Overnight oats here I come! So, my-not-so-little anymore girl, had SATS all week and I wanted to ensure she had the right breakfast yo keep her juices flowing during her first test and until lunchtime! She loved it and felt it was super filling too, so a win-win without a doubt!

I used an already made mix from and added fresh fruit, extra chia seeds and nuts for a little boost. It was so simple to make and we had breakfast ready with no fuss! Worth a try:)

These quick No Yeast Cinnamon Rolls made with Greek yogurt will blow your mind! And I must admit the cream cheese glaze really makes a difference, don’t skip it!

Dough:
210gr self-raising flour
1 cup greek yogurt ( low fat or full fat , it doesn’t matter) - 240g
1 tablespoons sugar
Filling:
1 tbsp ground cinnamon
30g butter melted
1/4 cup brown sugar
Glaze:
2 tbsp cream cheese
1-2 tbsp milk
1 tbsp icing sugar

Method: mix the dough ingredients either in a food processor or by end, until combined. Roll out into a thin (around 1 cm) rectangular shape. Brush your melted butter over the top of the dough. Sprinkle with sugar and cinnamon mix evenly distributed on top. From one end of dough, lengthwise, slowly roll it up until all the dough is used. Using a sharp knife, slice into 12 pieces. Place each piece of cinnamon roll dough into the lined dish. Bake for 25 minutes. Let it cool for 5 min and prepare the glaze in the meantime. Pour on top and enjoy!

These blender pancakes are my go nearly every Sunday! Easy, delicious and nutritious!!
Here is how you make them! Don’t forget maple syrup of course! 😋
2 cups porridge oats ( I used gluten-free rolled oats)
1 egg
1 small ripe banana
1 tbsp maple syrup
1 cup milk of choice ( I used almond milk)
1 tsp baking powder
1/2 tsp bicarbonate of soda
1/4 tsp sea salt
1 tsp vanilla
1 tsp cinnamon
First blend the oats into flour. High speed for 20-30 seconds. Then add all the other ingredients in the blender and mix for approximately 1 min until well combined.
Let the batter rest for 5 min and your pancake mix is ready!
I like to cook them on low heat with a touch of coconut oil but butter is just as perfect!

Loving my nordic inspired lunch, packed with Omega3 and protein from salmon and fibre from the seeded sourdough bread and the fennel and radicchio salad which really work well with smoked salmon imo. Have you tried? Ps. Also there is some kick from horseradish mayo underneath the salmon. Delicious 😋 Happy Tuesday everyone!
