Welcome back to Meal Prep Monday! Mondays are busy for me, so getting one step ahead of myself helps stop a long day from feeling even longer.
These prep-ahead fishcakes are a family favourite. You can use red or green curry paste, and switch up the breadcrumbs too.
These were coated in panko breadcrumbs but I often use leftover bread.

Prep-Ahead Thai Salmon Fishcakes
• 4 salmon fillets
• 4 small-to-medium sweet potatoes (about 460g), cubed
• ½ red chilli, deseeded and chopped
• 1 bunch of spring onions, chopped
• 1 thumb-sized piece of ginger, grated
• 1 tbsp Thai curry paste (red or green)
• Breadcrumbs (leftover sourdough works well!)
• Chopped coriander (optional)

1. Cook the salmon fillets in your airfryer or
oven.
2. Boil the sweet potato cubes until soft.
3. Heat a little olive oil in a frying pan. Sauté the spring onions, ginger and chilli until fragrant.
4. Transfer the sautéed ingredients to a mixing bowl. Flake the cooked salmon into the bowl, then stir in the curry paste and chopped coriander, if using.
5. Drain the sweet potatoes and return them to the hob for a minute to remove any excess moisture. Mash them.
6. Fold the mashed sweet potatoes into the salmon mixture. Shape into 8 fishcakes and coat each one in breadcrumbs. You don’t need an egg wash—the sweet potato helps the breadcrumbs stick.
7. Leave the fishcakes to cool, then transfer them to the fridge until you’re ready to cook.
8. To cook on the hob: Spray a little olive oil in a large frying pan and cook the fishcakes for about 4 minutes on each side, or until golden brown. To air-fry: Spray with a little oil and cook until crispy and golden.

Save this recipe for your next meal-prep day, and let me know if you try it!

Last night’s dinner: pizza, nibbles and a meal to share while watching the gymnastics with my girl 🤸🏾‍♀️
This morning, I was back to my usual (mostly) morning mile and a balanced breakfast. Then after a quick house reset it’s been a busy week I’m planning to go to the gym later.
Not to earn or burn off anything, but because movement helps me feel good. I also have a strength session to complete, and I like to keep the promises I make to myself.
Wellness isn’t about getting every meal or workout “right”. It’s the bigger picture: finding routines that work for you, enjoying mostly whole foods most of the time, and leaving room to slow down and enjoy the foods you love. It’s what we do consistently that counts. Think 80/20.

If finding that balance feels tricky, especially as Christmas approaches, I can help you enjoy the holidays without feeling like you need to start over in January. You’re exactly who I’m here to help. Message “BALANCE” for a friendly, no-pressure chat.

Prep Once, Eat Twice or More is a method | use myself and encourage my clients to get on board with too. If you’re in the kitchen anyway, you may as well give your future self a helping hand.
Prepping this way can also reduce waste, as you use the same ingredients in different meals.
Adding pineapple to the salsa on day two brings a new flavour, while switching up the carbs and protein keeps things interesting.
Eating healthily doesn’t need to be boring. You can enjoy the same meals as your family and learn to prep smarter.

Portion control both meals I have had slightly less carbs and a sprinkle of cheese so I can still enjoy my guacamole too.

I get lots of questions about snacks, but a good place to start is making your meals more satisfying and reducing snacking. Protein helps you feel fuller for longer and supports muscle maintenance. I make sure it’s the starting point to building my balanced bowls.

Eggs are a great source of protein, but two eggs provide only around 12g. Here I have added my spinach and cottage cheese bread and a sprinkle of Parmesan and this meal has more than doubled. I often like to sneak in some beans too.

This is a staple for me. It’s a bit like shakshuka, though I change up the flavours so often, I’m not sure it is still classed as shakshuka! It’s ready in about 7 minutes using my meal prep veg, and it’s super versatile and tastes great too. I want my meals to hit the spot 😋Today’s sauce was loaded with pre cooked airfryer veggies a handful of spinach (lots of volume) - sprinkle of parmesan & paired with cottage cheese bread topped with 1/4 avocado to make a complete balanced bowl protein✅ carbs✅ healthy fats✅ rainbow✅

DM me “BREAD” if you’d like the recipe—it’s a pertect pair with soup too. You can sneak in spinach or leave it plain if green bread isn’t your thing.

Honestly, it’s so simple, saves any faff in the morning and still gives you those cosy breakfast vibes. 🍁🍂
This week’s flavours:
Apple, pear and blueberries with cinnamon
Mixed berries (I used wonky frozen berries)
I picked up the fruit at during my Sunday morning mile. It came to around £8, with some wonky berries left over for another day. I stewed the fruit on Sunday and stored it in glass jars in the fridge.

My Chia base:
15g chia seeds
Around 120ml kefir or milk
200g high-protein Greek yoghurt
I stir a little of the fruit juice in yum 🤤
Finished with a sprinkle of granola

Granola is on the prep ot for this weekend it’s one of my favorite things to prep the kitchen smells incredible.
Eating healthy doesn’t need to be complicated.

The kefir version has around 30g of protein, and a bowl like this in the morning gets your day off to a great start with fibre. Extra points if you leave the skins on! 🍏🍐

Delicious, nutritious and no complicated maths!

Look out for next week’s flavours. 🍁🍂 You can still eat comforting meals whilst working towards your goals keep following along and I’ll show you.

Add, not subtract ➕➖
For years, I thought the answer was to keep nut butter (and everything else that tempted me) out of the house. When it came back in—maybe to make satay or when visitors would come —l’d overeat it, feel guilty, and decide I needed to cut it out again.
Then I’d find myself raiding the cupboards for my daughter’s Reese’s Pieces and feeling even worse.
When I stopped fearing healthy fats and started building balanced, satisfying meals, I learned I could include nut butter without treating it as “off limits.” The hand-portion method ✋ helped me focus less on calories and more on creating meals that felt balanced.

And here I am, seven years later, making all sorts of things with delicious nut butter after finally stepping off a 20-year diet rollercoaster. 🎢 Now the best part I get to help other women on their journeys, too.

Letting go of restrictions, focusing on the overall quality of my diet, and building balanced meals helped free me from guilt and find a lifestyle I can stick with but also nourishes my family 💚

I have been feeling a bit underwater for the last few days, and honestly, can you beat a hearty bowl of soup and a toasted wrap? 🤧
This chicken and pesto protein filling is super versatile, with just a few simple ingredients: chopped or shredded chicken, leftover pesto and cottage cheese. Stop throwing out that leftover pesto! 🛑

Today I went for for a small wholemeal flatbread, while my daughter had a small white wrap. We kept the tomatoes on the side so we didn’t overload the filling. True fact: tomatoes on the vine taste better, right? We loaded them up, then toasted them in the air fryer.

Old-school lentil soup tastes like mums with chunks of gammon is childhood nostalgia — and exactly what you need when you’ve got “the sick”.

Sometimes nourishing yourself when you’re unwell is just makings simple and comforting food.

Save this for next time you’re about to throw out that pesto 🌿
