Rosemary Roasted Cornish Game Hen

You do not have to miss out on the Holiday food just because of Diabetes.
Prepare Rosemary Roasted Cornish Game Hen and "wow" your guests! Only 205 Calories and 2 Carbohydrates! The American Diaetes Assiciation has all kinds of great Diabetes recipes for this Holiday season.

This Recipe Serves 4

Ingredients

Cooking spray
1 tablespoon olive oil
1 lemon, zested and juiced
1 tablespoon Dijon mustard
2 cloves garlic, minced or grated
½ teaspoon salt (optional)
¼ teaspoon ground black pepper
1 tablespoon finely minced fresh rosemary
2 Cornish game hens (about 1 1/4 pounds each)
4 sprigs fresh rosemary

Instructions

Preheat the oven to 350 degrees F. Coat a large glass or metal baking dish with cooking spray.
In a small bowl, whisk together the olive oil, lemon zest, lemon juice, Dijon mustard, garlic, salt (optional), black pepper, and minced rosemary.
Cut each game hen in half lengthwise and remove the skin. Pat dry with a paper towel. Lay 4 rosemary sprigs on the bottom of the baking dish.
Arrange the hens breast side up in the baking dish (one half on top of each of the rosemary sprigs). Brush each hen generously with marinade (using all of the marinade).
Bake for 30–35 minutes or until the internal temperature reaches 165 degrees F.

Boar’s Head Roasted Red Pepper & Feta Cheese Squares

Are you looking for a great Diabetes Friendly appetizer this Thanksgiving? Try Boar's Head Roasted Red Pepper and Feta Cheese Squares!
Ingredients
1 Tbsp extra virgin olive oil
1 sweet onion
2 cloves garlic
2 cups liquid egg substitute
3 oz roasted bell peppers, drained and diced
1/4 tsp salt
1/8 tsp ground black pepper
5 basil leaves, chopped
1/3 cup chopped parsley
3 oz Boar’s Head Feta Cheese Crumbles®
Instructions
1. Preheat the oven to 375 degrees F.
2. Crush or chop the garlic; set aside.
3. Heat the oil in a nonstick, ovenproof skillet over medium heat.
4. Cook the onions until soft and lightly browned.
5. Add the garlic to the onions, stir to mix, and set the skillet aside.
6. In a medium bowl, mix the egg substitute, roasted bell peppers, salt, pepper, basil, and parsley. Pour the egg mixture over the garlic-onion mixture. [If your skillet is not ovenproof, spray a baking pan or soufflé dish with cooking spray, place the garlic-onion mixture in the dish, and pour the egg mixture over the vegetables.]
7. Sprinkle the feta cheese crumbles over the top.
8. Bake for 18 to 20 minutes or until the center is set.
9. Use a knife to gently loosen the frittata (that’s what the cooked eggs and vegetables are now called) from the pan or dish.
10. Slide the frittata from the skillet onto a plate or cover the baking dish with a plate and invert the dish to remove the frittata.
11. Cut the frittata into 10 wedges or, if made in a square or rectangular dish, 20 squares. Enjoy for breakfast or as an appetizer.

Serves 10, 98 Cal, and ONLY 4 g Carbs (per wedge)!

Zucchini Lasagna Skillet

If you are a diabetic I KNOW you miss your lasagna!
With a few quick substitutes you can satisfy that craving with only 11 g of Carbs and 205 Calories!

Ingredients
4 cups water
2 medium zucchinis, shaved into strips with a peeler, omitting center seeds
1 tsp olive oil
8 oz lean ground turkey
1 Tbsp Italian seasoning
3 cloves garlic, minced or grated
1/2 (24.5 oz) jar reduced-sodium marinara sauce
1/2 cup skim ricotta cheese
3 Tbsp freshly shredded parmesan cheese
Instructions
Bring the water to a boil in a large sauce pan over high heat. Add the zucchini and boil for two minutes. Drain well and set the cooked zucchini aside in a colander to continue draining.
In a large sauté pan, add the olive oil over medium heat. Add the turkey, Italian seasoning and garlic and sauté, breaking up the turkey to crumble it. Sauté for 5-6 minutes or until the turkey is just cooked through.
Add the entire jar of marinara sauce and bring to a simmer. Simmer for two minutes, then stir in the drained zucchini. Continue to simmer for 2 more minutes.
Stir in both cheeses and stir until melted.
Choices/Exchanges: 2 Nonstarchy Vegetable, 2 Lean Protein, 1 1/2 Fat

Nothing is better than the aroma and flavor of a fresh muffin to start the day. Make it even better by making the muffins with Pure Via® to help reduce the calories – no guilt here!

Yield: 12 servings
Ingredients
1 cup (250mL) all-purpose flour
1 cup (250mL) whole wheat flour
2 teaspoons baking powder
2 teaspoons (10mL) baking powder
1/2 teaspoon (2mL) baking soda
1/4 (1mL) teaspoon salt
20 packets Pure Via® sweetener
1 tablespoon (15mL) grated orange peel
1 cup (250mL) buttermilk
1/4 cup (50mL) vegetable oil
2 eggs
1-1/2 cups (375mL) fresh OR frozen blueberries
Preparation
Preheat oven to 400° F. Line 12 muffin cups (2-1/2 inch diameter) with paper baking cups; set aside.
Combine dry ingredients and orange peel in a large bowl. Stir in buttermilk, oil and eggs. Mix just until all ingredients are moistened. Fold in blueberries.
Divide mixture evenly between muffins cups. Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean. Cool in pan 2 minutes. Carefully remove from pan and serve warm.

Are you ready for another Diabetes friendly recipe? Today I will share with you "Shrimp Mushroom Quesadillas and Black Bean and Tomato Salad"

SHRIMP MUSHROOM QUESADILLAS
1/4 lb. sliced baby bello mushrooms (1 1/2 cups)
2 c. washed ready to eat spinach
salt and pepper
olive oil spray
(4) 6" corn tortillas
10 oz. cooked medium peeled shrimp
6 Tbsp. shredded, reduced fat cheddar cheese

1. Heat nonstick skillet over medium-high heat. Add the mushrooms, and sauté 2 minutes or until mushrooms are soft. Stir in spinach until it wilts, about 1 min. Drain, transfer to a bowl, and add salt and pepper to taste.
2. spray heated skillet (on med-high heat) with olive oil spray. (hint: you can use two skillets to speed the cooking time)
3. Add tortilla, and heat about 1 min. or until bottom is golden brown
4. Turn over and spoon 1/4 of the mushroom/ spinach mixture over half of the tortilla.
5. Place 1/4 of the shrimp on top of each tortilla, and sprinkle 1 1/2 tbsp. of the shredded cheese over the shrimp.
6. Gently fold in half, cover with a lid, and sauté 1 min. Turn over, cover, and sauté 1 min or until cheese melts.
7. Remove and place onto dinner plates.
8. Repeat the process for remaining tortillas.
(2 servings 365 cal., 29.4 carbs)

BLACK BEAN AND TOMATO SALAD
3/4 c. drained, rinsed canned black beans
1 c. fresh diced tomatoes
2 Tbsp. reduced fat oil and vinegar dressing
salt and freshly ground pepper.
1. Pace black beans and tomatoes in a bowl
2. Add dressing, salt and pepper to taste. Toss well. Serve.
(2 servings, 112 cal., 19.5 carbs.)

If you prefer you can cook your quesadillas with the balck bean salad inside!

Are you ready for another amazing diabetes friendly recipe?
That's right, it's Tuesday and we are going to share with you HOT & SPICY STIR-FRY BEEF
1/4 cup tomato paste
1/2 tsp hot pepper sauce
1/2 c water
2 tsp ground ginger
Olive oil spray
1/2 c fresh diced onion
3 tsp minced garlic
1/2 c sliced lemon grass, bulb end only (or lemon rind from 1 lemon)
6 oz beef tenderloin steak, cut into 1/2 inch by 2 inch strips

1. mix tomato paste, hot pepper sauce, water, and ginger together. Set aside.
2. heat wok or skillet over high heat, spray with olive oil
3. add onion, garlic, and lemongrass (or lemon rind), and stir-fry one min.
4. add meat, stir fry 2 min.
5. add sauce, and mix for a few seconds. Transfer to plate, and sprinkle with walnuts. salt/pepper to taste
(292 cal, 20 carbs)

CHINESE NOODLES AND SNOW PEAS
3 oz Chinese noodles
2 c frozen snow peas, thawed
1 tsp sesame oil
salt and pepper

1. Bring a large saucepan with water to a boil. Add noodles; cook 1 min. Add snow peas. Drain. Add salt/pepper to taste.
2. When meat is removed from wok, add sesame oil to wok, then the noodles and snow peas. Stir-fry 1 min. Transfer to dinner plate, serve beef on top.
(204 cal, 36.7 carbs)

ROAST BEEF CHOPPED SALAD

1 c. celery sliced
1 c. green bell pepper, cut into 1/2 inch pieces
1 c. carrots cut into 1/2 inch pieces
4 c. romaine lettuce
6 oz deli roast beef, thick sliced into 1/2 inch cubes
2 whole grain rolls
3 Tbsp. reduced fat oil and vinegar dressing
2 scallions, sliced
2 tsp. olive oil

1. Preheat oven to 350 degrees F.
2. Prepare all of the salad vegetables and roast beef.
3. Place rolls in oven to warm, 5 min.
4. Place celery, green peppers, carrots, and lettuce in a medium bowl. Add dressing and toss. Add roast beef and scallions, and toss again.
5. Remove bread from oven, drizzle with olive oil, and serve with the salad.
(Cal 407, Carbs 44.2 g)
