Who doesn't love a sheet pan meal?

Recipe
5-6 chicken thighs
3 teaspoons Italian seasoning
1.5 teaspoons garlic powder
1 teaspoon onion powder
3 carrots, peeled and cut into large slices
2 pounds potatoes, cut into large pieces
1 large white onion, peeled and cut into large chunks
Olive oil (I use garlic olive oil for extra flavor)
Salt
Black pepper

Instructions
1. Preheat oven to 400°F. Line a sheet pan with foil or parchment.
2. In a small bowl, mix the Italian seasoning, garlic, and onion powder or just estimate and sprinkle over the vegetables😊
3. Spread the carrots, potatoes, and onion on the pan. Drizzle with about 2 tbsp olive oil, season with salt and pepper, and sprinkle on about 2 tsp of the seasoning mix.
In a large bowl, toss the chicken thighs with about 2 tbsp olive oil, salt, pepper, and the rest of the seasoning.
Lay the chicken on top of the vegetables. Cook 50–55 minutes, until the chicken is browned.

What do you do after a race to support recovery?

Comment "BLOG" for my 6 step guide to faster recovery

The thing that helps me feel the best? A hobble-run. 1-2 days post-race, I'll go for a run-walk (more like a hobble) and it helps shake the majority of the soreness out! After that, there is no running for 1-2 weeks.

I go through exactly what to eat and focus on during the recovery and the amount of carbs might surprise you.

I said never again, but gosh do I want a redemption of this course

It's always funny to me how you can run relatively normal but as soon as the race is over the hobbling starts😆
