I was getting a bit tired of my usual granola, so I tried this one from one of my Deliciously Ella books. It was an instant hit, and now I have to double the batch every time because it disappears so fast at home.
It’s perfect with yoghurt or chia pudding, and when it comes out of the oven the whole house smells delicious. You’ll probably eat a few clusters straight from the tray. I do, and so do my daughters. 🤍
Salted coconut and cacao granola
200g buckwheat groats
100g jumbo oats
60g coconut chips
40g desiccated coconut
3 tbsp coconut oil
4 tbsp cacao powder
6 tbsp maple syrup
4 tbsp coconut sugar
A big pinch of sea salt
Mix the buckwheat, oats, both coconuts and the salt in a bowl.
Melt the coconut oil, cacao, maple syrup and coconut sugar over a low heat. Don’t let it boil.
Pour over the dry mix, stir well and spread on a large tray.
Bake at 180°C (fan) for about 30 minutes, stirring halfway. Let it cool completely before storing, so it stays crunchy.
