Grapes have been called the “queen of fruits” due to being one of the most nutritious and medicinal foods available since ancient times. Grapes are a rich source of vitamins A, C, and B-complex, and minerals such as calcium, magnesium, copper, boron, manganese, iron, selenium and potassium. Grapes contain high amounts of powerful antioxidants known as bioflavonoids, resveratrol, and anthocyanins. These phytochemicals are anti-inflammatory, anti-viral, anti-microbial, anti-aging, and anti-cancerous and provide protection against anemia, degenerative nerve diseases, heart disease, viral and fungal infections, Alzheimer’s, autoimmune disorders, and all forms of cancer. Grapes can also help provide relief from asthma, migraines, constipation, gastritis, chronic acidosis, indigestion, kidney disorders, fatigue, and vision problems. Spicy White Bean Chili ***VERY GOOD**** Yum!!!

Ingredients

2 medium onions, chopped


1 tablespoon canola oil


4 garlic cloves, minced


2 cans (4 ounces each) chopped green chilies


2 teaspoons ground cumin


1 teaspoon dried oregano


1/4 teaspoon cayenne pepper


1 bag of White northern beans

3 cups of vegetable stock

Cajun Red Beans and Rice

½ tablespoon extra-virgin olive oil
½ cup chopped green pepper
½ cup chopped red onion
½ cup sliced celery
¼ cup water
2 teaspoons Creole Seasoning (see recipe below)
1 (15.5-ounce) can red kidney beans, rinsed and drained
2 cups cooked brown rice

Heat olive oil in a large, deep skillet over medium heat. Add green peppers, onions, and celery. Cook until vegetables are softened, about 3-5 minutes. Add water and Creole Seasoning. Stir well. Mix in kidney beans and rice. Lower heat and cook another 5 minutes or until heated through.

Yield: 8 servings (serving size: ½ cup)

Recipe Notes
◾Serve with sliced avocado and/or sliced green onions.
◾Add 1 (14.5-ounce) can diced tomatoes.
◾Stovetop directions using dry rice: Sauté vegetables as directed. While vegetables are cooking, bring 2 cups water to a boil. Lower heat, and add vegetables, 1 cup uncooked brown rice, and beans. Cover, and simmer about 45 minutes, or until rice is light and fluffy.

Creole Seasoning

2 tablespoons paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon pepper
½ teaspoon thyme
½ teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon cayenne pepper

Mix all ingredients in a small glass jar. Cover, and store until ready to use.

Daniel Fast Recipes

Potato and Green Onion Frittata

Preheat oven to 350

1/4 cup olive oil
1 onion - finely chopped
4-5 green onions, chopped with the green and white parts separated
4 garlic cloves, minced
2 medium potatoes, shredded
2 tsp salt
1/2 tsp pepper
2 lbs firm tofu
2-3 tbsp. soy sauce, to taste

In a large skillet heat the oil over medium heat. Add the onion and the white part of the green onions and sauté for 2-3 minutes.

Add the garlic and heat for another 30 seconds

Increase the heat to medium-high and add the potatoes, 1 tsp of salt and 1/4 tsp pepper. Cook for 10-15 minutes, flipping the potatoes regularly until they are well browned

In a blender of food processer, blend the remaining salt, pepper, tofu and soy sauce until they are creamy

Pour the creamy mixture and the green part of the green onions over the fried potatoes and mix. Pour this mixture into a large oiled pie pan

Bake for 30-40 minutes or until the center is firm. Allow the frittata to cool for a few minutes

Makes 4 servings

Oatmeal

2 cups milk (soy, almond, rice, etc.)
1 cup oats
raisins or other dried fruit (use your desired amount)
1/2 cinnamon
1/2 tsp all spice
1/2 tsp salt
1 mashed banana (best to use a super ripe one for sweetness)

On medium heat, add all the ingredients except oats to a pot and bring to a boil. Stir to mix everything well. Be careful because milk will bubble over quickly.

Add oats and stir to mix well. Lower heat to a simmer and cover with a lid.

Extra milk can be used for serving

Red Bean Soup

1 tbsp. olive oil
1 1/2 cups chopped yellow onion
1/4 cup chopped green bell peppers
1 tbsp. minced garlic
4 bay leaves
2 cups dried red kidney beans (soaked overnight)
2 quarts vegetable broth
1 tsp salt (or to taste)
3 tbsp. chopped parsley
1 cup diced carrots
1 1/2 cups cooked long grain brown rice
6 tbsp. chopped green onions
* additional spices you can use are Italian seasoning, paprika, garlic powder, onion powder, black pepper, cayenne, dried or fresh oregano and thyme

Heat the oil in a large heavy pot over high heat. Add the onions, bell peppers, garlic, carrots and bay leaves. Add all seasonings and spices. Cook and stir for a few minutes

Add beans and cook for about 2 minutes. Mix well

Add the broth and bring to a boil. Reduce the heat to medium low and cook till beans are tender.

Once beans are tender, discard the bay leaves. Remove 1 cup of beans from the pot and put in a small bowl. Mash the 1 cup of beans and add them back to the pot. This will give the whole pot of beans texture.

Top the beans with the green onions. Serve with brown rice and a green salad for a complete meal

All fruits, veggies, whole grains, nuts and seeds, legumes (beans), oils, water, tofu, soy products, vinegar, seasonings, herbs and spices, beverages: spring water, distilled water or other pure waters, 100% fruit juices.

Foods to avoid during The Daniel Fast:

All meat and animal products, dairy, sweeteners, leavened bread, refined and processed foods, deep fried foods, solid fats and beverages including but not limited to coffee, tea, carbonated beverages, energy drinks, and alcohol.

Please make sure to READ THE LABEL when purchasing packaged, canned or bottled foods. They should be sugar free and chemical free.
