Whats Dad Eating Proving healthy food doesn’t have to suck

09/20/2026

Sunday dinner just got a glow-up. 🍛

This Chicken Tikka Masala packs ~40g of protein per serving, lands around 420 calories, and the kids ate it without a single negotiation. Honestly that's the only macro that matters in this house.

The cheat code: Greek yogurt in the marinade and light coconut milk in the sauce instead of the heavy stuff. Same creamy, restaurant-style tikka masala — none of the food coma after.

Full recipe:
For the chicken: 1.5 lbs cubed chicken breast, 2 tsp garam masala, 1 tsp paprika, 1 tsp turmeric, salt, and 1/2 cup fat-free Greek yogurt. Coat it all and let it sit at least 15 minutes.
Sear the chicken in a hot oiled skillet until browned, then get it out of the pan. In the same pan, sauté 1 diced onion with a tablespoon each of minced ginger and garlic, then stir in 2 tbsp tomato paste. Pour in 1 cup light coconut milk, return the chicken, and simmer 5 minutes. Serve over jasmine rice.

Meal prep friendly, family approved, and proof that healthy food doesn't have to suck.

I eyeball portions like a dad, not a scientist, so treat the macros as estimates. Who's making this one this week? 👇

Chicken Caesar Pasta Salad

This salad is the ultimate summer macro hack. It’s packed with protein, loaded with fresh greens, has absolutely zero added sugar, and actually fills you up.

My mom even grew the romaine in her garden, so you know it’s elite. 🌱💪

Ingredients

- Chicken: 2 large chicken breasts (seasoned with salt, black pepper, and garlic powder)

- Pasta: 8 oz rotini or your favorite short pasta shape (cooked and cooled)

- Lettuce: 1 large head of fresh romaine lettuce, chopped

- Dressing: 1/2 cup to 3/4 cup low-sugar or zero-sugar Creamy Caesar dressing

- Toppings: 1 cup croutons, 1/2 cup shredded parmesan cheese

Instructions

1. Grill & Cool the Chicken: Season the chicken breasts generously with salt, pepper, and garlic powder. Grill until the internal temperature hits 165°F. Let it cool completely (nobody wants hot chicken wilting the lettuce!), then dice into bite-sized pieces.

2. Prep the Base: In a large mixing bowl, toss in your diced, cooled chicken and the chopped fresh romaine lettuce.

3. Add the Pasta: Dump in the cooked and cooled pasta.

4. Dress & Toss: Pour the creamy Caesar dressing over the top. Use tongs to mix everything until evenly coated.

5. The Finishing Touches: Top the salad with a generous handful of croutons and shredded parmesan cheese. Toss lightly one final time right before serving so the croutons stay crunchy.

I’m leaning fully into viral recipes this year. Here are five reasons why I’m all in on this trend:

1. Eating is supposed to be a joy. That means eating food that actually tastes good. There are plenty of viral recipes out there that are legitimately delicious and I’m tired of people pretending they aren’t.

2. Inspiration is the hardest part of staying on track. The biggest reason people fall off is because they get bored. I’ve never been the guy who can eat the same meal every single day. Viral recipes are basically a cheat code for a great new meal to try.

3. They’re just fun. You get to be part of the trend without having to film yourself doing a viral dance. I think we can all agree that’s a win for everyone 😂

4. They usually solve a problem. Most things go viral because they’re either faster, easier, or a smarter way to hit your goals. If it’s high protein and takes ten minutes, I’m in.

5. The organization is the only catch. I spend way too much time scrolling back through my saved folders to find that one video from three weeks ago. It’s a massive pain and I’m definitely looking for a better way to fix that for all of us.
Keep an eye out because I might have a solution for that coming soon. 👀

What’s on my plate
- ground beef
- cottage cheese
- sweet potato fries
- hot honey
- avocado
