Bulk Musli Bar making with our little foodies 🥰
Lots of you asked for the recipe after I shared these on stories, so I thought I would pop the details in a post!
Sunny (nearly 4) devours these! And you can remove the peanuts and make a nut free version that is school safe!
Time can be tight with two small kids at home, so whenever I bake - I always make bulk for the freezer! Double or triple every cake, slice, savoury muffin recipe etc that we make, so it can be to chopped up and put in the freezer.
I don’t have an exact recipe for these but can give you a rough idea of how to throw them together 😅
Grab a big bowl and throw in a collection of nuts, seeds & grains - you can literally use whatever you like or whatever you have in the pantry! No need to have any specific ingredients.! You can also make just a small batch or enough for two full trays like I did, which made around 60 small bars.
In this batch I added:
Roasted Peanuts - around 500g’s I think
Pepitas - approx 1.5 cups
Sunflower Seeds - approx 1.5 cups
Chia seeds (maybe 2-3 tablespoons )
H**p seeds - around 1/2 cup
A full bag of crunchy activated buckwheat ( you can find this in the health food section at Woolworths)
Quinoa flakes (probably around 3/4 cup), you could also use oats.
Flax seeds (approx 1/4 cup)
And then a few little sweet bits such as chopped up dates and/or dried cranberries.
I had a random small amount of cacao nibs left in my pantry - so also threw these in too!
You can also add any spices you like. I added a bit of vanilla essence & sometimes I like to add some cinnamon too.
Once you have your nut & seed mix
You then heat up some rice malt syrup. I used approx 1 jar. Heat it up so it’s nice and runny and then pour over nut/seed mix. Stir until it’s all coated & then pour onto trays or into moulds to bake.
If doing large trays, wet your hands to help spread out the mix without it sticking to your hands. Pat flat & then bake.
160 deg oven & bake for approx 15-18 mins depending if you want more chewy or crunchy bars!
Lastly I topped these with some 72 % dark choc and sprinkled with some sea salt flakes.
Enjoy,
Ally ✨
