A little crunch for your Navratri preparations. ✨
Puffed rajgira, roasted nuts, raisins and coconut come together in this homemade Farali Chivda. Light, crunchy, and easy to prepare ahead for the festive days.
Ingredients
- 2 cups puffed rajgira (amaranth)
- ½ cup mixed Ambrosia Almonds and Cashews, roughly chopped
- 2 tbsp peanuts
- 1 tbsp Ambrosia Golden raisins
- 1 tbsp black raisins
- 2 tbsp melon seeds
- 2 tbsp dried coconut slices
- 1 tsp ghee or preferred cooking oil
- 1 tsp sugar
- ½ tsp freshly crushed black pepper
- Sendha namak, to taste
- 8–10 curry leaves (optional)
- 1 tsp mustard seeds (optional)
- 1–2 tsp amchur, according to taste and fasting practices (optional)
Method
1. If using raw rajgira seeds instead of ready-puffed rajgira, puff them in small batches in a sufficiently hot, heavy-bottomed pan. Set aside.
2. Dry-roast the peanuts over low heat until golden. Remove and set aside.
3. Separately roast the almonds, cashews and melon seeds until lightly toasted.
4. Warm the raisins briefly and combine them with the roasted nuts.
5. Heat ghee or oil in a pan. If using mustard seeds and curry leaves, add them and allow them to splutter.
6. Add the dried coconut and roast until lightly golden.
7. Add the roasted nuts, seeds and raisins, followed by the puffed rajgira. Toss gently.
8. Season with black pepper, sendha namak and optional amchur.
9. Switch off the heat, add sugar and mix until evenly combined.
10. Allow the chivda to cool completely before transferring it to an airtight container.
Kitchen tip: Roast ingredients separately for better control over their texture. Ensure the mixture cools completely before storing so the rajgira retains its crunch.
