Here's something I wish I knew earlier! Did you know ✨citrus fruits✨ can greatly decrease your risk of breast cancer? They are complex sources of antioxidants and vitamins A, B, & C. Cool down this summer with these life-changing Healthy Key Lime Pie Bars!
🍋 Ingredients:
Cookie Crust:
- 6 pitted dates
- ¾ cup cashews
- ½ cup almond flour
- ¼ tsp cinnamon
- 1 teaspoon vanilla extract
- ½ tsp sea salt
Filling:
- 1 1/4 cup whole cashews
- 1/4 cup full-fat coconut milk
- ¼ – ½ cup lime juice (plus more to taste)
- 1 tablespoon lime zest
- ¼ cup maple syrup (plus more to taste)
- 1 teaspoon vanilla extract
- 2 tablespoons coconut oil
🍊Instructions:
1. Soak 1 1/4 cup of cashews in water overnight for the key lime pie filling.
2. Add the crust ingredients to a food processor and pulse until a sticky dough forms. Press the dough into an 8×8 baking pan lined with parchment paper. Put the crust in the fridge or freezer while you prepare the key lime filling.
3. Add the soaked cashews, lime juice, lime zest, maple syrup, coconut oil, coconut milk, and vanilla extract to your food process or high-powered blender. Blend the filling until silky, smooth, and creamy.
4. Give the filling a taste and adjust the level of sweetness or tartness to your taste. Add more maple syrup or lime juice to suit your taste buds.
5. Pour the key lime filling over the prepared crust. Freeze the bars overnight or until completely solid.
6. When ready to serve, remove the bars from the freezer and use a sharp knife to slice them into 9 or 16 pieces. Top with more lime zest, and enjoy!

As the weather grows warmer, Women's Imaging Specialists recommends cooling down with these delectable, cancer-fighting Berry Yogurt Popsicles originally posted by the American Institute for Cancer Research. Berries are rich in phytochemicals like anthocyanins and ellagic acid, which counter inflammation and act as antioxidants.

🍒Ingredients:
1 1/2 cup pitted fresh or frozen cherries
1/2 cup fresh or frozen blackberries
1 Tbsp. honey
24 oz. vanilla Greek yogurt
12 (3 oz.) paper cups and 12 popsicle sticks
🫐Directions:
1. In a small mixing bowl, mash cherries and blackberries. Drizzle on honey and mix together.
2. In paper cups, layer alternating spoonfuls of yogurt and fruit until full. Place a popsicle stick or plastic spoon in each cup. Freeze.
3. When ready to serve, tear the paper cup off the popsicle and enjoy!
The best exercise for you is the one that you enjoy most. For some, it may be hiking through nature. For others, gardening in their backyard may be preferred. Whatever way you choose to get moving, research shows that moderate to vigorous physical activity over time lowers your risk of many cancers, including breast cancer! Celebrate Cinco de Mayo this year with this healthy, easy, and delicious guacamole recipe! It's chock-full of cancer-fighting antioxidants and wholesome ingredients.
Here's the recipe:
🥑Ingredients
1/4 cup cilantro leaves and tender stems, chopped; divided into 2 parts
2 tablespoons white onion, finely minced
1/2 teaspoon fine sea or kosher salt
1 fresh serrano chile, stemmed, seeded, and minced
1 large ripe avocado, pitted and coarsely chopped
2 tablespoons freshly squeezed lime juice
🥑Directions
Use a molcajete or mortar and pestle and pound 1/2 of the cilantro, all the white onion, salt, and serrano into a paste.
In a bowl, add this flavoring paste, the avocado, lime juice, and the remaining 1/2 of the cilantro and pound or mash to the consistency of thick mush or pulp.
🥑Serve with tortilla chips and ENJOY!

Ingredients:
3/4 c Old Fashioned Rolled Oats
2/3 c Unsweetened Vanilla Almond Milk
1 tsp Vanilla Extract (Alcohol-Free)
1/4 tsp Natural Butter Flavor
4 packets of Natural Sweetener (Stevia, Truvia, Monk Fruit, etc)
A pinch of Salt
1/2 c Frozen Strawberries
Procedure:
1. Mix the oats, almond milk, vanilla extract, butter flavor, natural sweetener, and salt in a bowl.
2. Stir in frozen strawberries
3. Cover and refrigerate overnight.
4. Give it a stir and enjoy!
