We dare you to eat here and not fall a little bit in love. 🌱
At Stadsjochies in Utrecht, the garden writes the menu. Chef Pieter Jobse starts each day in the beds, greenhouses and vertical farm, then cooks from whatever they give up that morning. There’s no fixed card, just a daily surprise menu with vegetables in the lead.
The meat follows the same logic. Their pork comes from a farm whose pigs graze the restaurant’s own beds, so the loop stays short and you can see how it closes.
It’s also listed in the We’re Smart Green Guide, the international guide to kitchens that put vegetables first.
Their Food Identity shows what’s growing, what’s on the plate, and the evidence behind it.
