Tender, juicy chicken, sweet bell peppers, and grilled zucchini come together in a simple Mediterranean-inspired meal that proves healthy eating doesn't have to be boring. 😋
Why do we love this combination for a fatty liver-friendly diet?
✅ Lean protein from chicken breast
✅ Plenty of colorful vegetables
✅ Heart-healthy fats from extra virgin olive oil
✅ Flavor from herbs, garlic, lemon, and spices instead of heavy sauces
RECIPE (4 servings):
Ingredients
- 500 g boneless, skinless chicken breast, cut into bite-sized cubes
- 2 bell peppers, cut into chunks
- 1 medium zucchini, sliced into thick rounds
- 1 small yellow squash, sliced (optional)
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Black pepper, to taste
- A small pinch of salt, if desired
Instructions
Prepare the marinade. Mix the olive oil, lemon juice, garlic, oregano, paprika, and black pepper in a bowl.
Marinate the chicken. Add the chicken cubes, coat well, and refrigerate for 20–30 minutes.
Assemble the skewers. Alternate the chicken with the bell peppers, zucchini, and yellow squash. If using wooden skewers, soak them in water beforehand.
Grill to perfection. Cook over a medium-high grill for approximately 12–16 minutes, turning occasionally, until the vegetables are tender and the chicken reaches an internal temperature of 74°C (165°F).
Serve and enjoy! Finish with a squeeze of fresh lemon juice and serve with a side of brown rice, quinoa, or a fresh green salad.
