October food is a little warmer, but we can often still get some of the more summer veggies. You can use what you like, to make a veggie tagine, so use what works for you 🥰

Serves 4
1 medium aubergine chopped into cubes
2 carrots in chunks
A mixture of peppers: I used 1/2 yellow, green and red
1 courgette chopped in chunks
1/2 large sweet potato in chunks
mushrooms chopped
a large handful of baby spinach
1 medium onion, chopped
3-4 whole garlic cloves (peeled)
1 400ml jar of diced tomatoes or a homemade tomato blend (as I used)
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp ground turmeric
1 400ml jar/tin chick peas, drained and rinsed
Mint to garnish

Method
Preheat the oven to 200 degrees and place all the chopped veggies, excluding onion onto parchment paper. Roast for 25 minutes.
Whilst the veggies are roasting, heat a deep pan (or tagine) over medium heat and saute the garlic, mushrooms and onion in a little olive oil for 5-10 minutes until the onion start to brown. add the spices and chickpeas, stirring to coat the chickpeas.
When the roast veggie are ready, add them to the spice mix with the tomato sauce. Stir gently to combine and simmer for another 15 minutes.

Top with fresh mint and serve

Works well with quinoa, rice, and also topped with feta and pomegranate seeds if desired.

You’ve probably heard people talk about inflammation, but what does it actually mean?

Inflammation is a natural part of the body’s response to things such as injury and infection. In the short term, it’s an important part of how our body protects and repairs itself.

However, ongoing or chronic inflammation is something we want to pay attention to, as it can affect different systems in the body and may be associated with a range of symptoms and health concerns.

The good news is that there are plenty of ways we can support our body’s natural inflammatory response through the food we eat and the way we live.

Eating a diet rich in colourful vegetables, fruit, fibre and healthy fats, alongside regular movement, good-quality sleep and finding ways to manage stress, can all play a part.

It’s also why I believe in looking at the bigger picture when it comes to our health. There isn’t one food, supplement or quick fix that does it all. It’s the small, consistent habits we build over time that can make a real difference.

This is also one of the principles behind my Cleanse & Reboot Programme, where we look at how nutrition and lifestyle can work together to support your body from the inside out.

My next Cleanse & Reboot Live Programme starts on 21st September, and enrolment is currently open.

Prep Week begins on 14th September, but you’ll receive access to your Prep Week guide and resources as soon as you enrol, giving you time to get organised before we begin.

If you’ve been thinking about joining me, I’d love to have you with us. 💚

There’s something really lovely about hearing about Cleanse & Reboot from the women who have actually experienced it for themselves. 🤍

I thought I’d let a couple of my previous participants share their experiences and tell you what the programme was like for them.

Everyone comes to the programme with their own goals, starting point and experience, so I always encourage people to focus on their own journey rather than comparing themselves with others.

For me, Cleanse & Reboot is about giving you the knowledge, guidance and practical tools to make positive changes to your nutrition and lifestyle, while feeling supported along the way.

My Cleanse & Reboot Live Programme starts on 21st September, and enrolment is now open.

When you join, you’ll have immediate access to your Prep Week guide and resources, giving you time to get organised before Prep Week officially begins on 14th September.

Then we’ll work through the programme together, with the added encouragement, accountability and community that comes from being part of the Live Programme.

If you’ve been thinking about joining me, I’d love to have you with us this September. 💚

Back to work, school runs and finding routine again can be a shock to the system, so this one pot meal is for those of you needing a quick and tasty meal.

You can make this into a vegan dish by adding sweet potatoes and corn on the cob in pieces instead of your chosen meat.

Vegetables can also be changed up. I found what was in the fridge, but fennel, mushrooms, carrots and broccoli would work equally well.

Serve with quinoa, potatoes or rice if more carbohydrates are required.

Serves 2

2 organic chicken thighs, or use a whole chicken cut into pieces.
1 courgette diced
1 red onion diced
1/2 red and 1/2 green pepper sliced
3 tablespoons olive oil (2 for dressing, other to grease the ovenproof dish)
Juice from 1/2 organic lemon (you may also add the zest) *
1.5 teaspoons of herbs de provence (or use a mixture of dried oregano and thyme)
2 crushed garlic cloves

Fresh herbs to decorate

*for convenience bottled lemon juice is also useful.

Method
Prepare the dressing by mixing the olive oil, lemon juice, garlic, herbs, salt and pepper in a bowl.
Separate the skin from the chicken flesh and place the dressing into the formed pouches - massage well.
If you have time, place it into the fridge for a couple of hours or even overnight.
When ready to cook, add the chopped vegetables to the dish and move the thighs on top of the veggies. Drizzle with a little more oilive oil.
Place into a preheated oven at 200 degrees for 40 minutes.
Whilst cooking, add any other grains or vegetables you wish to serve this with.

Enjoy

Leg workouts can be done anytime, anywhere.

Grab a stool/chair for support or for advanced work, no support required 🔥

This leg series is shown on one side and should be repeated on both legs.

If this is new for you, start slow with just 3-5 reps of each and slowly build your repetitions as you get stronger.

Watch that your knee is in-line with your ankle.

Have fun 🤩

How often do you tell yourself, “I’m just tired because…”?

Because life is busy.
Because you’ve had a lot going on.
Because you’re getting older.
Because you didn’t sleep well last night.

Of course, all of these things can affect how we feel. But if feeling tired, sluggish or lacking in energy has become your normal, it’s worth looking at the bigger picture too.

Our energy levels can be influenced by so many things, including blood sugar balance, inflammation, nutrition, stress, sleep and our everyday lifestyle.

And the good news is that supporting your energy doesn’t necessarily mean making huge changes overnight.

Sometimes, it’s the small, consistent habits that add up: nourishing your body well, creating balanced meals, moving regularly, prioritising sleep and finding ways to manage stress.

Over the coming weeks, I’ll be exploring more of these areas and sharing practical ways you can support your body from the inside out.

I’ll also be talking more about my Cleanse & Reboot Live Programme, which begins on 21st September, and how it can help you put some of these principles into practice with the added support, accountability and community of doing it together.

If you’ve been thinking about making some positive changes, follow along - there’s lots more to come. 💚

Garden Courgette & Basil Soup

I made this courgette soup to use up some of the summer courgettes and spring onions from the garden. It turned out so delicious that I just had to share it with you!

It’s quick, easy and packed with goodness. Enjoy it warm on cooler days or just lukewarm when the weather is hot. It also freezes beautifully, making it perfect for batch cooking.

Courgettes, broccoli and fresh basil provide plenty of fibre, antioxidants, and vitamins A, C and K, while the basil adds a lovely fresh, slightly peppery kick.

Ingredients serves 3-4

1 large courgette, chopped into chunks
3 spring onions, chopped
A few broccoli florets
5 garlic cloves
1 tbsp extra virgin olive oil (EVOO)
200ml coconut milk
200ml vegetable stock
A handful of fresh basil leaves
Salt and freshly ground black pepper

Method

Preheat the oven to 160°C. Place the courgette chunks and garlic cloves on a baking tray and roast for 30 minutes until soft and lightly caramelised.

Heat the olive oil in a large saucepan and gently sauté the spring onions for a few minutes until softened.
Add the roasted garlic, courgettes and broccoli.

Cover with a lid and cook over a low heat for 7 minutes, until the broccoli is tender.

Pour in the coconut milk and vegetable stock. Bring to a gentle simmer and cook uncovered for 5 minutes.

Add the fresh basil leaves, then blend until smooth using a blender or a hand blender.

Taste and season with salt and pepper as needed. Serve warm or lukewarm, topped with extra basil leaves and toasted pumpkin seeds if desired.
