves from the stem and finely chop.

Transfer the simple syrup once cool enough to a jar and chill in the refrigerator.Preheat oven to 350 degrees.Sift together flour, baking powder, and salt. Set aside.In the bowl of a stand mixer, beat together sugar, butter, and oil until smooth.

Add eggs, one at a time.

Add 2 tsp vanilla, zest of 1 lemon, and chopped rosemary.

Mix until well combined. Alternately add milk and dry ingredients, beginning and ending with the dry ingredients.

Pour into an 8 inch cake pan.

Bake for about 30-35 minutes or until cake tester comes out clean.

Transfer cake to a wire rack and allow to cool completely in the cake pan.With a sharp knife, poke the cake several times and drizzle with about 1/2 cup of the rosemary simple syrup. Cover the cake and place in the refrigerator for a couple of hours or overnight.For the rosemary glaze, whisk together the confectioners sugar, 1/2 tsp vanilla, and 3-4 tablespoons rosemary simple syrup.

Drizzle all over cake and garnish with edible flowers.

Serve.

Here's an interesting recipe I found:
A Fish That's Not Really A Fish 🐟

Ingredients:
- 1 bay leaf
- 2 tablespoons pitted black olives
- 1 k**b of butter
- 1 tablespoon capers
- 200 grams fresh cod
- 1 egg yolk
- 2 cups all-purpose flour
- 1 cup milk
- 2 tablespoons chopped parsley
- 400 grams peeled potatoes
- 2 sheets of puff pastry
- 200 grams salt cod soaked
- 3 shallots
- a little' patience and creativity!

Steps:
Simmer the fish and potatoes in salted water, with the bay leaf and cloves. Chop the capers and olives. With a slotted spoon, remove the fish when still slightly undercooked, definitely before it begins to fall apart!

Transfer to a bowl, remove skin and bones and flake into large pieces. When soft, drain and mash the potatoes, then add to the fish together with the olives, capers and parsley.Meanwhile, slice the shallots and simmer them in the milk.

Drain, adding the shallots to the mixture and reserving the liquid. Use the latter to make 3-4 tablespoons of bechamel sauce, which you will also incorporate into the fish mixture.

Mix gently to avoid breaking up the fish and check for salt.Allow to cool.

Roll out a sheet of puff pastry on a baking sheet.

Place the mixture in the center in an oval shape (the body of your 'fish'). Cover with another sheet of pastry and press the edges to seal (brush them with a bit of water so that they stick better). Refrigerate for 20 minutes.

Remove from the fridge, cut the pastry in the shape of your fish, after which brush the surface with the egg yolk beaten with a little milk.With the tip of a knife draw the fish scales, the eye and any other detail, according to your imagination. The nicks are to be superficial and not go through the pastry.

Bake in a preheated oven at 200C for about 25 minutes or until the fish is nicely colored.P.s. if you wish, and have even more time and patience, you can make lots of individual small fishes, perhaps in different shapes.

I've just tried Lamb Moussaka and it came our really delishh....

We need:
- 1/2 cup all purpose flour
- 1 can diced tomatoes, undrained
- cup margarine
- 1/2 cup dry red wine, optional
- 4 egg, beaten
- 2 1/2 pounds eggplant, (3 large)
- 4 cups Natrel Lactose Free Milk
- 3 cups lactose free mozzarella cheese, shredded
- 1/2 cup chopped fresh parsley
- 2 clv garlic, chopped
- 2 pounds ground lamb
- White Sauce
- Meat Sauce
- 1/4 cup olive oil
- 2 mediums Onion, chopped
- 1 tablespoon dried oregano leaves
- 1 tablespoon salt
- 1 teaspoon salt
- 1 salt and pepper, to taste
- 1 can Tomato paste
- 3 zucchini, sliced, 1/4 inch thick

Preparation
CUT eggplant into 1/4" (5mm) thick slices.

Layer in colander, sprinkling each layer with salt.

Let stand 30 minutes.RINSE eggplant; pat dry.

Place in single layer on baking sheet.

Brush with olive oil. Broil, turning once for 4 to 6 minutes on each side, until golden and softened. Set aside. Repeat until all eggplants are cooked.SAUTE zucchini in large oiled frying pan until tender-crisp. Set aside.Meat Sauce:COOK lamb in large saucepan on high heat, breaking up with spoon, for 5 minutes.

Drain off fat.

Add onions, garlic and oregano. Cook on medium for 5 minutes.

Add tomatoes, tomato paste and wine. Simmer 10 minutes, or until mixture starts to thicken. Stir in parsley, salt and pepper. Set aside.White Sauce:MELT margarine in large saucepan.

Add flour, mixing until smooth. Gradually add milk. Cook, stirring constantly until mixture comes to a boil and is thickened.

Add salt and nutmeg.

Yummylicious Chicken In Soy Sauce With Vegetables 😋

We need:
- black pepper
- 1 kilograms chicken parts, b***d
- 1 cup corn
- 250 grams fresh mushrooms. peeled
- handful of fresh parsley leaves. chopped
- 1 onion, chopped
- 3 tablespoons honey or dates syrup or sweet soy sa
- 1/2 cup regular soy sauce
- sprouts

Preparation
In a bowl, whisk together soy sauce and honey or dates syrup.Season the sauce with some black pepper.Soak the chicken part in the soy sauce mixture.

Heat some oil in a frying pan.Fry the marinaded chicken parts until brown.

Heat oil in a frying pan, again.Fry the onion until golden, add the mushrooms and fry for a few minutes.You can add some cinnamon and ginger powder to get a better flavor.After a few minutes, add corn and mix everything well.

Put the chicken parts on top.

Add the leftover marinade and half a cup of water.Cover the pan and cook until the chicken is done.When almost done, add chopped parsley leaves and sprouts.

Serve hot!

Sesame Seared Tofu With Jalapeno Miso Dressing 🌱

Ingredients:
- 2 cloves of garlic (minced)
- 1 tablespoon ginger, chopped
- 1 teaspoon grapeseed oil
- 2 tablespoons honey
- jalapeno pepper, seeded
- Kosher salt
- 4 tablespoons mirin
- 2 tablespoons miso
- 1 1/2 teaspoons rice wine vinegar
- 1 scallion, finely chopped
- 1 teaspoon sesame seed oil
- sesame seeds
- Dressing
- 1 teaspoon soy sauce
- 10 ounces firm tofu, drained, sliced
- 1/4 cup water

Preparation
Heavily coat one side of tofu with jalapeno miso dressing. Allow to rest in fridge for 2 hours.Once tofu is done marinating, heat a dry pan over medium heat.While pan heats, spread a layer of sesame seeds and a pinch of salt on a plate and press non-marinated side of tofu into sesame seeds.Hold hand just over bottom of pan to feel how hot it is. (You should feel heat emanating towards your hand.). When its ready, add both oils, swirl in the pan and lay in then the tofu (sesame side first). Cook on both sides until golden brown, approximately 2-3 minutes on each side.

Serve over a bed of greens and drizzle with extra dressing. Salt to taste.

Breakfast Idea: Egg Salad Sandwiches With Tarragon 👌

Ingredients:
- Arugula
- 8 large hard boiled eggs, roughly chopped
- 1/2 cup mayonnaise
- pepper
- Salt
- 4 tablespoons minced shallot
- 12 thick slices of sourdough
- 1 tablespoon minced tarragon
- 3 teaspoons white wine vinegar

Preparation
Stir together, eggs, shallot, tarragon, vinegar, and mustard and 1/4 cup mayonnaise. If the salad is too dry, add a tablespoon of mayonnaise at a time until it comes together. Season with salt and pepper.

Place lettuce on six pieces of bread.

Spread egg salad on top of the arugula then top with remaining slices of bread.

I haven't had Chicken Wings for ages! It's time to make special ones :)

We'll need:
- 2 tablespoons brown sugar
- 3 1/3 pounds organic chicken drummettes
- 1 teaspoon garlic powder
- 2 teaspoons ground cumin
- Honey
- 1 tablespoon kosher salt
- Tabasco Sauce
- 2 tablespoons taco seasoning(Trader Joes's brand)
- 3 tablespoons vegan cream cheese
- 2 tablespoons coconut yogurt

Preparation
Add chicken into a large glass or stainless steel bowl, toss all the seasonings and brown sugar over the chicken.Cover with plastic wrap and refrigerate for an hour or two.Preheat the oven temperature to 400 degrees F.

Place all the seasoned chicken onto a parchment lined baking sheet spread out so that they don't touch. If you are doubling the recipe use two pans.

Bake for 35 minutes.In a large bowl, add about 2 tablespoons of honey (or more if you like) and a few splashes of tabasco sauce (less or more to your liking).

Add the chicken, if it feels to hot to toss, wait a few minutes or use two spoons to coat the chicken.

Yummylicious Almond Cookie Bar ❤️

We need:
- 35g Almond flakes
- Apricot Gel/Jam, as needed
- 25g Brown sugar
- 50g Cold butter, cut to cubes
- Cookie Base
- 1 tbsp Fresh milk
- 20g Oatmeal Crushed cornflakes
- 100g Plain flour
- 80g Wholemeal flour

Preparation
Beat butter and sugar until light and fluffy.In a bowl combine wholemeal flour and plain flour together, then mix in the butter mixture with a rubber spatula and knead gently to a soft dough.Turn out the dough on to a flour surface or line with a plastic sheet below and with another plastic sheet on top. Then roll to a square. Chill for at least 1 hour.

Transfer the dough on a non grease paper and cover with a plastic sheet on top, then roll to dough to about 3mm thick.Prick the dough with a fork and bake for about 15-18 minutes until brown at preheated oven 180C and leave biscuit to cool.

Spread the apricot jam over the top of the biscuit, set aside.

Mix topping ingredients and spread evenly on the biscuit with a palette knife.

Bake for 15 minutes until golden.

Remove cooked biscuit from the oven and leave to cool completely, then cut into bars.

Darkness can be beneficial too:
