Hi - My name is Shrimp and I’m special. 🍤

I’m packed with protein.

I taste amazing.

I cook quickly.

I’m easy to cook.

I compliment so many dishes.

I take spices very well.

I can be enjoyed hot or cold.

I’m enjoyed using a fork, chop-sticks, or fingers.

I prefer to be devoured either cuddled up in a tortilla, wrapped in bacon, or tossed with a pasta-sauce mixture but it’s not necessary as I will still taste amazing no matter how you have me.

•

Oh, one more thing: that dark line down my back... it’s just my poop—you can eat that too (told you I’m special).

Cabbage with bacon & carrots.

I used the remaining cabbage tonight to make this bacon and cabbage skillet meal. I cooked up diced bacon and then removed it from the pan. I sautĂŠed the onions and cabbage in the bacon grease and then added cooked carrots. To taste I added garlic powder, onion powder, paprika, and salt.
I decided I wanted to make it a little creamy so I added some shredded parmesan cheese and some blended cottage cheese.

Homemade Sauerkraut in the works!
We were gifted a large head of cabbage. 😍
I shredded it up and then massaged in salt (1.5 tsp per pound of cabbage) for about 10 minutes. sterilized the mason jars and then I packed in the cabbage and the brine. As per a recipe I saw, I laid down some cabbage leaves on top and weighed it down).
Now it’s resting in a dark corner for a couple weeks…I will update when we try it!

Not the most productive day, but I did get in an upper body workout this evening. 3 sets of 15 reps (with weighted bar) of bicep curls, hammer curls, tricep extensions, shoulder press, chest press, shoulder shrugs, front raises, bent over rows and arm circles.
I went so long without any workouts, so even this is progress for me. Taking it one day at a time, trying to make small changes that I will be consistent with!
Tomorrow I plan to do legs and stretching exercises 👍🏼

Active rest day today due to my schedule.
My Jeep had to be towed to the shop. Found out it might be the engine 😳 Borrowed my daughters car so I could work. Then we drove out east to get my mom and bring her with us to a wake this evening. 😢
I made an effort to be as active as I could throughout the day. 💪🏼💪🏼

Tough day today, but I have to stay consistent or I know I will fall off the wagon!
stretched out my tight hip flexor (I really think this is helping). It hurts like crazy when it’s being done, but I’m already feeling progress in different areas!
I also did an upper body workout of chest, biceps, triceps, shoulders and back (2 sets of 12/15 reps of each move).
I’m noticing small improvements in both my abilities and my confidence in my abilities. I walked up the length of my driveway (which is on a slight incline) without any issues. I was also able to fairly easily climb into the cab of a tow truck passenger side - this has been a struggle for me to enter a passenger side seat.

Today I decided to do an upper body circuit because I had a lot of hip and joint pain. I went from being mostly sedentary to getting in 4 days of straight exercise and I felt it today. I needed Motrin & Tylenol to be able to walk and function for work today.
Upper body circuit consisted of 4 sets of 12-15 reps of: biceps, triceps, shoulders, back and some core.

The turkey wraps are very similar to PFChangs lettuce wraps. Turkey, seasonings and water chestnuts - so simple. We will definitely be making these again.

The Steps of Personal Transformation

How do you find your divine? How can you give yourself over to the power of personal transformation? How can you become the butterfly you are destined to be? I certainly don’t have all the answers, but I do have a few—at least, this is a good place to start:

* Recognize what and where you already are. If we want to become something new, we first need to know who and what we already are. Take time to search within and see the truth of who you are, and the truth of who you desire to be. Be honest with yourself about your current weaknesses, and strengths, and what might be blocking you from getting where you want to be.

* Discover your life’s vision. Envision who you want to be, and what you desire to become. Let go of the tethers holding you down—the expectations, words of others, false beliefs, and especially fears. Let go and dream. (Read “Discovering Your Life’s Vision” and “Overcoming Fear”)

* Build and enter your chrysalis. Butterflies don’t just magically pop out of caterpillars. It takes work to build the cocoon of transformation, and time to enter and remain until the butterfly is ready to emerge. Take your time setting goals, understanding the process of change, and working on the change you desire. Work on your talents. Practice. Seek new learning opportunities, and share what you have to offer in small doses. Let yourself be in the “season” of life you’re in. Give yourself space to prepare.

* Don’t overstay your welcome in the chrysalis. We’re not meant to stay in the cocoon of transformation forever. Have faith. Believe in yourself. If you lack self-confidence, then work on it. Believe you are the butterfly as you prepare to emerge. (Read “The Pyramid of Self-Worth” and my new book, Who Am I Without You? –it’s all about transformation and self-confidence!)

* Emerge and be the butterfly. Believe in your beauty. Believe in your wings. Emerge, and let yourself fly.

This was my “gym” tonight. I got down on the yoga mat and did about 25-30 minutes of stretching and PT exercises (squeeze the ball between the knees, banded clamshells, glute bridge).

Trying hard to shift my mindset that I have to push through the pain and work on my strength, flexibility and mobility.

Prepped this delicious salad for the week.

Chickpeas
Pickled beets
Diced mini cucumbers
Sliced grape tomatoes (like Panera does!)
Pearled farro
Diced red onion
Feta cheese

I tossed this all together with tzatziki sauce and a little Greek dressing! (Forgot to take an after pic). This is a delicious way to get in more plant-based foods!

Homemade ranch dressing!
It takes a little more time and work, but there are so many additives in store bought salad dressing. made this dressing and it’s delicious!
1/2 cup nonfat Greek yogurt
1/2 cup nonfat cottage cheese
1.5 tsp garlic powder
1.5 tsp onion powder
1 tsp dill or herb seasoning
1 tsp dried parsley
1 stalk green onion (or dried chives)
Salt and pepper to taste
1.5 TBS lemon juice
2-3 TBS water
Blend it up and it’s ready to go. We are eating with raw veggies as snacks this week.
