You asked and here it is, CHICKPEA ARTICHOKE STEW 🍲
Delicious and highly nutritious, rich in protein and fiber, extremely filling and satisfying, excellent for gut health and digestion, curbing unwanted cravings. 🫕
INGREDIENTS:
I small onion or 2 shallots, chopped
1 celery stick, chopped
1 large carrot, chopped
1 jalapeño, chopped
1 clove of garlic, chopped
2 tbsp of tomato paste
2 tomatoes, chopped
Jar of artichokes, chopped
Small can of chickpeas
Small can of white beans
Small can of pinto beans
1 cup of water
1 cup of baby spinach
Herbs.
1 tsp of Chilli powder
1 tsp of dry and fresh oregano, chopped
1 tsp of dry and fresh basil, chopped
1 Bay leaf
Salt and black pepper
INSTRUCTIONS:
🫕In a large pan, sauté onion; celery, carrots, jalapeño
🫕Add garlic, sauté for another 30 seconds
🫕Add chilli powder, dry oregano, dry basil, stir
🫕Add tomato paste, stir
🫕Add 1/4 cup of water, stir
🫕Add tomatoes, artichokes, chickpeas, white beans, pinto beans , bay leaf
🫕Add cup of water, stir well
🫕Bring to a boil, then low simmer for 30-40min
🫕Once ready, remove from heat
🫕Add spinach, fresh basil, fresh oregano, stir well
🫕Cover and let it sit for another 5-10min so the spinach cooks in the heat
🫕Add salt and black pepper, taste and adjust seasoning.
🫕Serve over a spread of quinoa
🫕ENJOY!

No one likes to eat mushy quinoa. Let’s make the most fluffy and flavourful quinoa that you will want to add to basically everything and everything.
💦 I always start off by rinsing my quinoa for a few seconds with filtered water to remove saponin, natural coating that may give it a bitter taste at times.
🧂I then add the rinsed quinoa to the pot and for every cup of quinoa, I add one cup of filtered water and one cup of my gut healing broth or vegetable broth, as well as a pinch of salt.
🫕I then bring it to a boil and then simmer at medium heat until majority of the water has evaporated.
🥣At this point, I drained the quinoa in a strainer and let it cool for a bit.
🥄To fluff them up, I then toss the quinoa in the strainer or you may also use a spoon to make them super fluffy so they don’t stick together.
Quinoa offers:
🤎Vitamin B1 (Thiamine)
🤎Vitamin B2 (Riboflavin)
🤎Vitamin B3 (Niacin)
🤎Vitamin B5 (Pantothenic Acid)
🤎Vitamin B6 (Pyridoxine)

It is time to prepare another incredible gut healing broth. With this broth nothing in my household goes to waste.
I freeze all my scraps on a daily basis during meal preps and turn them into a delicious healing vegetable broth.
Simply add filtered water, let it come to a boil, then simmer at low temperature for at least 2-3 hours.
The combination of all these flavours is so satisfying. This broth is so soothing and healing for:
🧡the gut
🧡the gut lining
🧡the digestive tract
There is a vital connection between gut health and immune health. The gut houses a community of microbiome that is a reflection of our overall health.
I’m also adding Himalayan salt for additional minerals as well as cayenne pepper that will dilate blood vessels and improve blood circulation, delivering oxygen and nutrients more effectively throughout the body.
We love drinking this broth as is, specially in the evening by just simply warming it up. I also love adding my home made broth to soups, stews and so on…..
This healing broth has become stable in our home.
