✨Unalome Cacao will be at the Freo Farmers Market this Sunday!

Here’s why we taste so good!

🍫 Why Fermentation Length Matters for Ceremonial Cacao

We know fermentation from foods like kimchi, sourdough, kombucha and sauerkraut. But did you know fermentation is also a crucial part of transforming cacao?

When a cacao pod is opened, naturally occurring yeasts and bacteria feed on the sweet white pulp surrounding the seeds. Heat, acids, enzymes and microbial activity then transform the cacao.

Fermentation:

🌿 Stops the living seed from germinating
🍫 Changes compounds responsible for bitterness and astringency
✨ Creates flavour and aroma precursors that develop further during drying and roasting

So, why does fermentation length matter?
There is no single “correct” fermentation time. It depends on the cacao genetics, climate, amount of pulp, fermentation method, temperature, turning and the flavour profile the producer is aiming for.
Too little fermentation can leave cacao more bitter, astringent or vegetal.

Too much fermentation can result in overly acidic or undesirable flavours.

The goal is balance — finding what works best for that particular cacao.

What about ceremonial cacao?
“Ceremonial cacao” does not describe one standardized fermentation process. Different producers and cacao-growing communities have their own traditions.
Some cacao may be traditionally fermented, some lightly fermented, and some processed to preserve particular characteristics.

So simply knowing that cacao is “fermented” doesn't tell us how long, how or why it was fermented — or exactly how it will taste.

And fermentation is only part of the journey. Drying is another important stage that continues to shape cacao's flavour and aroma.

So when you drink ceremonial cacao, remember that you're experiencing the result of an extraordinary transformation that began inside a tropical fruit. 🌱

The length, method and care of fermentation can make a surprisingly big difference to what's in your cup. 🍫✨

After a few weeks away, I’m SO happy to be back at the Freo Farmers Market this Sunday, 30th August! 💛☕️

Come down, grab yourself a cup and enjoy the beautiful atmosphere — amazing tunes, delicious food, local goodies and plenty happening for the kids. 🌸🎶🍓👨‍👩‍👧‍👦

🌿 Make cacao your new ritual
Cacao is so much more than a hot chocolate. Traditionally, cacao has been used in ceremony and ritual as a way of creating space to slow down, connect and be present.
It’s a beautiful alternative to reaching for another coffee when you want something warm and uplifting. Cacao naturally contains theobromine, a gentler stimulant than caffeine, as well as minerals such as magnesium and antioxidant-rich cocoa compounds. It can give you that lovely feeling of having something nourishing and comforting, without making the ritual all about rushing out the door. 🤎

Think of it as a little invitation to pause, breathe and enjoy the moment.

☕️ Swap your morning coffee for cacao
🧘‍♀️ Create a few quiet minutes for yourself
🌿 Slow down and be present
🍫 Nourish your body with a beautiful whole-food cacao
💛 Turn an everyday drink into a little ritual

And if you fall in love with your cup… you can take the ritual home with you! 🙌

I only make it to the Freo Farmers Market every fortnight, so if you’re a regular cacao lover, make sure you grab one of my 500g bags to take home. That way you can enjoy your Unalome cacao throughout the week — not just on market Sunday. 🤎

Whether you’re already part of the cacao crew or you’ve never tried ceremonial cacao before, come and say hi. I’d love to make you a cup! ✨

✨ There's a reason so many people are swapping their morning coffee for ceremonial cacao... and it's not just because it tastes incredible.

Unalome Cacao isn't just a delicious morning ritual. It's packed with naturally occurring compounds that support your mood, focus and overall wellbeing.

One of its most powerful compounds is theobromine – often called the "food of the gods." Unlike caffeine, theobromine provides a smooth, sustained energy without the jitters, anxiety or afternoon crash. Instead, it gently supports your heart, opens your blood vessels, improves circulation and leaves you feeling calm, clear and energised.

Ceremonial cacao also contains compounds that help your body produce more of its own feel-good chemicals. It naturally contains tryptophan and phenylethylamine, along with anandamide – often called the "bliss molecule" because it helps promote feelings of happiness, relaxation and emotional wellbeing.

Many people tell us they feel more focused, creative, grounded and connected after just one cup.

Research also suggests that regular cacao consumption may support healthy blood pressure, cardiovascular health and even better lung function by helping relax blood vessels and airways.

It's so much more than a hot chocolate.
It's a ritual.
A moment of stillness.
A daily act of self-care.

🤎 Come and experience it for yourself!
We'll be at the Freo Farmers Market tomorrow serving our beautiful ceremonial-grade Unalome Cacao.

Come and enjoy a warm cup, ask us your questions, discover why so many people are making it part of their daily ritual, and take home one of our 500g bags so you can create the same nourishing experience every morning.

We can't wait to see you tomorrow. Come and say hello, have a chat, and experience the magic of ceremonial cacao for yourself. 🤎✨

If you've been curious about ceremonial cacao, this is the perfect opportunity to come and experience it for yourself.

Here is what one first time Unalome Cacao drinker thought below…….

More and more people are replacing their morning coffee with cacao as part of a daily ritual that nourishes both body and mind.

Instead of the spike and crash that often comes with caffeine, ceremonial cacao provides a gentle, sustained sense of energy, focus and clarity that supports you throughout the day.

Why are so many people making the switch?
🤎 Rich in naturally occurring flavonoids that support heart health and healthy circulation.

🧠 Helps increase blood flow to the brain, supporting focus, mental clarity and cognitive function.

😊 Contains compounds that support the production of serotonin and dopamine, helping to lift your mood and create a greater sense of wellbeing.

⚡ Provides smooth, long-lasting energy without the jitters or afternoon crash.

🌿 Packed with magnesium, iron and antioxidants to nourish your body from the inside out.

Our ceremonial cacao is crafted to be more than just a drink. It's an invitation to slow down, take a breath, set an intention and begin your day feeling grounded, energised and connected.
