Choosing to eat in rhythm with the seasons offers benefits beyond best flavor and complimentary ingredients. Seasonal foods are more nutrient-dense, affordable, and abundant.
Nature provides us with cool, refreshing fruits and veg in the hot summer, and warm, hearty produce for rustic stews in the winter, harmoniously supporting the internal balance of our bodies with the changing external environment.
These are a few examples from Chef Nathan Lyonโs cookbook, Great Food Starts Fresh. It has recipes divided into five seasons designed with local farmerโs markets in mind. (He names ๐ซchocolate the fifth and โuniversal season,โ and I certainly agree).
