RECIPE OF THE WEEK The Crowsnest Pantry 🍎
Apple crumble for breakfast? We can get behind that. 😂
This week's recipe is Apple Crumble Chia Pudding from Plant Based RD. Cinnamon apples, creamy chia pudding, and a little oat and walnut crumble on top.
It's a great one to make ahead so breakfast is already waiting for you in the morning.
Here's what you'll need (makes 3 servings):
For the chia pudding:
⅓ cup plain plant-based yogurt
3 tbsp apple butter
1 Medjool date
1 tsp yellow miso paste (optional)
1 tsp vanilla
1 tsp cinnamon
¼ tsp cardamom
¼ tsp salt
¾ cup soy milk
⅓ cup chia seeds
For the crumble:
3 tbsp rolled oats
3 tbsp walnuts or pecans
2 Medjool dates
For the apples:
2 apples, diced
2 tsp maple syrup
¼ tsp cinnamon
Let's make it!
Blend the yogurt, apple butter, date, miso, vanilla, spices, salt and milk until smooth.
Stir into the chia seeds, wait 5 minutes, stir again, then refrigerate for at least an hour.
Pulse the oats, nuts and dates in a food processor until crumbly.
Cook the apples with maple syrup, cinnamon and a splash of water until softened.
Divide the pudding into three jars, add the apples and finish with the crumble.
We've got plenty of the ingredients here at The Pantry, including apples, chia seeds, oats, nuts and spices!
