👩‍🍳 Ingredients:
8 ounces of mixed lettuce
¼ sliced red onion
3 Persian cucumbers, sliced
8 ounces thinly sliced smoked salmon
2 sliced hard boiled eggs
1 avocado sliced

👩‍🍳 Dressing:
· 3 tablespoons of extra virgin olive oil
2 tablespoons fresh lemon juice
2 tablespoons chopped dill
2 teaspoons Dijon mustard
Salt and pepper to taste

👩‍🍳 Instructions:
1. In a bowl, combine the salad dressing ingredients and whisk to combine.
2. Add mixed greens, onions, and cucumbers on top of the salad and toss to combine. Top with the thin ribbons of smoked salmon, sliced eggs, and avocado.

Baked salmon with Greek avocado sauce 💃🏼

I baked the salmon plain and simple with a bit of salt and pepper and paired it with a delicious Greek avocado sauce which made for a perfect dinner 😏

👩‍🍳 Ingredients:
2 portions of fresh salmon
1 cup diced roma tomato
1 medium avocado, diced
1/2 cup chopped red onion
1/4 cup sliced kalamata olives
1/2 cup of chopped cucumber
3 tablespoons crumbled feta cheese
2 teaspoons minced garlic, divided
2 tablespoons lemon juice, divided
1 tablespoon chopped fresh parsley (a handful)
1/2 tablespoon of oregano
2 tablespoons olive oil, divided

👩‍🍳 Preparation:
1. In a large bowl, combine the red onions, cucumber, olives, 1 teaspoon minced garlic, tomatoes, avocado, feta (mixed in 2 tablespoons then add last tablespoon on top once in plate) 1 tablespoon lemon juice, 1 tablespoon olive oil, parsley and oregano. Season with salt to taste.
2. Preheat oven to 400. Place salmon in a baking dish (skin side down) topped with 1 teaspoon minced garlic, 1 tablespoon lemon juice, 1 tablespoon olive oil, salt and pepper. Bake for 15 minutes, then broil for 5 minutes.
3. Once this is done, place the sauce on a plate and top everything with more lemon juice + sea salt. TO ENJOY!!

🍽 Avocado and lemon toast on Keto sourdough with small radishes from the garden, goat cheese, fried egg, h**p seeds and dill.

I just squeezed some lemon into the avo puree with a little salt and pepper and loaded it up with a few ingredients I had on hand. I like to add a pinch of h**p seeds for texture and extra protein!

Garlic chicken and sautéed vegetables!!

The beauty of this recipe is that it can be adjusted based on what you have on hand. Choose your protein: chicken, shrimp, steak. Then choose vegetables and follow the instructions below. I sautéed the chicken in minced garlic and the veggies in coconut aminos and combined it all for a great stir fry 🤤

INGREDIENTS:
4 organic chicken fillets
1 tablespoon olive oil
1 tablespoon minced garlic
1 large zucchini
1 cup raw broccoli
1/2 cup cherry tomatoes
1 medium onion
1 cup of raw mushrooms
3 tablespoons coconut aminos
* Serves 2

PREPARATION:
1. Cut the chicken into small pieces and cook in a hot pan with minced garlic for about 5 minutes or until they start to brown on the outside.
2. Steam vegetables until tender, then cook in a large skillet in olive oil. *Tomatoes were roasted in the oven ahead of time.
3. Once the vegetables start to brown, add the coconut aminos and sauté. Then add the cooked chicken bites and combine well. Top with sea salt and more coconut aminos to taste :) ENJOY!!!

This is easy to make with a handful of fresh and vibrant ingredients. Topped with feta, it comes together in less than 10 minutes and you can make it ahead of time.

INGREDIENTS:
½ cup halved cherry tomatoes or 3 vine tomatoes
3 Persian cucumbers, sliced
½ small red onion sliced
½ green bell pepper sliced
4 ounces black kalamata olives
8 ounces block feta cheese
Greek salad dressing
4 tablespoons of extra virgin olive oil
2 tablespoons of red wine vinegar
½ teaspoon dried oregano
¼ teaspoon salt
¼ teaspoon black pepper

INSTRUCTIONS:
1. Place tomatoes, cucumbers, red onions, green bell peppers, olives, and feta cheese in a large serving bowl.
2. Combine salad dressing ingredients in a small bowl and drizzle over salad ingredients. Toss lightly to combine, being careful not to over mix or break up the feta (alternatively, mix everything together and then add the feta blocks on top).

Delicious, colorful and hearty salad for lunch 😍

Here is everything:

1. I started with a great base of vegetables: chopped Persian cucumbers, a couple of different types of tomatoes: yellow cherry tomatoes, and red heirloom tomatoes. Here you can also go with some red onion or bell pepper. You can't go wrong there.
2. Cut up some avocado.
3. Added some fresh parsley, because nothing beats fresh herbs in salads.
4. I cooked up some prawns (again, feel free to eat shrimp, crab, or lobster here if you're feeling particularly in the mood). Just pat them dry, then drizzle a little olive oil, add some minced garlic, sea salt, pepper, and cook over medium-high heat for about a minute on each side.
5. I made a quick dressing by processing some cilantro, avocado oil mayonnaise, lemon juice, sea salt, and pepper. Give it a try and just add anything else you like based on your preference.
6. Then top it with some sesame seeds + fennel for good measure.

Simple, light, but super abundant.

Chicken breasts
cucumbers
Roma Tomatoes
shallots
Kalamata olives
feta cheese

*DRESSING*
1 cup olive oil
1/3 cup lemon juice
2-3 minced garlic
1 teaspoon oregano
1 teaspoon salt
1 teaspoon black pepper

TIP: Season the chicken with seasonings. Place in a bag and drizzle with avocado oil and marinate in the fridge for 1 hour. Then we grill it. If you don't want to grill, you can bake it at 375 degrees for 40-43 minutes. It will be delicious and then Enjoy! 💕

I have never felt so confident and in love with myself. My body is not perfect nor will it ever be and that's ok because my body conquered the hardest journey it has ever endured "lose weight" I'm so happy!
