In the Spirit of St. Patricks Day, try out this quick and healthy Corn Beef and Hash recipe๐Ÿ€

๐ˆ๐ง๐ ๐ซ๐ž๐๐ข๐ž๐ง๐ญ๐ฌ:
2 tablespoons pickling spice
1 teaspoon dry mustard
1 teaspoon kosher salt
ยฝ teaspoon ground pepper, divided
ยฝ small cabbage, cored and cut into wedges
8 small carrots, trimmed
2 cups halved baby potatoes
4 tablespoons extra-virgin olive oil, divided
2 tablespoons malt vinegar or white-wine vinegar
1 tablespoon chopped fresh dill, plus more for garnish
1 teaspoon whole-grain mustard
1 pound skirt steak, trimmed

๐ˆ๐ง๐ฌ๐ญ๐ซ๐ฎ๐œ๐ญ๐ข๐จ๐ง๐ฌ
Step 1
Preheat oven to 450 degrees F.

Step 2
Grind pickling spice in a clean spice grinder (or coffee grinder); transfer to a small bowl and combine with dry mustard, salt and 1/4 teaspoon pepper. Toss cabbage, carrots and potatoes in a large bowl with half the spice mixture and 2 tablespoons oil. Transfer to a large rimmed baking sheet. Roast, stirring once, until tender, 25 to 30 minutes.

Step 3
Meanwhile, whisk 1 tablespoon oil, vinegar, dill, mustard and the remaining 1/4 teaspoon pepper in a small bowl. Set the vinaigrette aside.

Step 4
About 10 minutes before the vegetables are done, cut steak in half crosswise (if it's one long piece) and rub with the remaining spice mixture. Heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Cook the steak, turning once, 2 to 3 minutes per side for medium-rare. Let rest on a clean cutting board for 5 minutes, then thinly slice against the grain.

Step 5
Drizzle the roasted vegetables with the vinaigrette and serve with the steak.

Serving Size: 3 oz. steak & 1 3/4 cups vegetables

Traditional pancakes are filled a plethora of simple sugars โ€“ not something youโ€™d consider healthy. In fact, eating pancakes regularly and youโ€™ll find your fitness results quickly disappear. โ€จโ€จ

However, this simple, wholesome, protein-packed pancake recipe is the exception. Reduce the carbs and sugars from flour and sugar while replacing them with protein from cottage cheese, protein powder and eggs. This means that youโ€™ll be fueling your fitness results in a seriously delicious way by enjoying a plate of these tasty pancakes!

โ€จโ€จItโ€™s a pancake that youโ€™re able to enjoy without guilt!
๐–๐ก๐š๐ญ ๐ฒ๐จ๐ฎ ๐ง๐ž๐ž๐

Serves 12
ยฝ cup Vanilla Protein Powder
ยฝ cup old fashion oats
ยฝ teaspoon baking soda
ยผ teaspoon sea salt
1 teaspoon Liquid Stevia
4 eggs
1 cup cottage cheese
ยฝ cup Unsweetened Coconut Milk (or any milk)
1 tablespoon coconut oil

๐ˆ๐ง๐ฌ๐ญ๐ซ๐ฎ๐œ๐ญ๐ข๐จ๐ง๐ฌ
1. Preheat your pancake griddle or large skillet over medium-high heat.
2. Combine all of the ingredients in a food processor. Pulse to combine until smooth.
3. Let the batter sit for 10โ€“15 minutes, if you can muster the patience, to help your pancakes bind together.
4. Use a paper towel to carefully rub coconut oil on your preheated griddle or skillet. Reduce the heat to medium. Use a 1โ„4 cup to scoop the batter onto the griddle in nice big circles. When bubbles form, flip the pancakes to cook on the other side.
5. Serve with fresh fruit and a drizzle of pure maple syrup.

LOW SUGAR SMOOTHIE BOWL

What you need
Servings: 1

ยฝ cup frozen cauliflower rice
1ยฝ inches frozen banana
1 teaspoon Peanut Butter
ยผ cup almond milk (or to fill line)
1 tablespoon unsweetened cocoa powder
1 scoop Chocolate Protein Powder

Optional Toppings
sliced almonds
fresh berries
dried fig
shredded coconutโ€‹
lilyโ€™s chocolate chips (stevia sweetened)โ€‹
pomegranate seeds (arils)
Banana

Instructions

1. Place all ingredients in a Ninja Foodi Smoothie Bowl blender or a high-speed blender and blend until smooth. Pour into bowls and garnish with your favorite toppings. Enjoy immediately!
