The olive tree never made polyphenols for us.
They are part of how it protects itself and responds to stress. And that protection continues after harvest. In extra virgin olive oil, phenolics help protect the oil from oxidation — even during heating. In high-phenolic olive oil, they also help protect our blood lipids from oxidative stress.
The human evidence is powerful too.
PREDIMED, 7,447 participants: fewer major cardiovascular events with a Mediterranean diet enriched with EVOO.
92,978 adults, 24 years: higher olive-oil intake was associated with lower cardiovascular risk.
92,383 adults, 28 years: >7 g/day was associated with 28% lower dementia-related mortality.
MICOIL: Greek high-phenolic early-harvest EVOO showed encouraging cognitive improvements in people with mild cognitive impairment.
From protecting the olive → to protecting the oil → to becoming part of us. Choose what you can verify. Then make it daily.
