Easyyy dinners that never disappoint🙂‍↕️Starting with these handheld Sloppy Joes!

Ingredients:
* 1 large yellow onion
* 2 small red bell peppers
* 6 large cloves garlic, minced
* 4 tbsp olive oil, divided
* 1 3/4 tsp kosher salt, divided
* 2 1/2 pounds lean ground beef
* 2 cans tomato sauce
* 3/4 cup ketchup
* 2 tbsp apple c***r vinegar
* 2 tbsp packed light brown sugar
* 2 tsp Worcestershire sauce
* 8 to 12 ounces shredded Mexican blend cheese
* 12 slider buns (I use Hawaiian)
* unsalted butter, brushed on top of the buns
* poppy seeds, for the top of the buns

Instructions:
1. Preheat oven 375f. Dice 1 large yellow onion and 2 small red bell peppers and mince garlic cloves.
2. Heat olive oil over medium-high heat - use a large pan or pot. Add the onion and bell peppers, and season. Cook until the onion is translucent and the peppers are just tender. Add garlic and cook, stirring often, until fragrant and now transfer into a 9x13-inch baking dish.
3. Return the pot to high heat and add your ground beef + season with the salt. Let cook. Meanwhile, add tomato sauce, ketchup, apple c***r vinegar, packed light brown sugar, and Worcestershire sauce in a medium bowl. Add the tomato sauce mixture and stir to combine. Reduce the heat to medium-high and bring to a simmer, stirring frequently. Let thicken for about 5 minutes.
4. Transfer into the baking dish and stir to combine with the onions and peppers. Sprinkle the cheese evenly and arrange 12 slider buns or dinner rolls on top of the sloppy joe mixture in a single layer.
5. Lather butter on top of each bun and then sprinkle poppy seeds. Pop into the oven for about 10-15 minutes - remove and enjoy!

Save this one for your next busy weeknight 🍽️

I’ve learned that organization is one of the keys to maintaining a sense of calm in motherhood. Life runs a little smoother when everything has a designated place. Bonus points when it’s all out of sight.

These simple upgrades have made a noticeable difference in how our home functions. Just as importantly, they’ve helped teach my kids that everything has a home—and putting things back where they belong is part of the process.

disclaimer: our house is only ever truly organized when the kids aren’t in it or once they’re asleep and I can restore some semblance of order, hah. We’re teaching good habits, not performing miracles🤪 So, don’t get the wrong impression from these photos.

Save this for your next organizing project!
