Chocolate quinoa crunch bars ↓
Save this one for an easy snack!
Makes 8 bars
Ingredients
• ½ cup raw quinoa
• 1 cup semi-sweet chocolate chips (or dark chocolate chips, see note)
• ⅔ cup sunflower seed butter (or other nut/seed butter)
• 1 tsp vanilla extract
• Pinch of sea salt + flaky sea salt for topping
Directions
1. Line a loaf pan with parchment paper, leaving some overhang so you can lift the bars out.
2. Toast the dry quinoa in a pan over low-medium heat, stirring constantly, until it starts to pop. Keep going for 1–2 more min, until golden and crunchy but not burnt.
3. Melt the chocolate low and slow, stirring often.
4. Stir the vanilla into the sunflower seed butter, then mix it into the melted chocolate until smooth.
5. Fold in the toasted quinoa and a pinch of salt until evenly coated.
6. Press into the pan in an even layer and sprinkle with flaky salt.
7. Freeze 1–2 hrs until firm, then cut into 8 bars.
8. Store in the fridge for the week, or in the freezer if you like them extra crunchy.
Note: If you're using dark chocolate chips, you may want to add 1 tbsp maple syrup. Stir it into the sunflower seed butter first. (I used dark chocolate the first time, then switched to semi-sweet and liked it a lot better!)
Tip: If your quinoa isn't pre-rinsed, rinse it and let it dry completely before toasting.
