This will be our 17th maple syrup season. I worked several years working for Snows Sugarbush before i could even drive, which is where I got bit by the syrup bug.

In 2007 me and several Buddies while his parents were gone on vacation decided to make syrup on the wood stove in the living room and the gas stove in the kitchen and we ended up turning the whole kitchen into a sticky hot mess which led to the wallpaper falling off of the walls and running the propane out....

I missed 2019 season due to the birth of our beautiful baby girl!

This is also the 13th season doing it together with my beautiful wife!!

Only a few know that one of our first dates was me taking her to look at some maple trees for tapping LOL!

This photo below is our first batch of syrup we made with our first evaporator we bought in 2017. Hard to believe it was already 8 years ago...

We had some big changes this last 2024 season to our syrup operation with the addition of our new 3x12 Leader Evaporator and all our taps 100% on tubing systems!

With no changes going to 2025 season for the first time ever!! We are way ahead of the game this year and are ready to tap as soon as the weather changes! It is very nice, all the hard work that we have done to get to this point is finally paying off to take a bit of a breather and get back to having some fun with making syrup!

Maple Glazed Venison Backstrap or Tenderloin 🍁🦌

Ingredients:

1-2 lbs venison tenderloin
1/4 cup pure maple syrup
2 tbsp soy sauce
1 tbsp Dijon mustard
2 cloves garlic, minced
1 tsp fresh rosemary, chopped
Salt and pepper to taste

Directions:

1️⃣ Prepare the Marinade: In a bowl, whisk together maple syrup, soy sauce, Dijon mustard, minced garlic, chopped rosemary, salt, and pepper.

2️⃣ Marinate the Tenderloin: Place the venison tenderloin in a resealable plastic bag or shallow dish. Pour the marinade over the meat, ensuring it’s well coated. Refrigerate for at least 2 hours, preferably overnight for deeper flavor.

3️⃣ Preheat the Oven: Preheat your oven to 400°F (200°C).

4️⃣ Sear the Tenderloin: In an oven-safe skillet, heat a bit of olive oil over medium-high heat. Remove the tenderloin from the marinade (reserve the marinade) and sear for 2-3 minutes on each side until browned.

5️⃣ Bake: Pour the reserved marinade over the tenderloin and transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.
