The cucumber salad that everybody's talking about just got an upgrade at Rainbow Blossom. Instead of MSG, we're using miso to enhance the flavor naturally. This subtle change makes the dish both healthier and more flavorful.

Ingredients

1 cucumber
1–2 scallions
1 tablespoon San J soy sauce
1 teaspoon Red Boat fish sauce
1/2–1 teaspoon Eden sesame oil
1/2 teaspoon Wholesome organic cane sugar
A pinch of Miso Master organic miso
A sprinkle of Rainbow Blossom bulk sesame seeds

Slice your cucumber with a mandolin and mix all the ingredients in a soup container! It's that easy!

Cozy comfort food awaits! Check out this great Slow Cooker Squash and Quinoa Stew recipe! More on our website, link in the comments!

Serves 6
Total Time: 4 hours 20 minutes
Plant-based, gluten-free

3 tablespoons olive oil
1 large yellow onion, diced
1 large garlic clove, minced
2 pounds butternut squash, peeled and cubed
1 medium carrot, peeled and diced
1 quart vegetable broth
1 - 15-oz can fire roasted diced tomatoes
1/3 cup uncooked quinoa
1 tablespoon sriracha
2 teaspoons ground cumin
1 teaspoon smoked paprika
½ teaspoon dried thyme
1 ½ teaspoons sea salt
½ teaspoon ground black pepper

1. Turn slow cooker on high. When hot, add olive oil, onions, and garlic. Cook for 3-5 minutes until onions soften.
2. Add remaining ingredients. Stir to combine.
3. Cover and cook for 4 hours on high or until the butternut squash is tender and cooked through.
4. Adjust seasonings to taste and serve.

Here's a great recipe for Blistered Shish*to Peppers using Bachan's Japanese Barbeque Sauce found at Rainbow Blossom!

Shish*to peppers broke into the American fine dining scene in the early 2000’s and have since become a fairly common appetizer. Hailing from Japan, these peppers have a nutty flavor when charred that is unique and delicious. They are generally quite mild, but about 1 in 20 peppers will be jalapeno level spicy.

Ingredients:
Shish*to Peppers
Dipping Sauce:
1/4 cup Bachan's Japanese Barbeque Sauce
1 scallion, sliced thinly
1-2 drops of sesame oil
1-3 tsp toasted sesame seeds

Directions:
1. Heat a dry cast iron pan on medium-high heat.
2. If you prick the peppers before blistering, the peppers won’t steam as much and will hold their shape better.
3. Add whole peppers in a single layer, flipping occasionally, and cook until all sides are blistered (approximately 5 minutes).
4. Remove from the heat and toss with quality olive oil and kosher salt.
5. Combine all the sauce ingredients in a small bowl for dipping.

Join us as we make Truvani Matcha Ice Cream

Got a sweet tooth, but don’t want to sacrifice nutrition or protein? This matcha ice cream is so rich and creamy and decadent, you would never know it was a vegan recipe or actually good for you. It’s also a great way to introduce your kids to healthy alternatives and is a great thing to treat yourself with as well!

Serves 4
Prep Time: 5 minutes + at least 2 hours for freezing

INGREDIENTS
1 can full-fat coconut milk
3 frozen bananas or ½ cup coconut sugar
1 tsp vanilla extract
2 tbsp maple syrup
1 scoop Truvani Matcha Protein Powder
Pinch of sea salt

DIRECTIONS
Place all of the ingredients in a blender and blend well to combine.
Pour the mixture into an ice cream maker and let mix for at least 20 minutes. If you do not have an ice cream maker, place the mixture in a glass bowl and put in the freezer. Mix the ice cream every 30 minutes for the first 2 hours so that ice crystals do not form. Serve with your favorite toppings. Enjoy!

Note: If you would like to make ice cream sandwiches pair the ice cream with your favorite chocolate cookie for a healthy and cool summer treat!
