Avocado and Cannellini Bean Salad - Delicious and Nutritious 😊

Ingredients:
- 1 medium avocado, mashed to a paste
- 1 cup romaine lettuce or baby spinach, shredded
- 1 tablespoon balsamic vinaigrette
- 1/4 cup cannellini beans
- 5 grape tomatoes
- 1 teaspoon Italian seasoning

Preparation:
Throw all of the ingredients together in a container. Measure out the dressing and place in a plastic baggie. When ready to eat pour in the dressing, shake and enjoy!

Easy Berry French Toast - a great way to start your day!

Ingredients:
- 6 eggs
- 1 1/2 cups milk
- 1 packet vanilla sugar
- 8 slices whole wheat bread
- 4 tbsp butter
- 2 cups mixed berries
- 1/2 cup maple syrup

Preparation:
Beat eggs.

Add milk and vanilla sugar. Dip the bread into the egg mixture one slice at a time, lightly pressing the slices into the egg mixture. Turn to coat both sides evenly. Melt 1 tbsp of butter in a large skillet over medium heat.

Add 2-3 slices to the skillet (depending on the size of your bread and your skillet).Fry the bread until browned on both sides. Keep warm in the oven while you finish the other slices, adding butter to the pan as needed .Top with fresh or heated frozen berries (I heat frozen berries gently in a saucepan while I make the French toast).

Serve with maple syrup.

Grilled Ham and Swiss Sandwich - Simple and delicious 🙂

Ingredients:
- 2 pats of butter
- 3 pieces thin sliced ham
- 2 slices swiss cheese
- 2 slices white bread

Preparation:
Melt butter in skillet. Stack sandwich like so: bread, ham, ham, ham, swiss, bread.

Place sandwich in skillet, let brown. Adjust heat as needed.

Remove the sandwich briefly from the skillet, add the other piece of butter and let it melt. Flip sandwich over and brown. Cook until cheese is melted. Eat hot.

Strawberry Cobbler - Delicious 😋

Ingredients:
- 4 cups strawberries
- 1 cup all purpose flour
- 1 cup white sugar
- 1/2 cup butter (unsalted)
- 2 tbsp lemon juice
- 1 tbsp brown sugar
- 1/2 tsp cinnamon
- 1/2 tsp salt

Preparation:
Heat the oven to 375 degrees Fahrenheit.

Combine flour, salt, white sugar, and egg. Blend in a mixer until you have a coarse, crumbly mixture.

Prepare an 8 x 8 baking dish. Cover the bottom with sliced strawberries.

Top the strawberries with the flour mixture.

Drizzle the melted butter over the top of the mixture.

Sprinkle the top with brown sugar and cinnamon.

Bake in the oven for 35 minutes.

Serve warm.

Beef Lo Mein Noodles - Yummy 🙂

Ingredients:
- 8 ounces dried Chinese egg noodles or soba (buckwheat) noodles
- 3/4 pound flank steak, trimmed of any fat and cut into thin strips
- 1 tablespoon oyster sauce
- 1/2 cup chicken stock
- 2 tablespoons soy sauce
- 2 teaspoons sesame oil
- 3 tablespoons vegetable oil
- 2 teaspoons garlic, minced
- 2 teaspoon ginger, minced
- 1/4 cup green onions, chopped

Preparation:
Drop noodles into a large quantity of boiling water and cook 3-5 minutes, until barely tender to the bite.

Drain, rinse with cold water and reserve.

Combine the beef and oyster sauce in a bowl; stir to coat.

Let stand for 10 minutes.

In another bowl, combine the chicken broth, soy sauce and sesame oil. Set aside.

Heat a wok over high heat. When hot, add the vegetable oil, swirling to coat the sides.

Add the garlic, ginger, and green onions and cook, stirring until fragrant, about 30 seconds.

Add the beef and cook, stirring constantly, about 1 minute.

Add the sauce and noodles.

Gently toss until heated through and sauce has thickened.

Serve immediately.

Corn Muffins With Fresh Corn 🌽

Ingredients:
- 2 cups self-rising flour
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 2 tablespoons chopped fresh sage
- 1 cup grated mozzarella
- 1/2 cup grated cheddar
- 2 ears fresh corn removed from cob
- 1/4 cup (½ stick) butter
- 1 cup buttermilk
- 2 eggs

Preparation:
In a large mixing bowl combine flour, salt, garlic powder, sage, mozzarella, cheddar and corn and mix well with wooden spoon.

In a small mixing bowl melt butter in microwave then add buttermilk and eggs and beat with a whisk until well mixed.

Pour the liquid into the dry ingredients and stir 15-18 times JUST until ingredients are moistened. Do not over mix.

Use an ice cream scoop to measure out and fill the muffin tins (which you should coat with non stick spray) full.

Bake in a pre-heated 400 degree oven for 25 minutes.

Strawberry Pretzel Salad 😃

Ingredients:
- 1 cup arugula
- 1/2 avocado, cubed
- 6 slices bacon
- 3 tablespoons balsamic vinegar
- 1/4 cucumber, sliced and halved
- 1/4 cup flax seed oil
- 2 cups mixed spring greens
- pepper
- 1/2 cup pretzels, crushed
- Salt
- 1/2 cup strawberries, sliced
- 2 tablespoons whole grain mustard

Preparation:
Preheat oven to 300. Arrange bacon on a baking sheet lined with tin foil.

Bake for thirty minutes turning once. Set aside and let cool. In a small bowl combine flax seed oil, balsamic vinegar, whole grain mustard, and salt and pepper. Set aside.

Place strawberries, cucumber, mixed greens, arugula and bacon in a large salad bowl and toss lightly to combine.

Add the dressing and toss to coat. Divide the salad amongst four plates and serve topped with avocado and crushed pretzels.

Tuna Avocado Salad - Yummy! 😊

Ingredients:
- 1 large avocado, diced
- 1 cup canned tuna, roughly chopped
- 1 medium tomato, chopped
- 1 large onion, chopped
- 1-2 tbsp mayonnaise
- 2 tbsp lemon juice
- 1 tbsp celery, chopped
- ¼ tsp black pepper
- 3 lettuce leaves
- salt to taste

Preparation:
In a bowl, mash the avocado and the canned, drained tuna with a fork.

Add the chopped tomato, onion, and celery along with the lemon juice, mayonnaise, and salt. Mix well.

Add the chopped lettuce leaves to the mixture and place the salad in refrigerator to chill.

Serve chilled with chips or crackers.

Cauliflower, Brown Rice, and Vegetable Fried Rice

Ingredients:
- 2 cups cooked broccoli, chopped small
- 1 head of cauliflower, raw
- 1 tbsp. coconut oil or butter
- 3 cups of cooked brown rice, cold
- 5 cloves of garlic, chopped
- 1 tbsp. grapeseed oil
- 3 tbsp. reduced-sodium soy sauce
- 1 cup frozen peas
- salt, to taste
- additional chopped scallion tops for garnish
- 7 scallions, chopped (keep white/light green ends separate from dark green tops)
- 2t toasted sesame oil
- toasted sesame seeds, optional

Preparation:
Remove the cauliflower's tough stem and reserve for another use. Using a food processor, pulse cauliflower florets until they resemble rice or couscous. You should end up with around four cups of "cauliflower rice."

Heat 1tbsp. butter and 1tbsp. oil in a large skillet over medium heat.

Add garlic and the white and light green pieces of scallion. Sauté about a minute.

Add the cauliflower to the pan. Stir to coat with oil, then spread out in pan and let sit; you want it cook a bit and to caramelize (get a bit brown), which will bring out the sweetness. After a couple of minutes, stir and spread out again.

Add cold rice (it separates easily, so it won't clump up during cooking), plus the additional grapeseed and coconut oil or butter. Raise heat to medium-high. Toss everything together and, again, spread the mixture out over the whole pan and press a bit into the bottom.

Let it sit for about two minutes—so the rice can get toasted and a little crispy.

Add the peas and broccoli and stir again.

Drizzle soy sauce and toasted sesame oil over rice. Cook for another minute or so and turn off heat.

Add chopped scallion tops and toss. I like to toast some sesame seeds in a dry pan; I sprinkle these and some more raw, chopped scallion over the top of the rice for added flavor and crunch. Season to taste with salt and, if you'd like, more soy sauce. Keep in mind that if you're serving this with something salty and saucy (ie. teriyaki chicken) you may want to hold off on adding too much salt to the fried rice.

Pasta With Chicken and Broccoli - Yummy!

Ingredients:
- 1/4 cup olive oil
- 1/2 pound boneless chicken breasts cut in ½ in strips
- 1 pinch red pepper flakes
- 1/2 pound bow tie pasta or small lasagna noodles, (cooked)
- 2 garlic cloves, minced
- 1 1/2 cups broccoli florets
- 1 teaspoon dried basil leaves
- 1/4 cup white wine
- 3/4 cup chicken broth
- grated parmesan cheese

Preparation:
In a large skillet, heat oil over medium heat.

Sautee garlic for about one minute, stirring constantly. DO NOT BURN.

Add the chicken and cook until well done.

Add the broccoli and cook until crisp but tender.

Add basil; red pepper; salt and pepper to taste; wine and chicken broth. cook for about 5 minutes.

Add the cooked and drained pasta to the skillet and toss to combine.

Heat for 1 to 2 minutes

Serve.

Top with grated Parmesan cheese if desired.

Banana Bread - one of my favorites 🙂

Ingredients:
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 cup sugar
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups of all-purpose flour

Preparation:
Preheat the oven to 350 degree. In a big bowl mash the banana and add melted butter, then add the sugar, egg, and vanilla. Mix will with electric mixer for 2 minutes. Then add flour, salt and baking soda, mix just until blended. Pour batter into a buttered 8 X 3.75 inch loaf pan.

Bake for 1 hour, or until knife comes out clean. Cool on a rack before slicing. Serve and enjoy! 😊

Chicken In A Pot - a great meal for any day of the week 🙂

Ingredients:
- 1 4 ½ to 5 pounds whole chicken (organic preferred)
- 2 teaspoons of Kosher salt or 1 teaspoon of table salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon of olive oil
- 1 - about ½ cup small onion, chopped
- 1 - about ¼ cup small stalk celery, chopped
- 6 mediums garlic cloves, peeled and trimmed
- 5 smalls bay leaves
- 4 sprigs thyme or rosemary (optional)
- 1/2 lemon juice

Preparation:
Adjust oven rack to lowest position and pre-heat oven to 250 degrees.

Rinse chicken under cold water and pat dry. Season well with salt and pepper on each side.

Heat olive oil in large Dutch Oven (9 quarts), over medium heat. Do not allow oil to smoke.

Place chicken breast side down. Cook until breast is lightly browned, about 5 minutes.

Using a wooden spoon inserted into cavity of the bird and flip chicken breast side up, add remaining ingredients except lemon juice, and cook about 6 to 8 minutes.

Remove from heat.

Place a large aluminum sheet over the pot, place the lid on top. This is to ensure a tight seal, so that no vapors escape during the cooking process.

Transfer the Dutch Oven in your pre-heated oven. Cook approximately 90 minutes.

Removed pot from the oven and check the chicken internal temperature (must be at least 160 degrees).

Remove chicken and place onto a carving board, tent with foil and allow to rest about 20 minutes.

Strain chicken juices from the pot through a fine mesh.

Place the juices into a fat separator.

Pour the juices into a saucepan (discard any of the fat left in the separator), add lemon juice and any juices from the carving board. Cook approximately 5 minutes and serve!

Easy Gift Lasagna - Simple and Delicious 😊

Ingredients:
- 9 lasagna noodles – cooked according to package instructions
- 2 tbsp. olive oil
- 1 cup fresh grated Parmesan cheese
- 1 small container Ricotta Cheese
- 4 cups shredded Mozzarella Cheese
- 1 batch of “Best Ever Spaghetti Sauce” (google this great sauce)

Preparation:
Prepare sauce according to instructions and set aside. Prepare lasagna noodles according to package instructions be sure to salt the water. After drained, toss with olive oil to help prevent sticking

Cut lasagna noodles to the required length to fit in the pan. Save the smaller pieces as you may need to piece them together while making the lasagna.

Set your containers out in a row in front of you. Coat the bottom of each pan with one large spoonful of sauce. Then begin to layer noodles, spoonfuls of ricotta cheese that are sufficient to coat the noodles, several spoonfuls of sauce to make a layer over the ricotta, shredded mozzarella to cover the sauce then repeat starting with the noodles again.

Should make 2-3 layers depending on depth of pan. End with layer of Mozzarella cheese and sprinkle the parmesan over the top.

Cover with the included top and label with a sharpie marker name of dish, instructions for preparation and date of preparation. Use by date.

Pumpkin Spice Loaf - Yummy! 🙂

Ingredients:
- 1/2 tsp baking soda
- 1/2 teaspoon fresh grated cinnamon sticks
- 2 eggs
- 1 1/2 cups flour
- 1/2 teaspoon fresh grated nutmeg
- 1/2 teaspoon fresh ground cloves
- 1/2 cup olive oil
- 1/2 cup pumpkin puree
- 1/4 teaspoon salt
- 1 cup sugar

Preparation:
Preheat oven to 350 F or 180 C. Sift together flour, salt, sugar and baking soda.

Mix together the pumpkin, olive oil, eggs and spices with a whisk or a hand-held blender.

Combine with the dry ingredients, but do not mix too thoroughly. Mix until just combined.

Pour into a well-buttered (don't skimp!) loaf pan (any size is fine, as long as it is shaped like a loaf of bread).

Bake about 1 hour or until a toothpick inserted into the center comes out clean and the top is browned and crackly. After 10 minutes in the loaf pan, turn out the bread onto a cooling rack.

Lemon Meringue Pie

Ingredients:
- 1 1/2 cups sugar
- 1/8 teaspoon salt
- 1/2 cup cornstarch
- grated 1 lemon rind
- 2 cups water
- 3 egg yolks
- 1/4 cup lemon juice
- 1 teaspoon butter
- 1 baked pastry shell
- 3 egg whites
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 6 tablespoons granulated sugar
- 1 teaspoon lemon juice

Preparation:
Combine sugar, salt, cornstarch and lemon rind in sauce pan.

Add boiling water, stir to blend well. Cook slowly for about 7 minutes, stirring constantly. Color will become transparent.

Beat egg yolks, then add slowly to hot filling. Cook 5 minutes. Cool slightly and pour into baked pastry shell.

Meringue: Oven temp 325F for 15-20 minutes.

Add salt to egg whites and beat until foamy, then add baking powder. Beat until stiff, adding sugar gradually by spoonfuls beating well after each addition.

Add flavoring. Continue beating until mixture piles up fluffy and sugar is well blended and dissolved.

Spread meringue on pie, bringing it out to the pastry shell.

Spread in careless strokes, leaving surface irregular.

Bake as directed until a golden brown.

Lemon Baked Fish

Ingredients:
- 2 tablespoons butter or margarine melted
- 1 pound flounder or haddock fillets fresh or frozen
- 1 tablespoon lemon juice
- 1 teaspoon lemon rind, grated
- 1 dash pepper
- 1/8 teaspoon rosemary
- 1/2 teaspoon salt

Preparation:
Thaw frozen fish. Preheat oven to 350 F (moderate). Divide frozen fish into 6 servings.

Place in single layer in a baking pan.

Mix fat, lemon juice, lemon rind, salt, pepper, and rosemary.

Pour over fish.

Bake for 25 minutes or until fish flakes easily when tested with a fork.

Chicken Fingers - A hit with kids of all ages 🙂

Ingredients:
- 1 dash cayenne pepper
- 1 pound boneless chicken breasts
- 1 1/2 cup Cornflakes, crushed
- 1 whole egg white
- 1/4 teaspoons Italian seasoning
- 1/4 teaspoons paprika
- 2 teaspoons parmesan cheese
- 1 tablespoon water

Preparation:
Preheat oven to 400 degrees.

Line a baking sheet with parchment paper or line the bottom with foil and place a cookie rack on top and spray with cooking spray, set aside.

In a shallow bowl add egg whites and water.

In another shallow bowl add cornflakes, cheese, and seasonings, stir until combined.

Cut chicken breasts horizontally and then cut into strips. Dredge the chicken in egg whites, then dip into cornflake mixture.

Place on baking sheet. Do the same for all the chicken.

Bake for 18 minutes or until chicken is done.

Coconut Bliss Smoothie - Yummy 😊

Ingredients:
- 2 frozen bananas
- 1 whole mango
- 1 1/2 cups of coconut milk
- 3/4 of pear puree (or mango puree)
- 2 tablespoons of shredded coconut (unsweetened)
- 2 tablespoons of chia seeds

A great way to start your health day! 🙂

Berry Banana Breakfast Smoothie

Ingredients:
- ¼ cup mashed banana
- 2 tbsp graham cracker crumbs
- 1 cup soy milk
- ½ cup strawberries
- 1 container vanilla yogurt

Preparation:
Take some yogurt in your favorite flavor and add 1 container to your blender.

Add in the berries, banana, and soy milk and blend. Top your glass with a few graham cracker crumbs and serve.
