**Keto Deep-Dish Blueberry & Blackcurrant Swirl Crumble Cake**

* **Prep time:** 30 minutes
* **Bake time:** 60-75 minutes
* **Chill time:** 2 hours
* **Yields:** One 9-inch round deep cake (approx. 12 slices)

---

**Ingredients:**

**For the Dark Chocolate Nut Crust:**

* 1 cup blanched almond flour
* 2 tablespoons unsweetened dark cocoa powder
* 3 tablespoons unsalted butter, melted
* 2 tablespoons granulated keto sweetener (e.g., Allulose or a Monk Fruit/Erythritol blend)

**For the Concentrated Berry Swirl:**

* 1 cup fresh or frozen blueberries
* 1/2 cup fresh or frozen blackcurrants (if unavailable, substitute with more blueberries)
* 2 tablespoons water
* 2 tablespoons granulated keto sweetener (to taste)

**For the Pale Cake Base (Dense Pound Cake Style):**

* 2 cups fine blanched almond flour
* 1/2 cup coconut flour
* 1 teaspoon baking powder
* 1/2 teaspoon salt
* 3/4 cup unsalted butter, softened
* 1 cup allulose or other granulated sweetener (Note: Allulose bakes up moister)
* 4 large eggs, at room temperature
* 1 teaspoon vanilla extract
* 1/2 cup heavy cream

**For the Keto Nut Crumble Topping:**

* 1.5 cups mixed nuts (e.g., pecans, walnuts, almonds), roughly chopped
* 1/4 cup coconut flour (for texture)
* 1/3 cup granulated keto sweetener
* 1/2 teaspoon cinnamon
* 1/3 cup cold unsalted butter, cubed

**For the Glaze and Garnish:**

* 1/2 cup powdered keto sweetener (confectioners' style)
* 2-3 tablespoons heavy cream (adjust for thickness)
* 1/4 teaspoon vanilla extract
* Fresh blueberries and blackcurrants (on sprigs, like in the image)

---

**Instructions:**

1. **Prep and Crust:** Preheat your oven to 350°F (175°C). Grease a 9-inch deep-dish springform pan (or a high-sided 9-inch cake pan) and line the bottom with parchment paper. In a medium bowl, combine all the crust ingredients and mix until it resembles damp sand. Press the mixture firmly and evenly into the base of the prepared pan. Bake for 10 minutes to set. Set aside to cool.
2. **Make the Berry Swirl:** While the crust bakes, combine the blueberries, blackcurrants, water, and sweetener in a small saucepan. Cook over medium heat, stirring occasionally, until the berries release their juices and the mixture thickens into a jam-like compote (about 7-10 minutes). Remove from heat and cool completely. (You can gently mash some of the larger blueberries for a more intense marble).
3. **Prepare the Cake Batter:** In a large bowl, cream the softened butter and allulose (or other sweetener) until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract. In a separate bowl, whisk together the almond flour, coconut flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the heavy cream, until just combined. The batter will be very dense.
4. **Create the Marbled Layers:** Spread about half of the dense cake batter evenly over the cooled crust. Dollop about three-quarters of the cooled berry compote over the batter. Use a skewer or butter knife to gently marble the berry swirl into the batter, careful not to overmix. Add the remaining batter, dollop the remaining berry compote on top, and marble again gently.
5. **Prepare and Add the Crumble:** In a medium bowl, combine the chopped mixed nuts, coconut flour, sweetener, and cinnamon. Add the cold cubed butter and use your fingers to rub the butter into the dry ingredients until large, distinct clumps form. Sprinkle the crumble generously over the top of the cake. Gently press a few whole fresh blueberries into the crumble if desired.
6. **Bake:** Bake for 60-75 minutes. The cake is deep, so it will take time. It is done when the top crumble is golden brown and a skewer inserted deep into the center comes out clean (a small amount of compote residue is okay, but batter should be cooked).
7. **Cool and Glaze:** Allow the cake to cool in the pan for 15-20 minutes, then carefully remove the springform ring. Let it cool completely on a wire rack. In a small bowl, whisk together the powdered sweetener, 2 tablespoons heavy cream, and vanilla until smooth and drizzling consistency. Add more cream as needed. Drizzle the glaze artfully over the cooled cake topping.
8. **Final Chill and Garnish:** For the cleanest, most defined layers, chill the cake in the refrigerator for at least 2 hours before slicing. This is crucial for the presentation. Before serving, garnish generously with fresh blueberries and clusters of blackcurrants (with stems) as seen in the image.

Enjoy your beautiful, keto-friendly dessert!

Finding the right & best blender doesn’t have to mean buying the most expensive one.

Shopping for a blender can feel overwhelming. One model promises more power, another includes extra attachments, while a premium brand might cost four times as much as a basic option. The truth is, the “best” blender isn’t always the most expensive—it’s the one that fits the way you cook.
