Eat your beans!!!!
Inadequate consumption of prebiotics—the fiber and resistant starch concentrated in unprocessed plant foods—can cause a disease-promoting imbalance in our gut microbiome.
When we feed our gut flora with fiber, they turn around and feed us right back. The fiber-loving bacteria produce short-chain fatty acids, which can help suppress inflammation and cancer.
Beans and legumes, a category of foods recommended on the Daily Dozen are rich in fiber. For example, 1 cup cooked lentils has 15.6g fiber, 1 cup cooked black beans has 15g fiber, and 1 cup of cooked split peas has 16.3g fiber.

This year I am trialing new canning recipes that use maple syrup/maple sugar 🍁 (unrefined sugar) in place of granulated refined sugar.
Below are red and yellow maple pickled beets. I omitted the pearl onions.
Below is a link to the recipe I used.

“The rise in calorie surplus sufficient to explain the obesity epidemic was less a change in food quantity than in food quality, with an explosion in cheap, high-calorie, low-quality convenience foods. And the federal government very much played a role in making this happen. “
Why are U.S. taxpayers giving billions to support the likes of the sugar and livestock industries?
Are you taking your B12 supplements regularly while eating plant based?!
Not taking B12 supplements or regularly eating B12 fortified foods may explain the higher stroke risk found among vegetarians.

In my continuous journey to eat WFPB SOS, I have been highly challenged to find jam-jelly recipes to preserve that do not contain refined sugar or sugar substitutes. So many jam-jelly recipes use soooo much sugar!
I stumbled across a possible solution! In my efforts to avoid refined sugar, I have found that the leading physicians in the plant based movement recommend using only dates and Maple Syrup 🍁 as sweeteners as they are the least refined.
Ta da! Maple Sugar 🍁
I found a jam recipe that uses Maple Sugar and so I had to find Maple Sugar!
Did you know that you can make your own?
I will not lie, it takes some time and is a bit messy, but the reward is fabulous!
Stay tuned for the final product!
