Raw Walnut Chocolate Bites ❤️
2 cups of walnuts
2 cups of pitted dates (soaked in warm water for 10 mins)
2 cups canned coconut milk
1 cup of cashews (raw and soaked for 1 hour) * if you forget, use hot water for 15 mins
1/4 cup cocoa powder
1/4 cup maple syrup
1 tbsp of vanilla extract
1/4 tsp of Sea salt
1. Line a pan with parchment. Use a 16x16 inch pan for thinner squares & or 8x8 for taller, larger squares.
2. In a food processor or strong blender, add the walnuts & dates and blend until they are combined into a crumble. This is your base!
3. Add the mixture to the baking dish and press down with your hands to make an even "crust" for the bottom.
4. In a blender, add the coconut milk, cashews, cocoa powder, maple syrup, vanilla & salt. Blend until it is all smooth. Add more cocoa if desired.
5. Pour the chocolate mixture on the crust and use a spoon to spread it all out evenly as best you can. 6. Freeze for 2 hours or until the filling is set. Once it is set, you must thaw it before cutting it, as it gets so frozen! This is great with tea or coffee! It can be stored in containers in the freezer for up to 1 month!

If you are local to Ottawa you may have heard of the Parkdale Food Centre which is a centre that wishes to empower neighbours who are experiencing food insecurity. ❤️
The centre works with dedicated volunteers who provide nourishing food to those who need it within our community.

Build healthier, more connected neighbours and neighbourhoods through good food, innovative community partnerships, and by challenging inequalities in order to create lasting impacts.

One meal, two different ways!

Make our creamy avocado sauce 👇🥑😍
In a blender or food processor, combine 3 large sprigs of basil, the juice from one lemon, 6 heaping tbsps of olive oil, 3 cloves of garlic and 3 large avocados + chilli flakes 🌶 if you like spicy!
Blend and taste! Add more lemon if needed 🍋 Don’t worry if the sauce is a bit thick - it will thin out when heated!
In a pan, combine the noodles from 3 zucchini’s and the sauce. Heat over medium for 5-8 minutes.
Plate and top with a chicken breast or shrimp! We added extra chilli flakes too 😉🌶
Such an easy weeknight dinner - definitely one of our favourites!⭐️

Ingredients:
- 1 ½-2 cups water
- Juice of ½ lemon or lime
- 1/8 to 1/4 tsp real sea salt Himalayan salt, or Celtic sea salt
- 2 tsp raw honey local
Instructions:
-Combine ingredients and mix well!
-Enjoy with ice if desired.
-Optional- add some mint for extra flavour!

"In my early 40’s I started seeing changes in my body.
A lot of bloating, clothes not fitting properly and feeling tired all the time.
I didn’t want to get out of bed in the morning as I had nothing that fit, I was too tired and generally just wasn’t feeling good about myself.
I was very quick to blame it on hormones or just getting older.

Our most requested recipe ever! 🤤 Flourless Peanut Butter Chocolate Muffins (This recipe makes about 12 muffins.) What You’ll Need: ✨4 bananas (medium, ripe) ✨4 eggs ✨1/2 cup maple syrup ✨2/3 tsp vanilla extract ✨1/4 cup coconut oil ✨2/3 tsp sea salt ✨1 1/3 cup all natural peanut butter (divided) ✨2/3 tsp baking soda ✨1 1/3 tsps baking powder ✨2/3 cup cacao powder What You’ll Do: 1. Preheat the oven to 375F. Line a muffin tray with silicone or parchment paper liners. 2. Mix the banana and egg together into a mash. Slowly add the maple syrup and vanilla. Continue mixing. Next, add the oil until an even consistency is achieved. 3. Add the salt and 3/4 of the peanut butter. Continue to mix, then add the baking soda and baking powder. Slowly add the cacao powder. Continue to mix until a pancake batter-like consistency is achieved. 4. Fill each muffin liner with the batter, approximately 1/3 cup each. Add the remaining peanut butter onto the top of each muffin and if desired, swirl with a toothpick. 5. Bake in the oven for 25 minutes or until muffin tops are firm. Remove from the oven, allow to cook in the muffin tin for 10 minutes before removing. Enjoy!
