🛒 Ingredients
For the Crispy Glazed Tofu:
1 block (14 oz) extra-firm tofu, pressed and torn or cubed into bite-sized pieces
1.5 tbsp cornstarch (for maximum crispiness)
1 tbsp neutral cooking oil (or sesame oil)
For the Sticky Glaze:
2.5 tbsp soy sauce or tamari
1.5 tbsp maple syrup or agave nectar
1 tbsp rice vinegar
2 cloves garlic, finely minced
1/2 tsp fresh ginger, grated
1 tsp sriracha or chili flakes (optional, for heat)
For the Bowl Base & Toppings:
2 cups cooked brown rice (or white rice)
1 cup shelled edamame, steamed
1/2 English cucumber, diced
2 green onions (scallions), thinly sliced
1 tbsp black sesame seeds (for garnish)
Variation Tip: You can also use rehydrated, crispy pan-fried soy curls in place of tofu for an equally amazing protein-packed twist!
🥣 Instructions
Crisp the Tofu: Pat the pressed extra-firm tofu dry and tear or cut it into bite-sized pieces. Toss the tofu in a bowl with cornstarch until evenly coated. Heat oil in a skillet over medium-high heat and pan-fry the tofu for 8–10 minutes, flipping occasionally until golden and crispy on all sides.
Make the Sticky Glaze: In a small bowl, whisk together the soy sauce, maple syrup, rice vinegar, minced garlic, grated ginger, and optional sriracha.
Glaze the Tofu: Reduce the heat to medium-low and pour the glaze over the crispy tofu in the pan. Toss continuously for 1–2 minutes until the sauce thickens and coats every piece in a glossy, sticky glaze. Remove from heat.
Assemble the Bowls: Divide the warm brown rice between two bowls. Top with the sticky glazed tofu, steamed edamame, and diced fresh cucumber.
Garnish & Serve: Sprinkle generously with sliced green onions and black sesame seeds. Serve warm and enjoy!
